TASTY HAM-OLIVE SPREAD
Makes a wonderful addition to an appetizer table. Olives add the zip to the ham spread. Add some diced cheddar cheese for a different taste. For sandwiches, I use toasted whole wheat or pumpernickel.

Steps:
- Place cubed left-over ham in food processor; pulse to grind. (Careful, not too much).
- Remove to mixing bowl and add remaining ingredients.
- Refrigerate, covered, until ready to serve.
- Serve with baquettes, crackers or sturdy tortilla chips.
HAM & OLIVE HORS D'OEUVRES
Very quick and yummy. I don't usually buy sliced cooked deli ham but for this it works really well (the square kind in the package, ie. Schniders). Make lots because these are always a hit.

Steps:
- take olives out of jar and dry on papertowel.
- dry ham with papertowel also.
- spread about 1 1/2 tbsp of cream cheese on each slice of ham.
- gently cut each piece of ham into 5 strips using serrated knife.
- lay olive at end of one strip and roll up.
- pierce with toothpick.

Steps:
- Combine first 4 ingredients in small bowl. Gradually whisk in oil. Season dressing to taste with salt and pepper.
- Cut hearts of palm on diagonal into 1/2-inch-thick slices. Place in large bowl. Add ham and olives. Toss with enough dressing to coat generously.
- Arrange lettuce leaves on plates. Spoon salad atop lettuce and serve.

- 1. Mash the ham flakes. I do it with a potato masher.
- 2. Add Philadelphia Cream cheese and mash the two ingredients together until well blended.
- 3. Spread the mixture on tortillas up to the edges and roll. Fill the ends. Put in a container and refrigerate for a couple of hours before cutting into bite-size pieces.

- Heat oven to 400°F. In medium bowl, stir Bisquick mix, basil and vegetable juice until soft dough forms; beat vigorously 20 strokes. Place dough on surface sprinkled with Bisquick mix; roll in Bisquick mix to coat. Shape into a ball; knead 5 times.
- Press or roll dough about 1/4 inch thick. With 1 1/4-inch round cutter, cut into rounds. Gather dough scraps together and reroll; cut to make 48 rounds. On ungreased cookie sheet, place dough rounds 1 inch apart.
- Bake 6 to 8 minutes or until edges begin to turn golden brown. Remove from cookie sheet to cooling rack. Cool 10 minutes.
- Cut each ham slice into 6 wedge-shaped pieces; roll up each wedge. For each appetizer, spear toothpick into olive, 1 piece of rolled-up ham and baked round.
