ROASTED SWEET POTATO SOUP WITH HAM HOCKS

- Preheat the oven to 400 degrees F.
- Arrange the sweet potatoes in a single layer on a baking sheet. Place in the center of the oven and bake until fully cooked, 1 to 1 1/2 hours. To check for doneness, pierce one with the tip of a small knife; it should slide in and out easily. Set the potatoes aside until cool enough to handle.
- Meanwhile, place the chicken stock, ham hock and 1 cup water in a medium pot and bring to a boil. Reduce the heat to medium-low and simmer, adding more water if the liquid runs low, until the tough skin of the ham hock softens, 30 to 45 minutes. Remove the ham hock and transfer to a flat surface. Peel away or use a knife to cut off the tough skin. Discard the skin and cut the meat beneath it into smaller pieces. Put the meat back into the stock and simmer gently over low heat so the meat flakes and flavors the liquid. You want to end up with 1 to 1 1/2 cups meaty, flavorful liquid. Keep warm.
- In a small saucepan, melt the butter over medium heat until it turns a light brown color, 2 to 3 minutes. Remove from the heat and immediately stir in the brown sugar, cinnamon, orange zest and juice and stir to combine. Set aside.
- Peel the sweet potatoes and break the flesh into chunks; put the chunks into a large pot. Add the coconut milk and 1 cup water and simmer over medium heat, 5 to 8 minutes. Puree the soup with an immersion blender or in small batches in a blender. Return the soup to the pot and stir in the brown butter and ham and liquid. Taste for seasoning. If the soup needs more flavor, add salt, pepper, a pinch of brown sugar or more orange zest.

- Rinse and sort the navy beans. Place in a Dutch oven with 8 cups water. Bring to a boil for 2 minutes and remove from heat. Let stand, covered, until beans are softened, about 5 hours.
- Drain the navy beans and discard the soaking liquid. Rinse beans and return to the Dutch oven. Add ham hocks, chicken broth, 4 cups water, onion, parsley, garlic powder, basil, black pepper, oregano, nutmeg, and bay leaves. Bring soup to a boil; reduce heat and simmer until beans are tender, about 1 1/2 hours.
- Mix carrots, celery, and potato flakes into the soup until well combined. Cover and simmer until vegetables are tender, about 30 minutes more.
- Take ham hocks from the pot and place on a cutting board until cool enough to handle. Remove meat from the bones and cut into bite-sized pieces. Return meat to the pot and warm through over medium heat, about 3 minutes.

This is a delicious recipe for ham and potato soup that a friend gave to me. It is very easy and the great thing about it is that you can add additional ingredients, more ham, potatoes, etc and it still turns out great.

- Combine the potatoes, celery, onion, ham and water in a stockpot. Bring to a boil, then cook over medium heat until potatoes are tender, about 10 to 15 minutes. Stir in the chicken bouillon, salt and pepper.
- In a separate saucepan, melt butter over medium-low heat. Whisk in flour with a fork, and cook, stirring constantly until thick, about 1 minute. Slowly stir in milk as not to allow lumps to form until all of the milk has been added. Continue stirring over medium-low heat until thick, 4 to 5 minutes.
- Stir the milk mixture into the stockpot, and cook soup until heated through. Serve immediately.

- Combine chicken stock, sweet potatoes, ham, celery, and onion in a stockpot; bring to a boil. Reduce heat to medium and cook until sweet potatoes are tender, 10 to 15 minutes. HAM HOCK, SWEET POTATO & CELERY SOUP
This tasty soup is easy to prepare in advance & freezes well. It's cheap to make, has low GI, is gluten & lactose free. Serve with oven warmed wholemeal bread rolls in big bowls. A winter warmer. Ham hocks rarely come much smaller that 1kg, so making a smaller quantity is hard to do. It also takes the same time to cook a large or small quantity, so I use it as a great time saver - with 4 adults in our house it provides one full meal for tonight & one full meal for for the freezer. If we're having a large dinner party, it easily provides 16 entre size servings. Control the fat content by cutting as much fat of the ham or bacon as you can manage. If you're really serious, allow the soup to cool & skim oil off the surface. Tastes even better when reheated.

Steps:
- 1. In a very large saucepan (about 4 lts) over low heat, melt butter & saute onions & garlic.
- 2. Toss in all dried herbs, gently fry.
- 3. Remove meat from ham bone & roughly chop, toss meat & bone into pan.
- 4. When meat & onions just start turning brown, pour in hot water & stir well to remove all browning residue from bottom of pan.
- 5. Add celery & sweet potato.
- 6. Set temperature to gently boil & stir occasionally for about 2 - 3 hours.
- 7. Add ground black pepper.
- 8. Salt to taste (be careful, ham & bacon bones will vary in saltiness).
- 9. Add a little water if required to keep soup fluid but allow to thicken.
