A hearty and comforting Ham Pot Pie is a great way to use up leftover Easter or Christmas ham. This pot pie has a double crust and a thick, rich filling full of diced ham, potato chunks, and corn.

- Preheat oven to 425 degrees.Place potatoes in a small saucepan. Cover with water and bring to a boil. Simmer for 5 to 8 minutes to soften. Drain.
- Melt butter in a large skillet. Add onion and cook for 3 to 4 minutes.
- Add salt, pepper, thyme, and poultry seasoning.
- Sprinkle flour into skillet and cook and stir for 1 minute.
- Gradually whisk in chicken broth and then milk. Add corn and potatoes. Let mixture simmer for several minutes to thicken.
- Stir in ham. Check for seaosning and add more salt and pepper if desired.
- Fit one piecrust into the bottom of a deep dish 9-inch pie pan. Pour in filling.
- Place second pie crust on top and trim excess. Press the two pie crusts together to seal and crimp edge using your fingers.
- Brush the top with egg mixture. Cut 3 or 4 slits with a knife in the middle to let steam escape.
- Place on a baking sheet and bake for 30 minutes.

- Preheat oven to 375 degrees F. In a large saucepan, combine the cut potatoes, carrots, and peas. Cover with 2 cups chicken stock and then boil for 10-15 minutes or until potatoes are fork tender. Remove from heat, drain and set aside.
- In a large saucepan over medium heat, add the olive oil. Once shimmering, add in the onion and cook for 2-3 minutes and then add in the garlic. Cook for 30 seconds and then add in the celery. Stir until soft and translucent. Transfer this mixture right on top of the other veggies. Return the saucepan and add in the butter. Once melted, whisk into the flour and whisk for 3-4 minutes until the mixture is a light brown (adds tons of flavor). Season with salt and pepper to taste, celery seed, Italian seasoning, thyme, and Italian parsley. Slowly stir in chicken broth and milk. Simmer over medium-low heat until thick (if you like a thinner sauce, add more chicken broth and milk a little at a time until you reach your desired consistency). Add the corn and cubed ham to the other veggies and then combine the veggies with the sauce. Stir until combined. Taste and adjust seasonings (add more salt/pepper/spices as needed to preference).
- Place one of the pie crusts in a 9" pie pan (use a deep-dish pie pan if you have one) and lightly brush with egg whites. Bake in the oven for about 5 minutes, remove, and pour in the sauce/veggie mix. Cover with the other crust and seal the edges. Cut some slits in the top, brush with egg whites and bake for about 35-40 minutes or until the crust is golden brown.
- Serve if desired with fresh thyme/and or parsley.

I've been making this pie for a few years now. I like to vary the vegetables and meat depending on what I have on hand. I've made it with leftover turkey, sausage and lamb roast. In summer, it's a perfect brunch meal with a salad; in winter, add a loaf of homemade bread for a great dinner.

HAM, LEEK & POTATO PIE

- Heat a large frying pan, melt the butter, then add the onion and leeks. Cover, then very gently cook for 15 mins until soft. Add the potatoes after 5 mins cooking.
- Stir in the flour, turn up the heat, then add the stock, stirring until the mix thickens a little. Take off the heat, then stir in the crème fraîche, mustard and ham. Season to taste, then cool, if you have time. Spoon the mix into a large pie dish, adding a couple of bay leaves. Heat oven to 220C/fan 200C/gas 7.
- Roll out the pastry on a floured surface to the thickness of a £1 coin. Cut a pastry strip the same width as the lip of the dish, wet the edge of the dish with egg, then fix the strip around it. Brush the top with egg, then lay over the remaining pastry.
- Trim pastry to the edge of the dish, then ruffle the cut edges with the knife blade to help the layers rise. Cut a few slits to let the steam escape, decorate with bay leaves, if you like, then brush all over the top with egg. Can be done up to a day ahead, keep chilled. Bake for 30 mins until risen.

Made in the Pennsylvania dutch tradition of slippery ham pot pie where there is a boiled dough instead of a top flaky crust.

- Start with the ham bone. Put it in a large stock pot.
- Cover it 1/2-3/4 up the bone with water.
- Let it simmer for as long as you can. I did mine for 5 hours but that is just because I had the time. If you have 1 hour, good for you.
- Trim off all the 'skin' and cube it up into bite size pieces.
- No measurements here.
- The more ham you have the more ham you will have in your pot pie.
- Remove the ham bone and pick it if you wish.
- Peel and cut up 2 potatoes.
- Take 1 cup of flour and 1/4 cup of water and stir it around with a fork
- You are going to make a rollable dough that is not sticky. If it is sticky add more flour. If it is dry add more water.
- Roll out the dough to about 1/8 - 1/4" thickness. Be sure to put extra flour on your work surface to avoid sticking.
- Use a pizza cutter to cut into squares.
- Add the cut up potatoes and ham to the simmering stock. Drop the pot pie squares into the simmering stock.
- The dough will puff up as it cooks and it doubles in thickness.
- Take 1/2 cup of flour and a heavy splash of water or milk to it and shake it to combine.
- Pour it in the pot pie.
- After it comes to a boil it should thicken up slightly.
- Season with salt if desired and Voila! You have made slippery pot pie.

