HAM & SWISS ON RYE STRATA
My favorite deli sandwich ingredients all whipped up into a cozy hot breakfast treat! This is easy enough for any occasion, and elegant enough to impress the pickiest brunch connoisseur!

Steps:
- Preheat oven to 400 degrees. Spread bread cubes in a single layer on a baking sheet; bake 20 minutes, till slightly dried.
- While bread is baking, heat a large skillet over medium heat. Add ham and saute a few minutes. Add oil (if desired) and stir in onion, garlic, and mushrooms. Saute till onion and garlic are golden and soft and mushrooms have released their liquid. Remove from heat and set aside.
- Whisk together milk, egg, thyme, pepper, and salt.
- To assemble the strata, layer half the bread cubes in the bottom of a lightly greased 9 by 13 inch glass baking dish. Sprinkle with half the ham mixture and 1/3 of the swiss cheese. Repeat layers. Gently pour egg mixture over layers and top with remaining 1/3 swiss cheese. Cover tightly with aluminum foil and refrigerate* at least 4 hours, preferably overnight.
- To bake the strata, preheat oven to 350 degrees. Bake strata, still covered with foil, for 30 minutes. Remove foil and continue baking for 20-30 minutes, until cheese on top is melted and egg portion is set (check by inserting a knife in the center--if it comes back without egg on it, you're set!).
- Let strata rest 5 minutes before serving.
- *Refrigeration time not included in recipe prep/cooking time.

BAKED HAM & SWISS WITH MUSHROOM SAUCE
Recipe was adapted from 'Cooking for the Rushed' cookbook. I cut back the green onions & black pepper; we found them alittle overpowering. You could substitute the cheese, however, I feel the Swiss compliments the flavours the best. If you don't like ham, try shrimp or smoked turkey breast instead.

- Preheat oven to 350°F
- Heat butter in non-stick pan at med-high heat.
- Chop mushrooms & onions, add to pan and cook till tender. Stir while it cooks.
- Mix in flour and then gradually add milk until mixture begins to thicken.
- Add spices, stir & remove from heat.
- Cut croissant in half, lenghwise. Place bottom halves on a cookie sheet. Layer each bottom half with ham first, 1/4 mushroom sauce & then 1 slice of cheese. Cover with the top of the croissant.
- Bake for 15 min or until cheese has melted.

- Cut baguette in half without slicing through completely. Arrange half of the cheese on bottom half. Top with pickles, ham and remaining cheese; sprinkle with paprika. MINI HAM AND SWISS FRITTATAS
These little frittatas are so quick and easy, and my husband and kids just gobble them up. Make them in a 24 cup mini-muffin tin. I first had these at a neighborhood breakfast, and my neighbor added fresh onions and veggies, but this is great for making on nights when there isn't much in the fridge! Honey ham is good in these, as well. They can be served hot or cold and are great as reheated leftovers.

- Preheat oven to 350°F. Toss onion, soy sauce, garlic powder, and 1 Tbsp. oil on a large rimmed baking sheet to coat. Season with salt. Bake, tossing once halfway through, until onion is browned around the edges and very tender, 25-35 minutes. Let cool 5 minutes.
- Meanwhile, toss herbs, hot sauce, and remaining 1 Tbsp. oil in a small bowl. Season with salt, if needed.
- Melt butter in a small nonstick skillet over medium heat. Add eggs; season with salt. Cook, stirring with a rubber spatula, until eggs have set into creamy folds, 1-2 minutes.
- Spread herb sauce on cut sides of muffins. Transfer bottom halves to a rimmed baking sheet. Top with eggs, then lay cheese over. Bake bottom halves just until cheese is melted, about 5 minutes. Top with onion and close with muffin tops.
- Do Ahead: Onion can be cooked 5 days ahead. Transfer to an airtight container and chill. To make a sandwich quickly without turning your oven on, fold the cheese into the eggs when they have just begun to set, top with onion (no need to rewarm), and assemble with toasted English muffins.
HAM AND CHEDDAR MUFFINS
These are so yummy! Great for breakfast or a savory snack anytime of the day. I make these every time I have leftover ham. Sometimes I sauté a little garlic and finely chopped bell peppers with the onions to add even more flavour.

- Preheat oven to 375° and lightly grease 12 muffin cups.
- Sauté onion in butter until soft.
- In a bowl, combine flour, baking powder, salt, pepper and garlic powder.
- In another bowl, combine eggs, milk and mustard. Add the sautéed onion, ham and cheese.
- Stir the wet mixture into the dry mixture just until moistened, don't over stir!
- Spoon batter into prepared muffin pans and bake in preheated oven for 25-30 minutes. Enjoy!

This recipe came off of an Earthgrains English Muffin bag. It is very yummy, and well worth any time put into it. You can sub different cheeses if wanted....but Im not sure if all would be as good. I do like it with Provolone though.

- Spread a little butter on each peice and then some mustard after the butter.
- Top each with 2 oz of ham, 1 slice red onion and then 2 slices of your cheese.
