- Lay out 4 slices of bread. Top with half the cheese, then half the ham. Layer the caramelized onions, apple slices and the remaining ham and cheese on top, then the remaining bread slices.
- Wipe out the skillet; melt 1 tablespoon butter over medium-low heat. Add 2 sandwiches and cook, pressing gently with a spatula, until the bottom is golden and the cheese begins to melt, about 4 minutes.
- Flip and cook until golden, about 4 more minutes. Repeat with the remaining butter and sandwiches.

Steps:
- Begin by getting your fry pan ready on the counter. Butter one side of the bread with 1/2 tbsp of butter. Place the bread butter side down in the fry pan.
- Take half of the broken up peices of cheese and place them on top of the bread, trying to cover all the available places on the bread.
- Take the ham and twist each peice loosely so it folds in a small mound. Continue to do this with each piece, stacking them next to each other to cover the top of the cheese.
- Take the remaining cheese pieces and top the ham with the cheese.
- Butter the top piece of bread with another 1/2 tbsp of butter and place it, butter side out, on top of the cheese.
- Place the fry pan onto the stove over medium heat/low heat.Take your time grilling the bread as if you brown the bread too quickly, the cheese will not be melted. Keep an eye on the bottom piece and when it's nicely toasted, carefully flip the sandwich to the other side.
- Placing a lid on the fry pan helps with melting the cheese slightly faster.
- When the other side is nicely grilled to golden brown, remove the sandwich onto a plate. Let it rest for a few minutes as the cheese will be LAVA hot!! Cut in half after the wait time is done, and enjoy!

- Prep. Slice or shred your cheese. Melt the butter and if you are going to add in garlic or smoked paprika, do it.
- Fire up. Setup the grill for direct cooking, but keep the temp medium on a gas grill or spread the coals out in one layer so they are not touching on a charcoal grill. You can use a griddle if you wish. In this case, crank it to high.
- Assemble. Distribute the cheese evenly on one slice of bread and lay the ham on top. Don't let things hang over the crust or the cheese will drip off and the ham will burn. Lay the other slice of bread on top and paint a thin layer of melted butter on it with a basting brush all the way to the edges. Make sure the edges are buttered so they don't burn.
- Cook. Clean the hot grill grates on your grill well. Get all the carbon off the surface. Use a good stiff brush, pomace stone, or a scraper. If you haven't got any of these, wad up some aluminum foil and scrub the grates. Put the sandwich on the grill, buttered side down. Press it down lightly. Paint the top side with butter now. Weight it down to make a panini if you wish or cover with a metal bowl or pan and close the grill lid. But don't go far. In about two minutes, sneak a peak at the bottom. Get the bread golden brown or as dark as you like it, but don't burn it. Flip and repeat. If the edges char a bit, scrape off the char with a light touch on a serrated steak knife. As an alternative, put the sandwich in a pie iron and put it over the hot part of the grill.

- Place the slice of ham on the other unbuttered bread of your sandwich. You can fold the slice of ham if they are peaking off the bread. This also gives some height and looks clean.
- After that add a layer of a cheese slice. You can use your favorite cheese, but I’m using cheddar cheese in this recipe.
