- In a large skillet coated with cooking spray, brown ham steaks in batches over medium heat; remove and keep warm., In same skillet, saute onion until tender. Stir in apple juice and mustard; bring to a boil. Add apples. Reduce heat; cover and simmer for 4 minutes or until apples are tender., Combine cornstarch and water until smooth; stir into apple juice mixture. Bring to a boil; cook and stir for 2 minutes. Stir in sage and pepper. Return steaks to skillet; heat through.

- Preheat oven to 425 degrees F (220 degrees C).
- Arrange frozen Brussels sprouts in a single layer on a rimmed baking sheet; sprinkle apple and onion pieces evenly around the baking sheet. Drizzle the sprouts, apples, and onions with olive oil; sprinkle with salt, black pepper, and garlic powder. Toss the mixture gently to coat.
- Roast in the preheated oven until sprouts are hot and fragrant, about 20 minutes. Sprinkle with lemon zest, and squeeze juice from zested lemon over the sprouts to serve.

- Toss together the Brussels sprouts, ham, mushrooms, green onion, Parmesan cheese, Asiago Cheese, and sauerkraut in a large bowl until combined. SAUTEED OR GRILLED HAM STEAK WITH APPLES

- Remove rind and trim off all but 1/4-inch of outer fat. Cut ham into two serving pieces. Score the fat edge at 1-inch intervals so the steak does not curl during cooking. Lightly saute, ham on both sides in butter for 3 to 4 minutes a side. Remove ham steak to a plate.
- Add apple and saute until somewhat soft. Stir in mustard and cider and reduce until the cider has almost entirely evaporated. Add the heavy cream and reduce until slightly thickened. Season to taste with salt and pepper and spoon sauce over steak.

- 1. Heat the olive oil, over medium heat, in a large skillet with lid. Keep the lid off until the water is added. Preparing the ingredients one at a time in the order given and adding them one at a time will provide the proper cooking times for the different ingredients.
- 2. Leaving the skins on, wash and cut the potatoes into 1/4-inch dice. Add the potatoes to the hot oil.
- 3. Peel and finely dice the onion and add to the pan, stirring them into the potatoes.
- 4. Peel and mince the garlic and add to the pan, again stirring to mix.
- 5. Wash and remove the seeds from the red bell pepper. Cut into 1/2-inch dice and add to the pan, again stirring the mixture.
- 6. Wash and cut the apple into wedges. Remove the core and slice the wedges into thin slices. Add the apple to the pan and stir to mix.
- 7. Dice the ham and add to the pan, stirring to combine. Allow this mixture to cook until the onions are translucent and the potatoes have started to brown.
- 8. Add the salt, pepper, curry powder, and water. Stir to mix. Turn the heat to medium low. Cover the pan to steam while you prepare the brussels sprouts.
- 9. Cut the hard stem end and discard any tough or blemished outer leaves from the brussels sprouts. Cut the sprouts into quarters, cutting especially large sprouts into sixths or eighths. Wash the brussels sprouts and add the wet sprouts to the pan.
- 10. Mix the sprouts into the mixture, replace the cover, and steam until the sprouts are cooked but still firm. Test a sprout for doneness at 5 minutes.
- 11. Serve hot.
HAM STEAK WITH APPLES AND BRUSSELS SPROUTS

- 1. Pat dry the ham steak with a paper towel; season generously with freshly ground pepper on both sides. Cut the apple in half, core, and cut into 16 wedges. Thinly slice the wedges crosswise. Remove and discard the tough outer layer of leaves from the Brussels sprouts, cut them in halves, and cut out and discard the tough core. Thinly slice lengthwise. 2. Pour the oil into a large, cold cast-iron skillet; press the ham steak into the cold pan. Turn on the heat to medium. When the ham steak sizzles, after 1 to 2 minutes, scatter the shallot and ginger around it. Stir the shallot and ginger occasionally to keep them from burning, but leave the ham steak undisturbed, cooking until very lightly browned on one side, about 2 minutes. 3. Turn the ham steak over; add the apples and Brussels sprouts to the pan. Season lightly with salt. Stir to combine the apples and sprouts with the shallot and ginger, while leaving the pork undisturbed. Sprinkle the mirin and rice vinegar over the vegetables. Decrease the heat to medium low, cover the pan and cook until the sprouts have wilted, 3 to 4 minutes. 4. Transfer the ham to a serving plate; let it rest for a few minutes. Spoon the apple mixture on top.
