Need a simple casserole sure to please the kids? I served this to friends who later left for Kenya...their girls were pining for it overseas, and you can bet I served it to them again when they returned to the States for a visit! (Talk about easy to please!) Nothing gourmet here, just yummy and great with salad and crispy garlic bread. (Recipe via my sister, who says she got it from Southern Living way back when...)

8 ounces egg noodles
1 1/2 cups chopped cooked ham
1 cup shredded cheddar cheese
1 (10 1/2 ounce) can cream of chicken soup
1/2 cup low-fat milk
1 tablespoon margarine or 1 tablespoon butter

Steps:

  • Cook noodles according to package directions. Drain.
  • Place half of noodles in buttered 2 quart casserole dish.
  • Combine ham and cheese; sprinkle half of ham mixture over noodles.
  • In small bowl, combine soup and milk.
  • Spoon half of soup mixture over ham layer.
  • Then again: noodles, ham/cheese, soup.
  • Dot with butter.
  • Cover loosely with foil.
  • Bake at 375 for 30 minutes.

1 cup diced leftover ham
1 celery stalk (diced)
1 carrot (diced)
¼ cup diced onion
2 tablespoons butter
2 tablespoons flour
½ teaspoon salt
¼ teaspoon pepper
1 teaspoon dried thyme
1½ cups chicken broth
½ cup milk
1 cup shredded cheddar cheese
6 oz egg noodles
¼ cup seasoned panko crumbs (optional)

Steps:

  • Preheat oven to 350 degrees.
  • In a large saucepan cook noodles according to package directions. Drain noodles and clean saucepan to make the sauce.
  • In a large saucepan over medium heat, melt the butter until bubbly. Add the celery, carrot, and onion and cook for 3 minutes, until vegetables have softened.
  • Whisk in the flour, salt, pepper, and thyme. Cook, whisking constantly, for 1 minute.
  • Gradually add chicken broth and milk, whisking constantly. Bring to a boil, then reduce heat and simmer until the sauce begins to thicken.
  • Stir in the cheese and ham and cook for 1 minute, or until cheese is melted.
  • Remove the ham mixture from the cooktop and stir in the cooked egg noodles. Transfer the ham and noodle mixture to a prepared 9x13 casserole. Sprinkle with seasoned panko crumbs (if using) and bake in the oven for 30 minutes, or until casserole is hot.

1/4 cup butter
16 oz. package frozen mixed vegetables
2 cups cooked ham, cubed
1 cup sour cream
1 cup ranch dressing

Steps:

  • 1. Prepare noodles according to package directions; drain.
  • 2. Melt butter in large skillet, over medium-high heat. Add veggies and cook, stirring frequently, until veggies are tender, about 6-8 minutes.
  • 3. Add ham and cook, stirring frequently, until ham cubes are hot, about 2-3 minutes.
  • 4. Stir in sour cream and ranch dressing.
  • 5. Cook over low heat, stirring frequently, until sauce is melted, smooth and hot.

1 small red bell pepper (or ½ large one)
1 small yellow or green bell pepper (or ½ large one)
1 small carrot
3 green onions

2 eggs
1 cup milk

1 tsp of garlic powder

2 tbsp of dried onion soup mix
1/4 cup dry breadcrumbs or something similar (optional)

Steps:

  • Cook the noodles according to the instructions on the packet, making sure not to overcook them.
  • Preheat the oven to 350°F, and grease a medium-sized casserole dish.
  • In a large bowl (or directly in the casserole dish to save time cleaning up), combine veggies, ham, soup, sour cream, and milk.
  • Stir in 1 1/2 cups of cheese.
  • Add in garlic powder, pepper, and onion soup mix. Mix well.
  • When the noodles are done, drain them and add them to the casserole dish, stirring everything together.
  • Sprinkle the remaining 1/2 cup of cheese over the mixture.
  • Top with breadcrumbs. (Optional)
  • Completely cover with a lid or aluminum foil, and bake for 25 min.
  • Remove the lid or foil and bake for another 20 min, or until your ham and noodle casserole is nice and golden brown on top.
  • If using parsley, sprinkle over the top just before serving.

  • Bring a large pot of water to a boil. Add a small handful of salt and the pasta. Cook according to package directions (approximately 6-10 minutes) and then drain the pasta. Stir together the cream, thyme, 1/4 teaspoon salt and 1/8 teaspoon pepper. Set the cream mixture aside.
  • While the pasta is cooking, heat a large skillet over medium high heat. Add the broccoli and 2 tablespoons of water and cover with lid. Cook, stirring occasionally, for 3-4 minutes, letting the vegetables brown a bit between tossing each time. Sprinkle with the remaining salt and pepper. When the vegetables are cooked, but still crisp, remove them to a bowl.
  • Add the ham to the hot skillet and allow it to brown for a minute or so before stirring. When the ham pieces are hot and lightly browned, add the cream to the skillet. Let it simmer and slightly thicken for 1-2 minutes, until it coats the ham pieces. Add the vegetables, toss to coat and then stir in the pasta. Let the sauce cook for another 2-3 minutes as needed, to thoroughly coat the pasta. (If the pasta is too dry, add a small splash of milk until it reaches the desired consistency.)
  • Grate cheese over the top of the pasta and toss to combine and melt the cheese. Serve with additional cheese sprinkled on top, if desired. Enjoy!

  • Trim the ends off the zucchini and cut into noodles according to the instructions on your spiralizer. Line two rimmed sheet pans with thick layers of paper towels. Spread half of the zucchini noodles onto each pan and sprinkle with the salt. Cover with another thick layer of paper towels and press gently. Leave noodles to dry while you prepare the rest of the dish.
  • Warm olive oil over medium heat in a very large pan or wide, shallow pot. (A 5-quart Dutch oven, a 12-inch frying pan with high sides, or even a wok would all work well.)
