DEVILED HAM SPREAD
Very hammy, nicely spicy flavors amplified with a balance of savory ingredients. Garnish with pickled red peppers and chives. Serve with rye crisps for a great party snack that's sure to wow your guests.

Steps:
- Combine ham, onion, and celery in a food processor. Pulse on and off until very finely ground, about 1 minute. Transfer mixture into a large bowl. Add Cheddar cheese and mustard. Drizzle in sriracha sauce, sprinkle cayenne pepper on top, and add Worcestershire sauce. Finish off with 2/3 cup mayonnaise and season with salt.
- Mix together thoroughly with a spatula until smooth and spreadable. Taste; add remaining mayonnaise if too dry and crumbly. Cover the top with plastic wrap and chill in the refrigerator until flavors meld, at least 2 hours. Transfer ham spread to a serving bowl.

- In a medium bowl combine the first 6 ingredients together.

HOMEMADE DEVILED HAM SPREAD
I searched for a recipe for this on this site and couldn't find one, so I winged it and it turned out very nicely. I had to make a second batch to take to the New Year's Eve party because the first batch disappeared. A great way to use leftover ham from holiday dinner to make a great spread for hearty crackers or rye toast points. Also good as a sandwich.

- Place the cubed ham (and bologna) in a food processor and pulse just until you get smaller pieces.
- Add in the gherkins and pulse until the pieces are about the size of rice. You don't want it pureed; you want small pieces.
- Scrape into a bowl.
- Add in the whipped salad dressing (I used Miracle Whip) and ketchup and mix to combine. If adding in the ring bologna increase the dressing to 1 1/3 cup plus 2 tablespoon
- Store in an air tight container in the fridge.
