NOVA SCOTIAN HODGE PODGE

This is an old favourite vegetable stew from Nova Scotia. Is typically made in the fall as gardens are just harvested. It is important that the freshest veggies are used. This recipe very much lends itself to tinkering by adding different vegetables and quantities.

1 cup fresh green beans, trimmed and snapped
1 cup fresh wax beans, trimmed and snapped
1 cup diced carrot
1 cup diced turnip
2 cups cubed new potatoes
6 tablespoons butter
½ cup heavy cream
1 tablespoon all-purpose flour
½ cup water

Steps:

  • Place the green beans, wax beans, carrots and turnips into a saucepan and add enough water to cover the vegetables. Lightly salt the water, and bring to a boil. Cook for about 1/2 hour, then add the potatoes and cook for another 1/2 hour. Stir in butter and if desired, cream.
  • Mix together the flour and 1/2 cup water, and pour into the soup. Cook for a few more minutes to thicken. Remove from heat and serve hot.

Recipe's been passed down from my great Grandmother (Year 1889). Given to my Grandmother (1906) the only daughter of 17 boys. Both of whom said 'this meal feeds the soul.' Recipe for me allows for no substitutions. The whole allure of the recipe is the rich dimensional taste and fresh flavors of the summer harvest! Recipe version is different then others. This might satisfy the need from others, for that great flavor they have been looking for in a Hodge Podge.

6 slices bacon
2 tablespoons butter
1 small onion, roughly chopped
1 small garlic clove
1 cup fresh green beans, trimmed and snapped
1 cup fresh wax beans, trimmed and snapped
1 ½ cups baby carrots
1 cup low-salt chicken broth
salt to taste
12 small whole new potatoes
¼ cup butter
½ cup heavy cream
1 tablespoon all-purpose flour
½ cup water

Steps:

  • Cook the bacon in a large, deep skillet over medium-high heat until evenly browned, about 10 minutes. Drain on a paper towel-lined plate. Crumble and set aside.
  • Meanwhile, melt 2 tablespoons of butter in a large pot over medium heat. Stir in the chopped onion and whole garlic clove. Cook and stir until the garlic has softened, and the onions begin to turn golden-brown, about 8 minutes. Scrape the mixture into a small bowl; remove the garlic clove, mash, and return to the onions. Place the green beans, wax beans, and carrots into the saucepan. Pour in the chicken broth and enough water to just cover the vegetables; season with salt. Bring to a boil over high heat; reduce heat to medium-low and simmer 15 minutes.
  • After the beans have simmered 15 minutes, stir in the new potatoes and cook until tender, about 30 minutes more. Stir in the garlic, onions, 1/4 cup butter, and cream; return to a simmer. Dissolve the flour in 1/2 cup of water and stir into the soup. Cook and stir until the soup has thickened, 10 to 15 minutes. Serve with crumbled bacon.

Number Of Ingredients 12

6 cups water
2 teaspoons salt, divided
1 pound green beans, cut into 1-inch pieces
6 medium carrots, cut into 1-inch pieces
3 medium potatoes, peeled and quartered
1 cup fresh or frozen corn
2 cups fresh or frozen peas
6 tablespoons butter, cubed
2 cups heavy whipping cream
2 tablespoons minced chives
1/2 teaspoon pepper
1/4 teaspoon paprika

Steps:

  • In a Dutch oven, bring water and 1 teaspoon salt to a boil. Add the beans, carrots, and potatoes. Reduce heat; cover and cook for 15 minutes. Add corn and peas; cook 3-5 minutes longer or until tender., Drain, reserving 2 cups liquid; set vegetables aside. In the same pan, combine the butter, cream, chives, pepper, paprika, reserved liquid and remaining salt. Add vegetables and heat through.

