Here's a fun an different use for ham. It's unexpected combined with the manicotti, yet delicious. The creamy cheese sauce makes this casserole perfect for chilly days. I'm always asked for the recipe whenever I serve it. -Dorothy Anderson, Ottawa, Kansas

8 manicotti shells
1/2 cup chopped onion
1 tablespoon canola oil
3 cups (1 pound) ground fully cooked ham
1 can (4 ounces) sliced mushrooms, drained
1 cup shredded Swiss cheese, divided
3 tablespoons grated Parmesan cheese
1/4 to 1/2 cup chopped green pepper
3 tablespoons butter
3 tablespoons all-purpose flour
2 cups 2% milk
Paprika
Chopped fresh parsley

Steps:

  • Cook manicotti according to package directions; set aside. In a large skillet, saute onion in oil until tender. Remove from the heat. Add the ham, mushrooms, half of Swiss and Parmesan cheeses; set aside. , In a small saucepan, saute green pepper in butter until tender. Stir in flour until combined. Add milk; cook and stir for 2 minutes or until thickened. Stir a quarter of the sauce into ham mixture. , Stuff each shell with about 1/3 cup of filling. Place in a greased 11x7-in. baking dish. Top with remaining sauce; sprinkle with paprika. , Cover and bake at 350° for 30 minutes or until heated through. Sprinkle with parsley and remaining Swiss cheese before serving.

14 manicotti pasta shells
1 chopped onion
2 cloves garlic, minced
1 green bell pepper, seeded and chopped
1/4 cup butter or olive oil
1-2 cups cooked cubed ham
1/3 cup grated parmesan cheese
6 Tbsp butter or olive oil
6 Tbsp flour
3 cups milk
2 cups shredded Swiss cheese
1/2 cup grated parmesan cheese

Steps:

  • Cook manicotti as directed on package. Rinse in cool water and set aside. Meanwhile, cook onion, garlic, and bell pepper in 1/4 cup butter or olive oil until tender. Add ham and set aside to cool. Stir in 1/3 cup parmesan cheese.
  • In another heavy sauce pan cook 6 Tbsp. butter or olive oil until foamy. Stir in flour and stir constantly until mixture bubbles (about 3 minutes). Add milk and whisk until sauce thickens. Stir in two cups Swiss cheese. Mix 1/4 cheese sauce with ham mixture.
  • Fill manicotti shells with ham mixture (use fingers--messy but most efficient). Spread 1/2 cup cheese sauce on bottom of 13 x 9 inch glass baking pan. Arrange shells on top of sauce. Sprinkle any remaining ham mixture on top of shells. Pour remaining cheese sauce over shells. At this point the manicotti may be cooled in refrigerator, then wrapped and frozen up to three months. To thaw and reheat put in refrigerator overnight then uncover and sprinkle with 1/2 cup parmesan cheese.
  • Bake at 350 degrees F for 40-50 minutes. If not freezing sprinkle with 1/2 cup parmesan and bake 30-40 minute until bubbly.

This has been part of my OAMC rotation for a long time. This recipe easily doubles or triples. Make one now and one for later.

14 manicotti pasta shells
1 onion, chopped
2 garlic cloves, minced
1 green bell pepper, seeded and chopped
1/4 cup olive oil
3 cups cooked cubed ham
1/3 cup grated parmesan cheese
6 tablespoons butter or 6 tablespoons olive oil
6 tablespoons flour
3 cups milk
1/2 teaspoon pepper
2 cups shredded swiss cheese
1/2 cup grated parmesan cheese

Steps:

  • Cook manicotti as directed.
  • Drain, rinse in cool water and set aside.
  • Cook onion, garlic, and green bell pepper in olive oil until tender.
  • Add ham and set aside to cool for 10 minutes.
  • Stir in 1/3 cup Parmesan cheese.
  • Now melt 6 tablespoons of butter.
  • Stir in flour and cook, stirring constantly, until mixture bubbles.
  • Add milk and pepper.
  • Cook, whisking constantly, until thickened.
  • Stir in swiss and remaining parmesan cheese.
  • Mix 1/4 of cheese sauce with ham mixture.
  • Fill manicotti shells with ham mixture.
  • Spread about 1/2 cup cheese sauce in greased 13x9" glass baking dish and arrange filled shells over sauce.
  • If there is any leftover stuffing, just sprinkle it over the filled shells.
  • Pour remaining cheese sauce over filled manicotti.
  • At this point the casserole can be cooled in the refrigerator, then wrapped and frozen up to 3 months.
  • To thaw and reheat:.
  • Thaw casserole overnight in refrigerator, then uncover, sprinkle with 1/2 cup Parmesan cheese, and bake at 350 for 40-50 minutes.
  • If not freezing casserole, sprinkle with 1/2 cup Parmesan cheese and bake at 350 for 30-35 minutes or until bubbly.

