This is adapted from Kitchen Geeking's Curried Ham and Vegetable Hash with Apple (http://www.kitchengeeking.com/2010/10/curried-ham-and-vegetable-hash-with.html). I've made very little adaptation to turn it from a side dish to a one-dish meal. The flavor is greatly affected by your choice of apples, ham, and curry powder. We...

Number Of Ingredients 12

2 Tbsp olive oil
2 medium thin-skinned potato, e.g. red skin potatoes
1 medium yellow onion
2 clove garlic
1/2 medium red bell pepper
6-8 oz ham, preferably smoked ham
1/2 tsp salt
1/2 tsp freshly ground pepper
1 tsp curry powder
1/4 c water
10-14 medium brussels sprouts
1 medium apple

Steps:

  • 1. Heat the olive oil, over medium heat, in a large skillet with lid. Keep the lid off until the water is added. Preparing the ingredients one at a time in the order given and adding them one at a time will provide the proper cooking times for the different ingredients.
  • 2. Leaving the skins on, wash and cut the potatoes into 1/4-inch dice. Add the potatoes to the hot oil.
  • 3. Peel and finely dice the onion and add to the pan, stirring them into the potatoes.
  • 4. Peel and mince the garlic and add to the pan, again stirring to mix.
  • 5. Wash and remove the seeds from the red bell pepper. Cut into 1/2-inch dice and add to the pan, again stirring the mixture.
  • 6. Wash and cut the apple into wedges. Remove the core and slice the wedges into thin slices. Add the apple to the pan and stir to mix.
  • 7. Dice the ham and add to the pan, stirring to combine. Allow this mixture to cook until the onions are translucent and the potatoes have started to brown.
  • 8. Add the salt, pepper, curry powder, and water. Stir to mix. Turn the heat to medium low. Cover the pan to steam while you prepare the brussels sprouts.
  • 9. Cut the hard stem end and discard any tough or blemished outer leaves from the brussels sprouts. Cut the sprouts into quarters, cutting especially large sprouts into sixths or eighths. Wash the brussels sprouts and add the wet sprouts to the pan.
  • 10. Mix the sprouts into the mixture, replace the cover, and steam until the sprouts are cooked but still firm. Test a sprout for doneness at 5 minutes.
  • 11. Serve hot.

20 Brussels sprouts, halved
1 cup cubed ham
1 cup sliced fresh mushrooms
3 finely chopped green onions (white portion only)
1 tablespoon grated Parmesan cheese
1 tablespoon grated Asiago cheese
½ cup sauerkraut, drained
½ cup olive oil
1 tablespoon fresh lemon juice
1 clove garlic, minced
2 teaspoons dried basil
ground black pepper to taste
1 tablespoon Italian-style bread crumbs

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Toss together the Brussels sprouts, ham, mushrooms, green onion, Parmesan cheese, Asiago Cheese, and sauerkraut in a large bowl until combined. Add the olive oil, lemon juice, garlic, basil, and pepper; toss until coated. Pour this mixture into a 2 quart baking dish and sprinkle with bread crumbs.
  • Bake in preheated oven until the Brussels sprouts are tender, about 45 minutes.

2 cups Brussels sprouts, halved
1 red apple, cut into 1-inch cubes
1 (4 ounce) package pancetta
2 tablespoons olive oil, divided
1 teaspoon minced fresh rosemary
6 skinless, boneless chicken thighs
salt and ground black pepper to taste

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Toss Brussels sprouts, apple, and pancetta with 1 tablespoon olive oil and rosemary in a bowl. Spread into a single layer on a sheet pan.
  • Leave space on the pan for the chicken thighs. Toss chicken with the remaining 1 tablespoon oil in the same bowl; place on the sheet pan. Sprinkle salt and pepper on top.
  • Bake in the preheated oven, stirring the Brussels sprouts mixture every 15 minutes, until chicken is no longer pink in the center and the juices run clear, 40 to 45 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

2 medium tart apples, cut into 1-inch chunks
1 small red onion, cut into wedges
2 tablespoons butter, melted
2 tablespoons vegetable oil
1 teaspoon sugar
1 teaspoon salt
1 teaspoon Italian seasoning
1/4 teaspoon pepper

Steps:

  • Place 1 in. of water in a large saucepan; add brussels sprouts. Bring to a boil. Reduce heat; cover and simmer for 5-6 minutes or until crisp-tender. Drain.
