CHEESY HAM AND MUSHROOM STRATA
Make this ham-and-cremini strata even more flavorful with a little Parmesan and a lot of Swiss cheese.

Steps:
- Butter a 9-by-13-inch baking dish.
- Heat the oil in a large nonstick skillet over medium-high heat until hot. Add the mushrooms and cook, stirring occasionally, until golden brown, 6 to 8 minutes. Season with salt and pepper. Set aside.
- Whisk the half-and-half, Parmesan and eggs, 1 1/2 teaspoons salt and a few grinds of pepper together in a large bowl.
- Layer half of the bread cubes in the prepared baking dish. Sprinkle with 1 1/2 cups of the Swiss cheese, followed by the cooked mushrooms and the ham. Cover with the remaining bread cubes and pour the half-and-half mixture evenly over top. Cover with plastic wrap and refrigerate overnight. (This can also be assembled the day of; just let soak at room temperature 30 minutes to 1 hour before baking.)
- On the day of baking, preheat the oven to 325 degrees F.
- Let the strata sit at room temperature while the oven preheats. Remove the plastic and sprinkle with the remaining 1/2 cup Swiss cheese. Bake until slightly puffed and just no longer jiggly in the center, 40 to 50 minutes. Let stand 5 minutes before serving.

- Spray a 13x9-inch (3-quart) glass baking dish with the cooking spray. Peel and thinly slice the green onions; you will need about 1/2 cup. Trim crusts from the bread.
- Arrange 6 bread slices in baking dish. Layer the ham, cheese and onions on bread in dish. Cut remaining bread slices diagonally in half; arrange on onions.
- In a medium bowl, beat the eggs, milk, mustard and pepper sauce with a fork or wire whisk; pour evenly over bread. Cover with plastic wrap or foil and refrigerate up to 24 hours.
- Heat the oven to 300°F. Uncover strata and sprinkle with paprika. Bake uncovered 1 hour to 1 hour 10 minutes or until center is set and bread is golden brown. Let stand 10 minutes before cutting into serving pieces.

This hearty make-ahead breakfast is infused with Dijon mustard and bakes up to a fluffy, golden finish.

- Butter a 2 1/2- to 3-quart baking dish. In a large bowl, whisk together the eggs, milk, mustard, paprika, and salt.
- Place half of the bread in the bottom of a baking dish. Top with half each of the ham, scallions, and cheese. Repeat with a second layer of the remaining ham, scallions, and cheese, pressing down as necessary to fit in the baking pan.
- Carefully pour the egg mixture over into the bread. Cover and refrigerate overnight.
- Preheat the oven to 350 degrees Fahrenheit. Pull strata out of fridge and let come to room temperature for 15 minutes. Bake the strata, uncovered, until puffed and lightly golden brown, about 1 hour to 1 hour and 20 minutes. Let rest for 5 minutes before serving.
HAM AND CHEESE STRATA
Steps:
- In a small skillet over medium heat saute the diced onions for about 8 to 10 minutes or until soft. Remove from the heat and allow to cool.
- Butter a 9×13 baking dish. Set aside.
- In a large bowl combine the torn bread pieces or cut bread cubes, diced ham, and sauteed onions. Toss lightly just to help cool down the onions.
- Add the 1 1/2 cups of the shredded Gruyere and grated Romano. Toss to combine. You can add all the cheese to the mixture at this time, instead of reserving 1/2 cup to sprinkle over the top during baking.
- In another bowl whisk together the eggs, milk, heavy cream, chives, thyme, dry mustard, kosher salt, and pepper until combined.
- Pour the egg mixture over the bread mixture and gently fold all the ingredients together.
- Pour the mixture into the prepared baking dish, smooth the top, and wrap tightly in plastic wrap. Refrigerate overnight or at least 6 hours.
- Preheat the oven to 350 degrees F. Remove the plastic wrap and cover the baking dish with aluminum foil sprayed lightly with nonstick cooking spray.
- Remove the strata from the refrigerator for at least 30 minutes before placing it in the oven.
- Bake for 30 minutes covered, remove the foil and bake an additional 30 minutes, or until the strata is lightly browned, puffed up, and a knife inserted into the center comes out clean.
- Let cool for 15 minutes before serving.

This recipe comes from Food & Wine magazine (1997). The recipe is credited to Diana Sturgis. I don't usually add the sun dried tomatoes, but I included them since they were in the original recipe. We usually have this for dinner, but it could be a great brunch recipe as well. The left overs are fantastic served cold. This is a delicious use of left-over ham.

- Preheat the oven to 450 degrees.
- In a large bowl whisk together the eggs, milk, salt, and pepper.
- Stir in the bread cubes until evenly moist.
- Stir in the cheese, ham, tomatoes, and 1/4 cup of the chives.

This strata, from my favorite new casserole cookbook, can be rustic down home comfort food or dressed up for a sophisticated brunch dish. The gruyere cheese with the touch of pear, apple and raisins makes this traditional dish something special.

- Lightly butter 1 side of each bread slice using the 2 tablespoons of softened butter or omit this step if desired.
- Top 4 slices of bread, buttered side up, evenly with ham and place the other 4 slices of bread buttered side down on top of ham.
- Quarter each sandwich forming 4 triangles and place in a buttered 2-quart baking dish, arrange triangles pointed sides up.
- Sprinkle chopped onion, pear or apple, and cheese over triangles.
- In a medium bowl, add milk, eggs, mustard, Worcestershire sauce, and pepper. Whisk together and carefully pour over triangles in baking dish.
- Cover with plastic wrap and chill for at least two hours or overnight.
- In a 350 degree oven, bake covered for 20 minutes. Uncover and bake approximately 25 minutes longer or until puffed and golden brown and a knife inserted in the middle comes out clean. Prep and Cooking time does not include 2-24 hour chilling time.

Steps:
- Place 6 slices of the bread in a 13"x9" inch baking pan or dish.
- Top with 6 cheese slices, half of the onions, and half of the ham.
- Top with 6 slices of bread, 6 slices of cheese and remaining onions and ham.
- Top with 6 slices of bread.
- Combine eggs, milk and seasonings.
- Pour over the strata, cover with plastic wrap and refrigerate for 6 hours or overnight.
- Bake at 300° for 1 1/2 hours.
- Top each cheese stack with a tomato slice during the last 20 minutes in the oven.
