There's nothing I'd rather serve for Easter dinner or another springtime occasion than succulent baked ham. My recipe features a rub that adds flavor to the meat plus a delicious cherry sauce with a hint of almond. - Lavonn Bormuth, Westerville, Ohio

1 fully cooked bone-in ham (6 to 8 pounds)
1 cup packed brown sugar
3 tablespoons maple syrup
1 teaspoon ground mustard
3 tablespoons cornstarch
1/2 cup sugar
1 cup cold water
1 can (15 ounces) pitted dark sweet cherries, undrained
2 tablespoons lemon juice
1 teaspoon almond extract

Steps:

  • Preheat oven to 325°. Place ham on a rack in a roasting pan. Using a sharp knife, score surface of ham with 1/4-in.-deep cuts in a diamond pattern. Mix brown sugar, syrup and mustard; rub over ham and press into cuts. Bake, covered, until a thermometer reads 140°, 1-3/4 to 2 hours., In a small saucepan, mix cornstarch, sugar and water until smooth. Add cherries; bring to a boil. Cook and stir until thickened, 1-2 minutes. Remove from heat; stir in lemon juice and almond extract. Serve warm with ham.

1 egg
1-1/2 cups soft bread crumbs
1/2 teaspoon ground mustard
1 pound ground fully cooked ham
1/2 pound ground pork
1/4 cup packed brown sugar
1 teaspoon prepared mustard
CHERRY SAUCE:
2 tablespoons cornstarch
1/2 cup sugar
1 can (16 ounces) pitted red cherries, undrained
Red food coloring, optional

Steps:

  • In a bowl, combine egg, bread crumbs and ground mustard. Add ham and pork; mix well. Shape into eight equal portions; pat lightly into 2-3/4-in. muffin cups. Combine brown sugar and prepared mustard; sprinkle over cups. Bake at 350° for 40 minutes or until no longer pink. , For sauce, combine cornstarch and sugar in a saucepan. Add cherries; cook and stir over medium-high heat until thickened and bubbly. Cook and stir 2 minutes longer. If desired, stir in 4-5 drops food coloring. Serve over ham cups.

2 lbs ham, Cooked, thinly sliced
2 tablespoons water
1 (16 ounce) can dark sweet cherries
1/8 teaspoon cinnamon
5 teaspoons cornstarch
1/8 teaspoon nutmeg
1/2 cup sugar
1/8 teaspoon allspice
2 tablespoons white vinegar
1/2 cup rose wine (optional)

Steps:

  • Place ham slices in baking dish.
  • Drain cherries and reserve syrup.
  • Combine cherry syrup in saucepan with cornstarch, sugar, vinegar, water and spices.
  • Cook over medium heat, stirring constantly, until thick and clear.
  • Add wine and cherries.
  • Pour over ham slices and bake at 350F 45 minutes.
