HAM STEAK WITH POTATOES AND ONIONS
The browned potato and onion mixture is a nice complement to ham in this country-style dinner. This recipe has made the rounds in my family for a number of years.

- In a large skillet, cook potato and onion in oil over medium heat until potato is browned and tender. Stir in the vinegar, salt, pepper and thyme. Remove from the heat and set aside., In another skillet, cook ham steaks over medium heat until heated through. Serve with potato mixture.

Steps:
- Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain.
- Preheat oven to 350 degrees F (175 degrees C).
- Grease a 1 1/2-quart baking dish.
- Melt 3 tablespoons butter in a skillet over medium heat. Stir in the ham and onion; cook and stir until the onion has softened and turned translucent, about 5 minutes.
- Stir potatoes into ham mixture; transfer to the prepared baking dish.
- Melt 1/4 cup butter in a saucepan over medium heat. Stir flour into melted butter until smooth.
- Gradually whisk milk into flour mixture; season with salt and black pepper. Continue cooking and stirring until thickened, about 2 minutes.
- Reduce heat to medium-low and stir Cheddar cheese into the white sauce until melted.
- Pour sauce over ham and potatoes.
- Sprinkle bread crumbs atop casserole.
- Bake in the preheated oven until sauce is bubbly and browned, 25 to 30 minutes.

Steps:
- Place potatoes and 2 cups broth in a Dutch oven; bring to a boil. Reduce heat; simmer, covered, until potatoes are tender, 10-15 minutes. Cool slightly. Transfer to a food processor; cover and process until smooth., In same pot, heat butter over medium heat; saute red and green peppers, onion and carrot until carrot is tender, 8-10 minutes. Add ham, jalapeno and seasonings; cook and stir 1 minute., Stir in pureed potatoes and remaining broth; bring just to a boil. In a small bowl, whisk a small amount of hot soup into egg yolk and cream; return all to the pot, whisking constantly. Bring to a gentle boil; cook and stir until thickened, 1-2 minutes. Serve with toppings as desired.

Steps:
- 1. you can buy a small ham or use the ham slices you can buy 2 or 3 of them,you can make slices or cut in to cubes before add to pan add 3 dashes oil to bottom of pan,add ham
- 2. cut peppers i cut the tops off first and make a long cut down the side and then flatten the pepper cut into strips, then cut in half,add into pan, peel & cut ends off onions ,stand onion on flat top cut right down the middle to make a half round then slice ( not thin)then cut in half put into pan.
- 3. wash the potatoes,I leave the skin on, cut in half,then take half cut in fours,add to pan, add minced garlic and italian seasoning add salt and pepper,mix well, add butter to top little more garlic and italian seasoning to top bake at 350 for a hour or til potatoes are golden brown

- Pan fry ham and chopped onion in olive oil until onions are lightly browned.
- While onions and ham are cooking, peel potatoes and slice paper thin.
- Butter a medium casserole dish and place sauteed ham and onion inside.
- Salt and pepper the ham and onions.
- preheat oven at 325 degrees.
- Melt butter in a sauce pan, remove from heat and blend in flour. Return to heat and add milk or rice dream rice milk. Stir over direct heat until sauce boils and thickens.
- Arrange potatoes over ham and pour milk and flour mixture over them over them.
- Sprinkle potatoes with chives and basil flakes.
- Bake at 325 degrees until potatoes are tender, about 1 hour. Cover for first 1/2 hour then remove cover.
