Ham Loaf with Mustard Sauce image

Brown sugar, mustard, herbs and spices season this hearty ham loaf. I like to make several loaves to serve to our retirement club. To speed things up, I use my food processor's chopper blade to grind the meat.

Number Of Ingredients 18

1 cup dry bread crumbs
1 cup milk
2 eggs, beaten
2 pounds ground fully cooked ham
1-1/2 pounds ground pork
3/4 cup packed brown sugar
1/2 teaspoon ground cloves
1/2 teaspoon ground mustard
MUSTARD SAUCE:
2 egg yolks, beaten
3 tablespoons prepared mustard
2 tablespoons white vinegar
1 tablespoon sugar
1 tablespoon water
3/4 teaspoon salt
1 tablespoon butter
1 tablespoon prepared horseradish
1/2 cup heavy whipping cream, whipped

Steps:

  • In a large bowl, combine the bread crumbs, milk and eggs. Crumble meat over mixture and mix well. In a small bowl, combine brown sugar, cloves and mustard. Spread in two greased 9x5-in. loaf pans. Press meat mixture on top. Bake, uncovered, at 350° for 1-1/2 hours or until a thermometer reads 160°. Let stand for 10 minutes before inverting onto serving platters., For sauce, combine egg yolks, mustard, vinegar, sugar, water and salt in a heavy saucepan. Cook and stir over low heat until mixture is thickened and reaches 160°, about 5 minutes. Remove from the heat. Stir in butter and horseradish. Cool. Fold in cream. Serve with ham loaves.

2 - 3 lb ham loaf mix or equal parts of ground ham and ground pork
2 eggs, beaten
1/2 medium onion, chopped small
Salt & pepper to taste
1 c crushed saltine crackers
1 c milk
2 Tbsp dried parsley flakes
1 Tbsp mustard
GLAZE
1 1/2 Tbsp prepared mustard
3/4 c brown sugar
3 Tbsp vinegar
2 Tbsp water
1/2 Tbsp dried mustard

Steps:

  • 1. Preheat oven to 350 degree F. In a large bowl, mix milk and cracker crumbs. Let crackers absorb milk a few minutes. Mix all remaining ingredients until well blended. Spray a 9 x13 baking dish. Dump in the mixture and shape into loaf as you would for mess loaf. Place in oven and bake for 1 hour.
  • 2. While baking, place all glaze ingredients into a small saucepan. Bring to a boil, then simmer for a few minutes, stirring often, until sugar is dissolved and starting to thicken some, remove from heat.
  • 3. After hamloaf has baked 1 hour, glaze top and continue baking another 15 minutes. Glaze again, then serve hot. The remaining glaze can be served with.

1 1/2 pounds ground smoked ham
1 tablespoon prepared mustard
1/4 cup onion (chopped)
1 tablespoon​ fresh parsley (chopped)
1/2 cup quick-cooking oats
3/4 cup evaporated milk (or half-and-half )
1 ​large egg (beaten)
1/4 cup light brown sugar (or dark brown sugar, packed)
1/4 cup vinegar
Garnish: tomato slices, spinach leaves, hard-cooked egg slices

Steps:

  • Gather the ingredients.
  • Heat the oven to 350 F. Grease a 9x 5 x 3-inch loaf pan
  • Combine ground ham, mustard, chopped onion, parsley, oats, milk, and egg; mix well to blend.
  • Form into a loaf in the prepared loaf pan.
  • Combine the brown sugar and vinegar in a small saucepan . Place the saucepan over medium heat and cook until the sugar has dissolved.
  • Pour the brown sugar mixture over ham loaf.
  • Bake the ham loaf in the preheated oven for 60 minutes.
  • If desired, garnish with tomato slices, spinach leaves, and hard-cooked egg slices.

Similar to meatloaf, this Amish Ham Loaf is made with ground ham and pork, seasoned with curry powder, ground ginger, and nutmeg then glazed with a sweet and sour sauce.