Cannelloni (or manicotti, as it is known in the U.S.), pasta cylinders stuffed with either a meat or vegetable filling, are easy to make.

1 pound cannelloni shells
For the Filling:
3 tablespoons unsalted butter (plus more for the pan)
1/2 small onion (peeled and minced)
2 ounces prosciutto (minced)
1 pound ground beef
1/2 bay leaf
1 tablespoon all-purpose flour
3/4 pound plum tomatoes ( blanched , peeled, seeded, and chopped)
Fine sea salt (to taste)
Freshly ground black pepper (to taste)
Pinch freshly grated nutmeg
1/2 cup day-old bread (crust removed, crumbled)
1 cup milk
1 egg (lightly beaten)
1 cup freshly grated Parmigiano-Reggiano cheese (plus more for sprinkling top)
2 cups besciamella sauce

Steps:

  • Gather the ingredients.
  • Cook the dried pasta tubes according to the directions for al dente . Remove the pasta from the water with a slotted spoon and lay the pieces on a damp kitchen cloth; don't let them touch to avoid sticking. Set aside.
  • Melt the butter in a medium pot and sauté the onion and the prosciutto until the onion is lightly browned, about 5 minutes.
  • Add the beef and the bay leaf and cook, stirring, until the meat has browned, about 5 minutes.
  • Stir in the flour and the tomatoes and season to taste with salt, pepper, and nutmeg. Reduce the heat to a simmer , cover, and cook for 45 minutes.
  • Remove filling from the heat once it has finished simmering and discard the bay leaf.
  • Soak the bread in the milk for about 10 minutes until the bread is softened, then squeeze to drain off the excess liquid (the bread should be wet but not dripping).
  • Combine the soaked bread, egg, and grated cheese in a bowl; then combine with the meat mixture, stirring until everything is uniform.
  • Preheat the oven to 425 F. Butter a baking pan large enough to hold all of the cannelloni snugly.
  • Use a spoon to stuff each tube of pasta with some of the meat filling. Place the filled cannelloni closely together in the prepared pan.
  • Pour the béchamel over the cannelloni, sprinkle with a little more grated Parmigiano, and dot it with a little more butter.
  • Bake for 10 to 15 minutes, or until the top is golden brown. Serve hot.

12 manicotti shells, cooked according to package - drain
FILLING
1 onion, chopped
2 clove garlic, minced
1 Tbsp olive oil
1 1/2 c small diced, cooked chicken
3/4 c small diced, cooked ham
1/2 c ricotta cheese
2 oz cream cheese, softened
10 oz frozen spinach, thawed and water squeezed out , thoroughly
2 eggs, slightly beaten
1/2 c grated, parmesan cheese
1 tsp dried basil
1 tsp pepper
1/4 tsp nutmeg
SAUCE
3 c chicken broth
3/4 c flour
1/2 c heavy cream
1/2 c milk
1 tsp salt or to taste
1/2 tsp nutmeg
1/2 tsp pepper
1/4 - 1/2 tsp cayenne pepper
1/2 c grated parmesan cheese and extra for sprinkling on top
paprika for sprinkling on top

Steps:

  • 1. Cook manicotti shells according to package directions.
  • 2. In a small skillet, saute onion in oil until tender. Add garlic, cook 1 minute longer. In a small skillet, saute onion in oil until tender. Add garlic, cook 1 minute longer. In a large bowl, combine the onion mixture, chicken, spinach, ham, cheese, eggs,ricotta, cream cheese basil, pepper, salt and nutmeg; set aside.
  • 3. Sauce: Combine flour and chicken broth in a large saucepan until smooth; gradually stir in the milk, salt, nutmeg, pepper and cayenne. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened. Remove from heat, and stir in the 1/2 cup Parmesan cheese.
  • 4. Spread 1 1/2 cups sauce into a 13 x 9 baking dish coated with cooking spray.
  • 5. Stuff each pasta with chicken filling. ( An easier way to stuff is cut one edge lengthwise, open up and lay out flat. Spoon on filling, roll up and place seam side down in dish.) Sometimes I drizzle a tablespoon of cream sauce down the center before rolling. Don't worry of filling comes out the ends when placing in the dish, you can stuff it back in once placed.
  • 6. Once all are stuffed and placed side by side in dish. Cover with sauce and sprinkle with desired amount of Parmesan cheese, and sprinkle with paprika.
  • 7. Cover with foil, and place in preheated oven, for 30 - 35 minutes, until heated through and bubbly. Remove foil and continue baking for another 5 minutes to slightly brown top. If you have sauce left, save it for reheating leftovers.
  • 8. Enjoy!