5 cups cabbage, chopped
6 large carrots, cut into 1 inch pieces
2 large potatoes, peeled and chopped (3 cups)
3 cups water
2 cups ham, diced
1/2 cup onion, chopped
1/2 teaspoon salt
1/2 teaspoon seasoning salt
1/8 teaspoon ground pepper
1 (15 ounce) can garbanzo beans, undrained

Steps:

  • Combine all ingredients except the garbanzo beans in a dutch oven.
  • Bring to boil.
  • Cover and simmer for 1 hour.
  • Stir in the undrained garbanza beans.
  • Cover and cook for 10 to 15 minutes more.
  • Add more water if needed.

CHRISTMAS HODGEPODGE PIE

I like to call this my Christmas hodgepodge pie. A glorious mixture of all those lovely roast dinner leftovers, enveloped in a smooth, silky sauce and hugged by beautifully crumbly pastry.

2 rashers of higher-welfare smoked streaky bacon
25 g unsalted butter
olive oil
2 sprigs of fresh rosemary
2 leeks
2 field mushrooms
2 teaspoons wholegrain mustard
50 g plain flour
1 litre organic chicken stock
2 tablespoons crème fraîche
500 g leftover cooked turkey and/or stuffing
200 g Brussels sprouts, (uncooked)
2 tablespoons cranberry sauce
1 large free-range egg
PASTRY
500 g plain flour, plus extra for dusting
250 g cold unsalted butter
1 large free-range egg

Steps:

  • For the pastry, put the flour and 1 teaspoon of sea salt into a bowl, cube and add the butter, then use your thumbs and forefingers to rub the butter into the flour until it resembles breadcrumbs.
  • Beat the egg, then stir into the bowl with 3 to 4 tablespoons of ice-cold water. Use your hands to gently bring it together into a ball, but don't overwork it. Divide into two pieces and flatten each into a circle (for the top and bottom of your pie), then wrap in greaseproof paper and chill in the fridge for at least 30 minutes.
  • Finely chop the bacon, then place in a large non-stick frying pan on a medium heat with the butter and 1 tablespoon of olive oil (or turkey fat, if you have any). Pick, roughly chop and add the rosemary, then cook for 3 minutes, or until golden.
  • Wash, trim and roughly chop the white part of the leeks (save the green part for making stock or soup) and thickly slice the mushrooms, then add to the pan. Season with a pinch of sea salt and black pepper, then cook for 10 minutes, or until soft and caramelised, stirring occasionally.
  • Stir in the mustard, then the flour, and pour in the stock - any leftover turkey gravy will add great bonus flavour here, too. Bring to the boil and simmer gently for 15 to 20 minutes on a medium-low heat, then turn off the heat and add the crème fraîche. At this stage, you can either leave it chunky or use a stick blender to whiz it to your preferred consistency. Leave to cool completely.
  • Once cold, set aside half of the sauce to serve, then tear up the turkey meat and stir it into the pan, adding some stuffing, if you've got it. Trim, finely slice and stir in the Brussels sprouts.
  • Preheat the oven to 170°C/325°F/gas 3 and grease the bottom of a round 30cm pie dish with a little oil (or leftover turkey fat, if you have any). Roll out half the pastry on a clean flour-dusted surface to ½cm thick and use it to line the pie dish, then tip in your turkey pie filling. Dollop the cranberry sauce on top. Beat the egg, then use it to brush the edges.
  • Roll out the remaining pastry to ½cm thick and a little bigger than the pie dish. Use a selection of cutters to cut out shapes in the middle, and set aside. Carefully place the pastry left behind on top of the pie dish and brush with beaten egg, then place the reserved pastry shapes on top, filling any gaps. Trim off any pastry, then roll out again and cut out more shapes, until all the gaps are filled.
  • Brush the top with beaten egg, and press a fork around the edges to seal. Bake at the bottom of the oven for 45 to 50 minutes, or until the pastry is golden and the filling is piping hot.
  • When you're nearly ready to serve, reheat the remaining sauce until piping hot, then take it to the table alongside the pie. Delicious with steamed greens and peas.
