1 cup finely diced celery
1/4 cup finely minced sweet onion
1 teaspoon Dijon mustard
2 hard-boiled eggs, diced
1/4 cup hot pickle relish, drained
1/2 cup good quality mayonnaise

Steps:

  • Mix all the ingredients until well blended.
  • Spread on white bread.
  • Paula says that the trick is to use the best ham you can find, preferably an authentic Smithfield ham.

2 cups ham, finely chopped
2 hard-boiled eggs, finely chopped
1/2 cup celery, finely chopped
1/4 cup sweet pickle relish
1/3 cup mayonnaise
1/2 teaspoon prepared mustard
1/8 teaspoon celery seed

Steps:

  • Ham may be chopped by hand or in a food processor.
  • Mix celery, pickle relish, mayonnaise, mustard and celery seed in a medium size bowl. Add chopped ham and eggs. Mix until blended. Keep refrigerated.
  • Serve with/on crackers or in a sandwich.
  • Enjoy!

This is a fantastic twist to the traditional potato salad. It is a recipe that I picked up while visiting in Kiev, Ukraine.

6 red potatoes
3 large carrots, peeled
½ onion, chopped
1 (15 ounce) can sweet peas, drained
1 (8 ounce) package sandwich ham, chopped
½ cup dill pickle cubes
½ cup ranch dressing
salt and ground black pepper to taste

Steps:

  • Place potatoes and carrots in a large pot and cover with water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain.
  • Hold the potatoes under cold running water to cool. Slide the skins from the potatoes and discard.
  • Cut skinned potatoes and carrots into bite-size pieces.
  • Mix potatoes, carrots, onion, sweet peas, ham, dill pickle cubes, and ranch dressing in a large bowl. Season with salt and black pepper.

1/4 cup KRAFT Real Mayo Mayonnaise
10 small pimento-stuffed green olives, finely chopped
36 slices white bread, crusts removed

Steps:

  • Mix cream cheese, ham, mayo and olives until well blended.
  • Spread each of 18 of the bread slices with about 2 Tbsp. of the cream cheese mixture. Cover with remaining bread slices to make 18 sandwiches.
  • Cut each sandwich into quarters.
