1/4 cup butter, cubed
4 cups sliced leeks (white portion only)
1/2 pound sliced fresh mushrooms
3 medium carrots, sliced
1/2 cup all-purpose flour
1-1/4 cups 2% milk
1-1/4 cups vegetable broth
1-3/4 cups cubed fully cooked ham
2 tablespoons minced fresh parsley
1/4 to 1/2 teaspoon ground nutmeg
Dash pepper
1 sheet frozen puff pastry, thawed
1 large egg, lightly beaten

Steps:

  • Preheat oven to 425°. In a large saucepan, heat butter over medium-high heat. Add leeks, mushrooms and carrots; cook and stir until tender., Stir in flour until blended. Gradually stir in milk and broth. Bring to a boil over medium heat, stirring constantly; cook and stir or until thickened, about 2 minutes. Remove from heat; stir in ham, parsley, nutmeg and pepper., On a lightly floured surface, unfold puff pastry; roll to 1/4-in. thickness. Using a 10-oz. ramekin as a template, cut out 4 tops for pies. Fill 4 greased 10-oz. ramekins with leek mixture; top with pastry. Cut slits in pastry. Brush tops with egg., Bake 18-22 minutes or until golden brown. Let stand 5 minutes before serving.

Ham and leek pie is a comforting, creamy, savory pie recipe that uses simple ingredients - just ham, leeks, potatoes, carrots, and a few other ingredients. Topping with a puff pastry crust makes it complete!

2 Tbsp butter
2 cups cooked ham ((cut in chunks))
½ cup carrot, (sliced (1 large))
1 cup leeks, (sliced - white and light green part only (about 2 leeks))
2 cups potatoes, (peeled and chopped (about 2 medium size))
2 tsp marjoram ((dry))
¼ tsp salt, (more to taste)
¼ tsp black pepper, (more to taste)
1 cup chicken stock (or broth (or ham stock if you have it))
4 Tbsp flour ((all purpose))
½ cup milk (or cream)
⅛ tsp nutmeg ((ground))
1 puff pastry sheet
1 tsp yellow mustard ((or Dijon))

Steps:

  • Remove puff pastry from freezer to thaw.
  • In a medium sauce pan, cook potatoes and carrots in boiling water until tender (5 minutes).
  • Meanwhile, preheat cast iron skillet to medium heat. Melt butter and brown ham with leeks and marjoram for 5 minutes.
  • Preheat oven to 350 F.
  • Sprinkle flour over top of ham. Then add nutmeg and stock and blend with a fork or whisk to eliminate any lumps. Cook this mixture on medium heat for about 5 minutes to thicken, stirring frequently.
  • Drain potatoes and carrots and add to skillet along with cream and mustard. Mix together.
  • Unroll puff pastry and cut appropriate size to cover top of pie (can use an inverted plate of the same size).
  • Top pie filling with puff pastry dough. Poke the top with a fork a few times to prevent over rising.
  • Place skillet on cookie sheet to catch any drips.
  • Bake for 30 minutes or until browned and bubbly.

This ham and cider pie recipe is perfect comfort food for cold winter nights. It can also be frozen.

Number Of Ingredients 19

1 tbsp olive oil
1 large onion, roughly chopped
2 leeks, thickly sliced
3 carrots, thickly sliced
Small handful fresh thyme, leaves picked, or chopped fresh parsley
4 tbsp plain flour
500ml dry cider
8 tbsp crème fraîche
1kg floury potatoes, such as maris piper or desirée, chopped
1 tbsp wholegrain mustard
75g butter
100ml milk
For the ham hock
1 (about 1.2kg) smoked ham hock
1 onion, roughly chopped
2 carrots, roughly chopped
2 bay leaves
Small bunch fresh parsley
1 tbsp black peppercorns

Steps:

  • For the ham hock, place the hock into a large casserole and add the rest of the ingredients. Cover with cold water, bring to the boil and simmer for 2-3 hours until the hock is tender and the meat comes off the bone easily. Remove from the casserole and cool. Meanwhile, pour the stock through a sieve into a jug and reserve, discarding the contents of the sieve. Remove the skin and cut the meat into bite-size chunks.
  • Heat the olive oil in a large, heavy-based casserole. Add the onion, leeks, carrots and thyme leaves, and season well. Fry over a medium heat until softened slightly and just golden brown. Add the plain flour and stir in well.
  • Increase the heat, pour in the cider and 300ml of the reserved, hot ham stock, add the ham and bring to the boil. Reduce to a simmer and add half the crème fraîche. Season with salt (to taste) and black pepper and simmer for 10 minutes until the sauce has thickened nicely.
  • Meanwhile, cook the potatoes in a pan of boiling salted water for 10 minutes until tender, then drain. Add the rest of the crème fraîche, mustard, 50g of butter and the milk. Season well and mash until smooth.
  • Spoon the pie filling into a large, ovenproof dish. Spoon over the mash, using a fork to spread it evenly, then dot with the rest of the butter.
  • Cool completely and cover with buttered baking paper, cling film and foil. Freeze for up to 3 months.
  • When ready to eat, defrost the pie completely. Preheat the oven to 200°C/fan180°C/gas 6, remove the foil, cling film and paper, and bake in the oven for 25-30 minutes until golden and bubbling.

