These grilled ham and Cheddar cheese sandwiches with cranberry sauce and greens make a perfect lunch or light dinner.

8 slices your favorite bread
6 tablespoons butter, softened
8 tablespoons coarse-grained mustard
1 ¼ pounds Smithfield Ham slices
¾ pound white Cheddar cheese, sliced
1 cup whole berry cranberry sauce
3 cups assorted salad greens

Steps:

  • Preheat heavy-bottomed skillet over medium-low heat. Butter one side of two slices of bread and then turn buttered side down. Top one slice with ham slices (5 ounces) and the other with cheese slices (3 ounces) and transfer to skillet face up and cook for 5-7 minutes or until bread is lightly browned and cheese is beginning to melt. Remove sandwich halves from skillet and transfer to cutting board and repeat for remaining sandwiches.
  • Top ham side with cranberry sauce and greens and place cheese side of bread on top to finish sandwich and cut in half to serve. Best when it's hot and melty!

1 (8 ounce) package cranberries
2 cups apple cider (or enough to just cover the cranberries)
1/2 teaspoon nutmeg
1 teaspoon clove
1 dash mace
2 cinnamon sticks (remove after cooking)
1 tablespoon balsamic vinegar
1 teaspoon spicey prepared mustard
1 cup brown sugar (or to taste, it depends on how tart your cranberries are)
2 tablespoons cornstarch
1/2 cup water

Steps:

  • Just barely cover cranberries with apple cider. Add spices, balsamic vinegar, and mustard.
  • Cover and bring to a simmer.
  • Cook until cranberries pop out of their skins.Push all the mixture in the pan (except the cinnamon sticks) through a colander to remove the skins.
  • Place back in pan and add the sugar. Stir until the sugar dissolves.
  • Stir the cornstarch into the water to dissolve and then add it to the mixture in the pan. Cook until thick and clear. Cool. Can be used as a glaze or as a sandwich spread.
