HEARTY HAM LOAF

1 cup coarsely crushed saltines (about 25 crackers)
1 cup 2% milk
2 large eggs, lightly beaten
1/8 teaspoon pepper
1-1/2 pounds ground ham
1 pound ground pork
BASTING SAUCE:
1/2 cup packed brown sugar
1 teaspoon ground mustard
2-1/2 tablespoons vinegar
1/4 cup water

Steps:

  • In a large bowl, combine the crackers, milk, eggs and pepper. Crumble ham and pork over mixture and mix well. Press into a 9x5-in. loaf pan. Bake at 350° for 1-1/4 hours or until a thermometer reads 160°. , Meanwhile, combine the sauce ingredients in a small saucepan; bring to a boil. Boil for 2 minutes. Baste loaf occasionally after first 20 minutes of baking.

  • In a large bowl, combine the first five ingredients. Crumble ham and turkey over mixture and mix well. Press into a greased 9x5-in. loaf pan. Bake, uncovered, at 375° for 50-55 minutes or until a thermometer reads 160°. , In a small saucepan, combine sauce ingredients. Cook and stir over medium heat for 5 minutes or until heated through. Serve with ham loaf.

GRAM'S HAM LOAF

Famous Western Pennsylvania Ham Loaf. Perfect way to use up left over smoked ham after Christmas or Easter. Be sure to serve it with a generous amount of sauce. We use a hand-held meat grinder that belonged to my husband's great-grandmother - doesn't take long and is somewhat nostalgic.

2 pounds ground smoked ham
2 pounds ground pork
2 cups crushed graham crackers
1 ½ cups evaporated milk
3 eggs, beaten
1 (10.75 ounce) can condensed tomato soup
1 cup brown sugar
½ cup white vinegar
½ cup water
1 tablespoon ground dry mustard

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Line a large baking sheet or jellyroll pan with parchment paper.
  • In a large bowl, mix the smoked ham and ground pork together until thoroughly mixed, and lightly mix in the graham crackers, evaporated milk, and eggs. Form the mixture into two loaves, and place the loaves onto the prepared baking sheet.
  • In a saucepan over medium-low heat, whisk together the tomato soup, brown sugar, vinegar, water, and dry mustard until well combined. Bring the mixture to a boil, stirring to dissolve the brown sugar. Pour about 1 cup of sauce over each ham loaf, reserving remaining sauce.
  • Bake in the preheated oven for 2 hours. Slice and serve with reserved sauce.

½ onion (finely diced)
1 tablespoon butter
3 cups ground ham (or very finely diced ham)
1 pound ground pork
1 egg
⅔ cup seasoned bread crumbs
½ cup milk
⅛ teaspoon ground black pepper
¼ cup brown sugar
1 tablespoon dijon mustard
2 tablespoons cider vinegar

Steps:

  • Preheat oven to 350°F.
  • Cook onion in butter for 5-6 minutes or until tender. Cool completely.
  • Combine all loaf ingredients in a bowl and mix well.
  • Place on a parchment lined pan and form into an 8"x 4" loaf. Bake for 1 hour or until the inside of the loaf reaches 160°F.
  • Combine topping ingredients and spread over the top of the loaf during the last 20 minutes of cooking.
  • Rest 5-7 minutes before slicing.

Steps:

  • Gather the ingredients.
  • Heat the oven to 350 F. Grease a 9x 5 x 3-inch loaf pan

Similar to meatloaf, this Amish Ham Loaf is made with ground ham and pork, seasoned with curry powder, ground ginger, and nutmeg then glazed with a sweet and sour sauce.

