- Place sweet potato in a small saucepan; cover with water. Bring to a boil. Reduce heat; cover and cook for 10-15 minutes or until almost tender. Drain and set aside. , Drain pineapple, reserving juice; set pineapple aside. In a small bowl, combine the butter, brown sugar and reserved juice. Place the ham, squash, apples, sweet potato and pineapple in a large resealable plastic bag; add the juice mixture. Seal bag and turn to coat; refrigerate for 1 hour. , Drain and discard marinade. On eight metal or soaked wooden skewers, alternately thread the ham, sweet potato, squash, apples and pineapple. Grill, covered, over medium heat for 15-20 minutes or until apples are tender, turning occasionally.

- Combine juice, soy sauce, brown sugar, & ginger.
- Marinade ham dices in the mixture at least 2 hours or overnight in the refrigerator; I like to use a ziploc bag to keep mine in & occasionally mix it up by squeezing the ham around in the bag. Drain ham & SAVE marinade.
- After soaking your skewers in water, alternate your ham & pineapple. Leave a little bit of space between them for more even cooking.
- Heat marinade in a small saucepan over medium heat. You may add additional brown sugar & ginger to taste, if desired. Wait for mixture to come to a boil & add cornstarch/water slurry. Whisk until boiling & thickened up. Keep warm until ready to grill. This makes a nice thick glaze to add to your kabobs.
- Grill skewers until heated through & starting to caramelize, basting on both sides with your warm glaze.

- If using bamboo skewers, soak for 15 - 30 minutes prior to filling with meat and fruit.
- Prepare grill per grill specifications

- Begin by cubing the ham into 1" pieces. Cut the fresh pineapple into 1" chunks and cut the pepper and onion into 1" pieces.
- Skewer the ham, pineapple, pepper and onion on to pre-soaked, wooden skewers or metal skewers.
- In a bowl, whisk together the brown sugar, pineapple juice, ketchup, Worcestershire sauce, vinegar, hot sauce, garlic powder and pepper. Whisk together until brown sugar dissolves into the liquid. Glaze should be smooth.
