- Heat oven to 350°F. Oil a 2½- to 3-qt baking dish. In a large bowl, whisk together the eggs, milk, mustard, nutmeg and ¼ tsp each salt and pepper. Add the bread and let sit, tossing occasionally, for 5 minutes.
- Fold the onion, apple, ham and cheese into the bread mixture. Transfer to the prepared baking dish. Bake until set and a knife inserted in the center comes out clean (cover the bread pudding with foil if it browns too quickly), 45 to 50 minutes. Serve with salad, if desired.

- Pour 1/4 cup butter into a 13x9-in. baking dish; set aside. Spread both sides of bread with mustard. Arrange 9 slices in baking dish. , In a large skillet, saute the ham, mushrooms and garlic in remaining butter until mushrooms are tender. Add the onions; cook until crisp-tender, about 1 minute longer. Spoon over bread; sprinkle with cheese. Arrange remaining bread on top. In a large bowl, beat the eggs, cream, salt and pepper. Stir in parsley; pour over bread., Place dish in a larger roasting pan; add 1 in. of hot water to larger pan. Bake at 325° until a knife inserted in the center comes out clean, 50-60 minutes. Let stand for 5 minutes before serving. Drizzle with maple syrup if desired.

- Dice croissants into bite-sized pieces. Place half of the bread into a greased 9x13 baking dish. Add half of the diced ham and half of the cheddar cheese. Repeat with another layer.
- In a large bowl, whisk the eggs until well beaten. Add the remaining ingredients and whisk to combine. Pour over the bread slowly. With the back of a spatula, press down the bread pudding to help it absorb the custard.
- Preheat the oven to 325°. While oven is heating, let bread pudding sit on the counter for 20 minutes, this step is necessary so the bread has time to absorb the custard, keep pressing the top down with a spatula to help.
- Bake for 20 minutes, take the bread pudding out of the oven and sprinl=kle the parmesan cheese evenly on top. Turn up the oven to 375° and bake for an additional 20-25 minutes. The bread pudding will be golden brown and toasted on top. The sides should slightly pull away from the sides of the baking dish. Let cool, garnish with scallions, optional.