HAM POT PIE
Steps:
- Gather the ingredients.
- Using a little of the butter, grease either two 8 x 5 x 2- inche deep, individual pie tins or an 8 x 2-inch deep pie plate. Set aside.
- Bring a cup of water to the boil in a small saucepan, add the diced carrots and cook for 3 minutes to soften them. Strain and keep to one side.
- In a large saucepan, melt the butter and add the chopped onions and celery. Gently fry over medium heat and gently for 5 minutes to soften.
- Add the flour to the pan and stir well, cooking for 2 minutes, then slowly adding the milk a splash at a time. Stir well between each addition.
- Add the pinch of mace if using, and the salt and pepper. Stir until the sauce has thickened to the thickness of heavy cream. Add half of the beaten egg and stir well.
- Add the carrots and mixed vegetables to the sauce and stir, cooking for another 5 minutes.
- Remove from the heat and leave too cool. The sauce does not need to be cold, so 10 minutes should be long enough. Once cooled, add the parsley and the ham pieces.
- Pre heat the oven to 400 F. Lay the pastry on a lightly-floured work surface and cut two pieces to line the tins and two for the lids, or two circles to fit the pie plate.
- Line the base of your chosen serving dish with one piece of pastry and fill with the ham and vegetable sauce.
- Brush the edges of your dish with the beaten egg and lay the lid over. Press lightly, then crimp the edges with your fingers or the edge of a fork to seal the pie. Cut a small hole the size of a dime into the center of each pie and then brush the surface all over with the remaining beaten egg.
- Bake in the center of the heated oven for 25 to 30 minutes until the pastry is golden and risen, and the sauce is bubbling. It may bubble through the hole, but don't worry, it adds to the character of the pie.

- Boil the potatoes in salted water for 8-10 mins, until tender but still firm. Leave to cool, then slice.
- Heat the oven to 200C/180C fan/ gas 6. Unroll the pastry with its baking parchment on a baking tray. Reserve 1 tbsp of the crème fraîche, then spread the rest over the pastry, leaving a 2cm border around the edge. Season. Layer the potatoes, ham and cheese over half of the pastry, seasoning the potatoes as you go.

- Heat a frying pan over a medium heat, then add the oil. When hot, add the leeks and onion, and sauté for 2 minutes. Add the garlic and sauté until the leeks and onion are softened but not coloured, and any excess liquid has evaporated. Season with salt and pepper.
- Sprinkle over the flour and stir for 1-2 minutes, then slowly stir in the stock. Add the ham, crème fraîche and mustard, and stir together. Adjust the seasoning, if necessary. Set aside to cool.

Cut a strip of pastry the same width as the rim of a pie dish (about 1.7 litre capacity). Lightly brush the edge of the dish with a little of the beaten egg yolk and fix the strip around it. - Brush the top of the pastry strip with egg yolk, then lay over the remaining pastry, press down lightly and crimp the edge. Cut off the excess pastry to trim the edge. Use a small knife to cut a steam hole in the centre, then insert a small funnel made from foil to release the steam while baking. Leave the pie to chill for at least 20 minutes before baking. Meanwhile, preheat the oven to 220°C, fan 200°C, gas 7.

- First, make the béchamel by melting the butter in a saucepan until it foams. Mix in the flour and gently cook over a low heat for 4-5mins, not allowing it to colour.
- Keep mixing well to avoid lumps and burning – the sauce should be quite thick. Season lightly with salt but quite generously with pepper and nutmeg.
- Pour into a container and cover with a buttered paper to avoid a crust forming. Set the béchamel aside to cool down completely.
- On a lightly floured surface, roll out half of the pastry to a rough circle, about 24cm wide. Roll out another circle about 26cm wide. Cover this one and keep it cold.
- Preheat the oven to 200C. Place the first pastry circle on a baking tray, brush the edges with beaten egg and put a spoonful of béchamel in the centre of the circle.
- Sprinkle over a little cheese, followed by some ham. Repeat these layers until all the ham, cheese and béchamel have been used up.
- Cover the filling with the other sheet of pastry and press down firmly around the edges to seal. Trim the edges neatly, brush with beaten egg and score the top with the point of a knife to decorate.
- Bake at 200C for 30mins, then turn the oven down to 180C and cook for another 15mins. Leave the pie to cool for at least 30mins before cutting into slices.
