An easy cheesy dish that uses up that Christmas or Easter ham! My family looks forward to this one!

6 small potatoes, peeled and cubed
3 tablespoons butter
2 cups cubed fully cooked ham
1 small onion, finely chopped
¼ cup butter
3 tablespoons all-purpose flour
1 ½ cups milk
salt and ground black pepper to taste
1 (8 ounce) package shredded Cheddar cheese
¼ cup bread crumbs

Steps:

  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Grease a 1 1/2-quart baking dish.
  • Melt 3 tablespoons butter in a skillet over medium heat. Stir in the ham and onion; cook and stir until the onion has softened and turned translucent, about 5 minutes.
  • Stir potatoes into ham mixture; transfer to the prepared baking dish.
  • Melt 1/4 cup butter in a saucepan over medium heat. Stir flour into melted butter until smooth.
  • Gradually whisk milk into flour mixture; season with salt and black pepper. Continue cooking and stirring until thickened, about 2 minutes.
  • Reduce heat to medium-low and stir Cheddar cheese into the white sauce until melted.
  • Pour sauce over ham and potatoes.
  • Sprinkle bread crumbs atop casserole.
  • Bake in the preheated oven until sauce is bubbly and browned, 25 to 30 minutes.

1 package (16 ounces) frozen sliced carrots, thawed
1 can (10-3/4 ounces) condensed cream of potato soup, undiluted
1 package (10 ounces) frozen creamed spinach, thawed
1/4 cup water
1/4 teaspoon pepper
1/8 teaspoon salt
1 tube (4 ounces) refrigerated crescent rolls

Steps:

  • In a large skillet coated with cooking spray, cook ham over medium heat until lightly browned. Stir in the carrots, soup, spinach, water, pepper and salt; heat through. Pour into a greased 8-in. square baking dish., Unroll crescent dough; separate into 2 rectangles. Seal perforations. Cut each rectangle lengthwise into 4 strips; make a lattice crust. Bake at 375° until filling is bubbly and crust is golden brown, 18-22 minutes.

for boiling potatoes water
1½ lb preferably russets, peeled and cut into large chunks potatoes
3 tbsp heavy cream
3 tbsp at room temperature unsalted butter
1½ cup chopped ham
1½ cup spinach
2 tbsp vegetable oil
to taste salt and ground black pepper
10½ oz (1 can) cream of mushroom soup
1 cup shredded cheddar cheese
chopped parsley

Steps:

  • Preheat your oven to 350 degrees F and grease a baking dish.
  • Place potatoes into a pot and add enough water to cover the potatoes.
  • Boil the potatoes for about 25 minutes until tender.
  • While boiling the potatoes, heat up oil in a saute pan over medium heat.
  • Saute your ham and spinach briefly.
  • Season to taste with salt and pepper. Adjust accordingly and set aside.
  • When potatoes are tender, turn off the heat and drain the water from the pot.
  • Roughly mash the potatoes with a fork.
  • Then add in heavy cream, mushroom soup, and butter. Mix them well together.
  • Add in the ham and spinach. Season to taste with salt and pepper. Mix them well.
  • Transfer the potato mixture into your greased baking dish and add the shredded cheddar cheese on top.
  • Bake at 350 degrees F for about 20 to 30 minutes or until the cheese has melted evenly.
  • Serve while fresh and hot, garnished with parsley.

I got this recipe out of one of those checkout, small Betty Crocker cookbooks. I think it's delicious and a good way to use up leftover ham and mashed potatoes. The first 5 ingredients and instructions are there if you're going to make instant potatoes, but you can skip that and use leftover mashed potatoes instead.

1/4 cup margarine or 1/4 cup butter
1 teaspoon salt, if desired
1 cup milk
2 2/3 cups instant potatoes
1/4 cup finely chopped onion
1/8 teaspoon ground pepper
9 ounces frozen chopped spinach, thawed and well drained
8 ounces sour cream
3 ounces cream cheese, softened
2 eggs
3 cups cubed cooked ham
4 ounces shredded cheddar cheese

Steps:

  • Heat oven to 350 degrees. Butter 13x9 inch baking dish. If using instant potatoes, make, following directions above, otherwise, heat leftover mashed potatoes, so they are spreadable.Set aside. In medium bowl, combine onion,pepper,spinach,sour cream,cream cheese and eggs; mix well.Spread this mixture into bottom of buttered dish.Sprinkle ham over spinach mixture, top with hot mashed potatoes. Cover with foil, and bake at 350 for 35 to 40,minutes, or until mixture begins to bubble at the edges. Remove foil, sprinkle with cheese evenly over the top. Bake uncovered for an additional 3-5 minutes or until cheese is melted. Let stand 10 minutes before cutting into.

12 ounces ham, cubed (or sliced)
1 (32 ounce) bag frozen hash brown potatoes
1 (24 ounce) bag cheddar cheese
1 (10 ounce) package frozen creamed spinach
1 tablespoon spicy mustard
1 small onion
2 cups milk
3 tablespoons butter
3 tablespoons all-purpose flour
2 eggs, beaten
salt
pepper

Steps:

  • Using a skillet, melt your butter. Add the flour and the milk.
  • Cook until sauce thickens; remove from heat.
  • Add eggs, cheese, mustard, salt and pepper.
  • In another skillet, sauté the onion in some butter (I use about 1 tsp).
  • When onion is cooked, add the frozen creamed spinach (I microwave the spinach first for a couple of minutes to speed up the process).
  • In a casserole dish, layer half the ham, then half of the shredded potatoes and half of the cheese mixture.
  • Repeat until all is used.
  • Cover and bake at 350°F for about 46 minutes.
  • Sprinkle some parmesan cheese on top before serving.

1 package (24 ounces) frozen O'Brien potatoes
2 cups cubed fully cooked ham
3/4 cup shredded cheddar cheese, divided
1 small onion, chopped
2 cups sour cream
1 can (10-3/4 ounces) condensed cheddar cheese soup, undiluted
1 can (10-3/4 ounces) condensed cream of potato soup, undiluted
1/4 teaspoon pepper

Steps:

  • In a large bowl, combine potatoes, ham, 1/2 cup cheese and onion. In another bowl, combine sour cream, soups and pepper; add to potato mixture and mix well. , Transfer to a greased 3-qt. baking dish. Sprinkle with remaining cheese.