2 tbsp butter
1 large onion, finely chopped
3 leeks, finely sliced
2 large potatoes, cut into small cubes
2 tbsp plain flour, plus extra for dusting
300ml chicken or ham stock
100ml pot crème fraîche (or use leftover double cream)
2 tsp wholegrain mustard
200g cooked ham, shredded
4 bay leaves, optional
375g pack puff pastry
1 egg, beaten, to glaze (or use milk)

Steps:

  • Heat a large frying pan, melt the butter, then add the onion and leeks. Cover, then very gently cook for 15 mins until soft. Add the potatoes after 5 mins cooking.
  • Stir in the flour, turn up the heat, then add the stock, stirring until the mix thickens a little. Take off the heat, then stir in the crème fraîche, mustard and ham. Season to taste, then cool, if you have time. Spoon the mix into a large pie dish, adding a couple of bay leaves. Heat oven to 220C/fan 200C/gas 7.
  • Roll out the pastry on a floured surface to the thickness of a £1 coin. Cut a pastry strip the same width as the lip of the dish, wet the edge of the dish with egg, then fix the strip around it. Brush the top with egg, then lay over the remaining pastry.
  • Trim pastry to the edge of the dish, then ruffle the cut edges with the knife blade to help the layers rise. Cut a few slits to let the steam escape, decorate with bay leaves, if you like, then brush all over the top with egg. Can be done up to a day ahead, keep chilled. Bake for 30 mins until risen.

This is a very tasty dish and a different way of making a shepherd's pie. Ham, leeks, and potatoes baked in a creamy mashed potato crust.

2 ¼ pounds potatoes, peeled and cut into chunks
½ cup heavy cream
3 tablespoons butter
1 pinch ground nutmeg
salt and pepper, to taste
2 tablespoons olive oil
1 onion, chopped
1 ½ pounds leeks, sliced
2 medium tomatoes - peeled, seeded, and coarsely chopped
1 ½ pounds cooked ham, thinly sliced
1 egg yolk, lightly beaten
¼ cup shredded mozzarella cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly oil a 2 quart casserole dish.
  • Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain, cool and chop. Stir in the cream, butter, nutmeg, salt, and pepper and mash until smooth.
  • Heat the olive oil in a large skillet over medium heat. Cook the onion until translucent. Stir in the leek and cook another minute until the leek is soft, but not brown. Mix in the peeled tomatoes, lower the heat, and simmer five minutes, stirring occasionally until the tomatoes have lost some of their shape. Stir in the ham and season with salt and pepper.
  • Spread half of the mashed potatoes on the bottom of the casserole dish. Pour in the ham and leek sauce and cover with the remaining mashed potatoes. Brush the surface of the mashed potatoes with the beaten egg yolk. Sprinkle on the shredded mozzarella. Bake in the preheated oven for 20 minutes, or until golden brown.

Make your own shortcrust pastry then fill with sweet leeks, Lancashire cheese, cooked ham and a chive and crème fraîche sauce

120g butter , cut into cubes
300g plain flour , plus extra for dusting
good pinch of salt
600g small floury potato , roughly the same size
2 tbsp olive oil
1 onion , finely chopped
500g leek , cleaned and roughly chopped
3 garlic cloves , finely chopped
3 tbsp snipped chive
150ml half-fat crème fraîche
200g Lancashire cheese , grated
200g thinly sliced ham (we used Italian cooked ham)
1 medium egg , beaten

Steps:

