Not what you may be thinking, this is NOT ham mac n' cheese! This is just a simply wonderfully SIMPLE baked pasta dish with tasty ham instead of the usual boring hamburger or sausage.

Steps:
- Preheat oven to 425 degrees F (220 degrees C).
- In a large bowl, combine dry pasta, spaghetti sauce, ham, garlic, onion powder and pepper. Fill sauce jar with water, and pour over mixture. Mix well, and spoon into 9x13 inch casserole dish. Cover tightly with foil.
- Bake in preheated oven for 35 minutes. Carefully remove foil, then sprinkle with mozzarella and Parmesan cheese. Bake for 5 minutes, or until cheese is melted.

- Bring a large pan of water to the boil and cook the pasta following pack instructions, adding the broccoli florets to the pan for the final 4 mins. Drain and set aside.
- Meanwhile, make the sauce. Heat the oil in a large pan and cook the onion for 5 mins to soften, then stir in the garlic and cook for 1 min more. Stir in the ham, cream and mustard, then bring to the boil. Add the pasta and broccoli, then stir in the cheese, coating everything in the sauce.

- Cook the pasta according to packet instructions and strain before setting aside.
- Meanwhile 300ml of stock using the mushroom stock pot and 300ml of boiling water.

SMOKED MAC 'N' CHEESE WITH HAM
Steps:
- Preheat oven to 400ºF. Place tomatoes on a lightly oiled baking sheet. Sprinkle with salt and pepper and drizzle with the oil. Roast for about 30 minutes or until concentrated and beginning to caramelize. When cool enough to handle, roughly chop the tomatoes.
- While the tomatoes are cooking, bring a pot of salted water to a boil. Cook the pasta according to package directions. Drain and reserve.
- Bring another pot of salted water to a boil. Cook the collards until tender (about 10 minutes). When cool enough to handle, roughly chop. Reserve.
- Heat a large saucepan over medium heat. Add the butter and onions and cook until softened (about 3 minutes). Whisking constantly, stir in the flour, taking care the flour doesn't brown. Continue to cook for 2 minutes. Whisk in the milk. It will thicken as it gets hot. Whisk constantly; any lumps will smooth out. Cook for 5 - 7 minutes. Mixture will bubble and thicken and when it no longer changes in consistency, it's done. Stir in nutmeg, cayenne and cheese. Season to taste with salt and pepper.
- Stir in pasta, collards and ham. Fold in tomatoes. Spread into a 9" x 9" pan. Sprinkle with breadcrumbs. (Mac 'n' Cheese can be made ahead to this point and refrigerated or frozen.) Bake for 15 minutes or until heated through.
