1 large firm red apple such as Braeburn, Gala,Rome Beauty, or Fuji
2 tablespoons unsalted butter
2 (1/4-inch-thick) baked ham slices, quartered
1 large shallot, finely chopped
2 teaspoons cider vinegar
1/2 cup apple juice
1 1/2 tablespoons whole-grain mustard
1/2 tablespoon Dijon mustard, or to taste
Pinch of ground cloves

Steps:

  • Preheat oven to 250°F.
  • Core whole apple (without peeling) and cut 8 (1/4-inch-thick) rounds.
  • Heat 1 tablespoon butter in a 12-inch nonstick skillet over moderately high heat, then sauté ham, turning once, until browned, 5 to 6 minutes total. Transfer ham to a heatproof dish and keep warm, loosely covered with foil, in oven. Add remaining tablespoon butter to skillet and sauté apple slices, turning once, until golden and tender, 4 minutes total. Top each piece of ham with an apple slice and continue layering, using all of ham and apple slices, to make 2 stacks. Keep warm in oven.
  • Add shallot to skillet and sauté over moderately high heat, stirring, until golden. Add vinegar and cook, stirring, 10 seconds, or until absorbed by shallots. Add apple juice and boil until reduced by half. Add mustards and cloves and boil until mixture is slightly thickened and syrupy. Serve stacks with sauce.

2 tablespoons country style prepared mustard
2 medium tart apples, sliced
1 lb ham steak

Steps:

  • Add butter to a skillet and let melt.
  • Add in brown sugar and mustard; stir to blend well.
  • Add in apples and stir/simmer for about 5-8 minutes or until apples are just tender.
  • Transfer apple mixture to another dish.
  • Place ham steak in skillet and top with apple mixture.
  • Over medium heat, cook, covered, about 5-10 minutes or until ham is thoroughly heated.

3 tablespoons maple syrup
1 tablespoon margarine
2 medium apples, peeled and chopped
1 tablespoon brown sugar

Steps:

  • Preheat broiler.
  • Score ham slices on both sides 1/8-inch thick to make a diamond pattern.
  • Brush ham with 1 tablespoon of the maple syrup.
  • Broil for 3 to 5 minutes per side or until lightly browned.
  • Meanwhile, in a large skillet, sauté the apples in the margarine for 10 minutes over medium heat.
  • Add the brown sugar and the remaining maple syrup.
  • Cook for 1 to 2 minutes.
  • Spoon over hot ham steaks.

1 lb ham steak
2 tablespoons butter
1 granny smith apple, peeled, cored, finely diced
1/4 teaspoon Dijon mustard
1/4 cup apple cider
1/4 cup heavy cream
1/4 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • Remove rind and trim off all but 1/4-inch of outer fat. Cut ham into two serving pieces. Score the fat edge at 1-inch intervals so the steak does not curl during cooking.
  • Lightly saute, ham on both sides in butter for 3-4 minutes a side. Remove ham steak to a plate and keep warm.
  • Add diced apples and saute until somewhat soft. Stir in mustard and cider and reduce until the cider has almost entirely evaporated.
  • Slowly wisk in the heavy cream and reduce until slightly thickened. Season to taste with salt and pepper and spoon sauce over steak.

1 (1 1/2-pound) ham steak
1 1/2 cups heavy cream
2 tablespoons whole-grain mustard
Spaetzle, recipe follows
3 eggs
1 cup milk
1/4 teaspoon freshly grated nutmeg
Kosher salt and freshly ground white pepper
3 cups all-purpose flour, or as needed

Steps:

  • Melt butter in a large skillet over medium heat. Saute ham steak until heated through and browned, about 2 to 3 minutes per side. Transfer ham steak to platter, keep warm. Add heavy cream to skillet and reduce until thick enough to coat the back of a spoon, about 3 minutes. Add mustard and simmer 1 minute. Add cooked spaetzle and toss to coat.
  • Top ham steak with mustard cream spaetzle.
  • In a bowl whisk together eggs, milk, nutmeg, salt and pepper. Gradually stir in enough flour to make a thick batter. You will probably not need all 3 cups.
  • Using a metal colander set over a pot of boiling, salted water, press spaetzle batter through holes directly into water.
  • When spaetzle are cooked through, they will float to surface, about 5 minutes. Scoop up with a slotted spoon and drain well as they cook or drain all at once.