Number Of Ingredients 16

1 pound ground ham (about 3 cups)
1 pound ground pork
2 to 2 1/2 cups soft white bread crumbs
2 large eggs
3/4 cup sour cream
1/2 cup finely chopped onion
2 TBSP lemon juice
1 tsp. curry powder
1 tsp. ground ginger
1/2 tsp. ground nutmeg
2 TBSP yellow mustard
1/2 cup brown sugar
1/4 cup cider vinegar
1/4 cup water
1/2 tsp. fresh ground black pepper
Ketchup (optional)

Steps:

  • Preheat oven to 350 degrees F. Prepare a broiler pan by covering the bottom portion in foil. Replace the slotted top and spray lightly with cooking spray. Set aside.
  • In large bowl, with hands, combine the ground ham, ground pork, and 2 cups soft bread crumbs.
  • In medium bowl, whisk together the eggs, sour cream, onion, lemon juice, ginger, nutmeg, and mustard.
  • Pour wet ingredients into bowl with ham/pork/breadcrumb mixture and combine with hands until it all comes together. If it feel too wet, add the rest of the breadcrumbs.
  • Shape into an oblong loaf onto prepared broiler pan. Let sit for about 30 minutes before putting into oven.
  • Bake for 30 minutes. Baste with 1/2 the glaze. Return to oven and bake for another 15 minutes. Baste with the remainder of the glaze. Return to oven for another 15 to 25 minutes. Top with ketchup, if desired, and pop into oven for another couple of minutes.
  • Let rest for 15 minutes before slicing.
  • Combine all glaze ingredients except ketchup in a small saucepan and heat to boiling. Take off heat and use as directed in the Ham Loaf instructions above.

½ onion (finely diced)
1 tablespoon butter
3 cups ground ham (or very finely diced ham)
1 pound ground pork
1 egg
⅔ cup seasoned bread crumbs
½ cup milk
⅛ teaspoon ground black pepper
¼ cup brown sugar
1 tablespoon dijon mustard
2 tablespoons cider vinegar

Steps:

  • Preheat oven to 350°F.
  • Cook onion in butter for 5-6 minutes or until tender. Cool completely.
  • Combine all loaf ingredients in a bowl and mix well.
  • Place on a parchment lined pan and form into an 8"x 4" loaf. Bake for 1 hour or until the inside of the loaf reaches 160°F.
  • Combine topping ingredients and spread over the top of the loaf during the last 20 minutes of cooking.
  • Rest 5-7 minutes before slicing.

1 cup finely chopped onion

2 large eggs, beaten to blend
1 teaspoon black pepper
3/4 teaspoon salt
1/2 cup orange marmalade
1/2 cup Dijon mustard
1/3 cup (packed) golden brown sugar

Steps:

  • Preheat oven to 350°F. Melt butter in heavy medium skillet over medium-low heat. Add onion and bell pepper. Cover and cook until vegetables are tender, stirring occasionally, about 10 minutes. Cool mixture completely.
  • Mix ground pork, ham, crushed crackers, milk, eggs, pepper, salt and cooled onion mixture in large bowl; combine thoroughly. Transfer pork mixture to shallow baking pan. Shape into 9x4x2 1/2-inch loaf. Using long knife, make shallow crisscross (diamond) pattern in top of loaf. Bake loaf 30 minutes.
  • Meanwhile, blend orange marmalade, Dijon mustard and brown sugar in small bowl for glaze.
  • Drizzle 1/3 cup glaze over loaf; bake 15 minutes. Drizzle another 1/3 cup glaze over loaf; bake 15 minutes. Drizzle remaining glaze over loaf and bake until thermometer inserted into center of loaf registers 165°F, about 20 minutes longer. Transfer loaf to platter; let stand 10 minutes. Pour pan juices into small bowl; whisk to blend.
  • Cut loaf crosswise into 3/4-inch-thick slices. Serve with pan juices.