1 pound ground ham (about 3 cups)
1 pound ground pork
2 to 2 1/2 cups soft white bread crumbs
2 large eggs
3/4 cup sour cream
1/2 cup finely chopped onion
2 TBSP lemon juice
1 tsp. curry powder
1 tsp. ground ginger
1/2 tsp. ground nutmeg
2 TBSP yellow mustard
1/2 cup brown sugar
1/4 cup cider vinegar
1/4 cup water
1/2 tsp. fresh ground black pepper
Ketchup (optional)

Steps:

  • Preheat oven to 350 degrees F. Prepare a broiler pan by covering the bottom portion in foil. Replace the slotted top and spray lightly with cooking spray. Set aside.
  • In large bowl, with hands, combine the ground ham, ground pork, and 2 cups soft bread crumbs.
  • In medium bowl, whisk together the eggs, sour cream, onion, lemon juice, ginger, nutmeg, and mustard.
  • Pour wet ingredients into bowl with ham/pork/breadcrumb mixture and combine with hands until it all comes together. If it feel too wet, add the rest of the breadcrumbs.
  • Shape into an oblong loaf onto prepared broiler pan. Let sit for about 30 minutes before putting into oven.
  • Bake for 30 minutes. Baste with 1/2 the glaze. Return to oven and bake for another 15 minutes. Baste with the remainder of the glaze. Return to oven for another 15 to 25 minutes. Top with ketchup, if desired, and pop into oven for another couple of minutes.
  • Let rest for 15 minutes before slicing.
  • Combine all glaze ingredients except ketchup in a small saucepan and heat to boiling. Take off heat and use as directed in the Ham Loaf instructions above.

1 cup Panko bread crumbs
1/4 teaspoon ground black pepper
1 tablespoon dry seasoning blend
2 pounds Ham (ground, fully cooked)

1/3 cup Packed brown sugar
1/4 cup apple cider vinegar
1/2 teaspoon ground dry mustard
1/2 cup crushed pineapple
2 tablespoons Water

Steps:

  • Preheat oven to 350 degrees F.
  • Place ham in food processor and grind for approximately one minute (or use a meat grinder). Put the ground meat in a large mixing bowl.
  • Lightly beat the eggs in a small bowl. Then in the large bowl combine eggs, bread crumbs, milk, pepper and dry seasoning blend with the ground ham and mix well.
  • Shape the ham loaf mixture into a roughly 8 x 4" oval and place into a shallow baking dish or loaf pan.
  • Bake the large loaf uncovered for 25 minutes.
  • Combine glaze ingredients and spoon glaze over loaf.
  • Place loaf back into oven and bake for an additional 35 minutes, basting occasionally with the glaze.
  • Remove loaf from the oven and allow to cool a bit before putting on serving platter and slicing.

Steps:

  • Preheat the oven to 350 degrees Fahrenheit.
  • In a large bowl, mix together the ground ham, pork, eggs, mustard, ketchup, onion, graham crackers and milk. Mix well.
  • Spray a 9x13 baking pan with cooking spray.
  • Shape the ham mixture into a loaf, packing the meat firmly.
  • Sprinkle the top of the ham loaf with paprika.

2 cups rolled oats
2 eggs

1 ½ cups brown sugar
¼ cup cider vinegar
¾ cup mayonnaise
¼ cup sour cream
5 tablespoons prepared horseradish
1 tablespoon lemon juice

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Combine the ground ham, ground pork, onion, oats, eggs, parsley, ground mustard, pepper, and evaporated milk in a large bowl. Mix well. Form in to 2 loaves; place into 9x13 inch baking pans.
  • Bake loaves in preheated oven for 30 minutes. Stir the brown sugar and vinegar together in a small saucepan; boil for 1 minute. Remove loaves from oven, and pour brown sugar mixture over. Return loaves to oven; baste frequently with the pan juices until browned and cooked through, 30 to 45 minutes longer.
  • Combine the mayonnaise, sour cream, horseradish, and lemon juice in a small bowl. Season to taste with salt and pepper. Serve sauce over sliced ham loaf.

  • The third meat included in the recipe is bacon. I slice the entire slab of bacon into 1 inch squares. Basically cut it to a size that will fit your meat grinder.
  • The last meat you need to prep is the fresh pork. Again, cut this into chunks that will fit the meat grinder. Once all of your meat is prepped, place the entire batch of 4 meats into the freezer. Leave it there as you prep the rest of your ingredients prior to grinding. About an hour will do.