  • First, make the pastry. Put the butter in a bowl with the flour and salt. Using your fingertips, rub the butter into the flour until the mixture resembles coarse breadcrumbs. Add about 6 tbsp water to the mixture and use a knife to mix together until you have a firm dough. Cut the dough in half and shape each into a flat disc. Wrap in cling film and put in the fridge while you make the filling.
  • Put the potatoes in a medium saucepan and cover with water. Bring to the boil and simmer for 5-7 mins until partcooked. Drain well and allow to cool.
  • Heat the oil in a large saucepan. Add the onion and leeks, and gently cook for 10-15 mins until they are very tender, being careful not to brown them. Add the garlic and cook for a few mins more, then remove from the heat, tip into a bowl and allow to cool. Stir in the chives.
  • Heat oven to 180C/160C fan/gas 4. Put a baking tray in the oven to preheat. Roll out 1 disc of the pastry on a lightly floured surface to 5mm thick. Use this to line a 24cm round x 4cm deep pie tin, leaving any excess pastry to overhang the tin. Prick the pastry all over with a fork, place on the heated baking tray and bake for 10-12 mins. Return the baking tray to the oven.
  • Slice the cooled potatoes into very thin rounds. Start to assemble the pie by arranging half of the potatoes in the base, then top with half the leeks, half the crème fraîche dotted over the top and half the cheese. Arrange half the ham on top, then repeat again with all the remaining ingredients.
  • Roll out the remaining disc of pastry to about a 26cm circle. Brush the top edge of the pastry in the tin with the beaten egg. Lay the circle of pastry over the top and trim the edges, crimping with your fingertips or a fork to seal. Brush all over with the beaten egg and decorate the top with any leftover pastry cut into leaves or a decoration of your choice.
  • Place on the hot baking tray on the lowest shelf and bake for 45 mins until golden. Set aside for 15 mins to cool in the tin before transferring to a wire rack to cool. Cut into wedges and serve.

1 large onion, finely chopped
3 leeks, finely sliced
2 large potatoes, cut into small cubes
2 tablespoons plain flour
300 ml chicken stock or 300 ml ham stock
2 teaspoons coarse grain mustard
200 g cooked ham, shredded
375 g puff pastry
1 eggs, beaten, to glaze or 1 milk, to glaze
100 ml double cream

Steps:

  • Melt the butter in a large frying pan, add the onion and leeks first, and then the potatoes after a few minutes, cook until soft.
  • Add the flour and then the stock and stir together well. Turn down the heat and add the crème fraiche, mustard and ham. Season to taste and the add ingredients to a pie dish.
  • Dust a little flour on the surface and roll out the puff pastry, add it to the top of the pie and trim the edges. Use a fork to press down the edges and cut a few slits to allow air to escape. Brush the pastry will egg and cook for 30 minutes until golden (220C/Fan 200C/Gas 7).
  • The pie may be served with any extra vegetables from your box such as spring greens, carrots or savoy cabbage.

  • Make the pastry (it will help if your kitchen isn’t too hot). Using the foil to stop your fingers touching the butter, coarsely grate it into a large mixing bowl straight from the freezer. Work quickly to keep it as cold as possible.
  • Sift over the flour with a couple of pinches of salt, then sprinkle over 2 tbsp chilled water and mix witha palette knife or dinner knife to a rough dough. Add a little more water if needed to bring it together, then tip out onto a lightly floured work surface and shape it into a disc with your hands. Handle it as little as possible. The pastry should still have visible flecks of butter through it. Wrap in cling film, then chill.
  • To make the filling, put the potatoes into a pan of boiling water and cook for around 5 minutes or until not quite done. Drain and leave to steam dry in the colander for a few minutes. Melt the butter in a large sauté pan or saucepan, then add the leeks with some salt. Cook, stirring, for around 5 minutes or until softened but not coloured, then stir in the mace and flour until the leeks are evenly coated. Cook,stirring often, for 2-3 minutes until the flour starts to smell biscuitty. Stir in the mustard and add the bay leaves. Gradually, over a medium-high heat and stirring all the time, add the chicken stock. It will thicken as it cooks. It should be thick enough to thickly coat the back of a spoon – if it looks too thin, stop adding stock and let it bubble and thicken while stirring, then continue adding stock.
  • Once all the stock has been added and the sauce is the right thickness, stir through the cream and bubble for a minute or so. Stir through the potatoes and the ham, then taste it – you probably won’t need to add salt but it will need some pepper. Transfer to a 1.5 litre ovenproof pie dish and leave to cool completely, loosely covered with cling film.

  • Heat a frying pan over a medium heat, then add the oil. When hot, add the leeks and onion, and sauté for 2 minutes. Add the garlic and sauté until the leeks and onion are softened but not coloured, and any excess liquid has evaporated. Season with salt and pepper.
  • Sprinkle over the flour and stir for 1-2 minutes, then slowly stir in the stock. Add the ham, crème fraîche and mustard, and stir together. Adjust the seasoning, if necessary. Set aside to cool.
  • Roll out the pastry on a lightly floured surface with a flour-dusted rolling pin until it is about 2-3mm thick. Cut a strip of pastry the same width as the rim of a pie dish (about 1.7 litre capacity). Lightly brush the edge of the dish with a little of the beaten egg yolk and fix the strip around it. Spoon the filling into the pie dish.
  • Brush the top of the pastry strip with egg yolk, then lay over the remaining pastry, press down lightly and crimp the edge. Cut off the excess pastry to trim the edge. Use a small knife to cut a steam hole in the centre, then insert a small funnel made from foil to release the steam while baking. Leave the pie to chill for at least 20 minutes before baking. Meanwhile, preheat the oven to 220°C, fan 200°C, gas 7.
