This recipe came from Taste of Homes and it has become our favorite quiche recipe. The crust remains nice and dry and overall this recipe is a winner!

Steps:
- Place pastry shell in a non-greased 9 inch pie dish (use a deep pie dish if you have one) and place a double thick layer of heavy duty foil paper over it, covering it completely. Bake at 450 degrees for 8 minutes. Remove foil and bake 5 minutes longer. Cool on wire rack.
- Meanwhile, in a small saucepan boil water. Add the broccoli cover the pan and let cook for 2 minutes. Drain it, and place in ice water. Pat dry with paper towel.
- Toss cheeses with flour and set aside. In a bowl, beat eggs, add milk, onion and the seasonings mixing well. Stir the ham, broccoli and cheese mixture. Pour into the pre-baked crust.
- Bake at 350 degrees for 40-45 minutes or until knife inserted in the center comes out clean. Let cool for 10 minutes before cutting.

- Preheat oven to 350 degrees F (175 degrees C).
- Press the pie crust ito a 9-inch pie plate; set aside.
- Place broccoli in a glass bowl. Cover bowl with plastic wrap. Cook broccoli in microwave in 1-minute intervals until evenly heated through, about 5 minutes total; set aside.
- Melt butter in a large saucepan over medium heat. Saute onion and garlic in melted butter until slightly translucent, about 5 minutes.
- Stir ham and broccoli into the onion mixture and transfer to the pie crust.
- Beat Cheddar cheese, milk, eggs, and black pepper together in a bowl; pour over the ham mixture. Sprinkle paprika over the entire quiche.
- Bake in the preheated oven until a knife inserted into the center of the quiche comes out clean, 30 to 45 minutes.

- Preheat oven to 400 degrees F (200 degrees C). Remove pie crust from the refrigerator and allow it to come to room temperature, about 15 minutes.
- Unroll the unbaked crust and press it firmly without stretching into the bottom and sides of a glass pie plate. Prick the crust all over with a fork.
- Bake in the preheated oven until lightly browned, 11 to 13 minutes. Remove from oven and reduce temperature to 375 degrees F (190 degrees C).
- Place broccoli in a microwave-safe bowl and cook in the microwave to desired tenderness, 3 to 5 minutes.
- Layer ham, Swiss cheese, and broccoli in the crust-lined plate. Combine eggs, milk, dry mustard, salt, and black pepper in a bowl; pour over broccoli.

A friend who is low-carbing it gave me this recipe. I think she got it from a low-carb website; I'm not sure. Use your imagination to come up with filling ingredients - this is simply my favorite variation.

Steps:
- Heat olive oil in a medium sized heavy skillet.
- Saute green onions until soft and add the shredded ham and stir until slightly browned.
- In a large bowl, beat the eggs and heavy cream together by hand; stir in the onions& ham, broccoli,cheese and seasonings.
- Pour into a buttered deep-dish pie plate.
- Bake at 375degrees for 45-50 minutes, or until a knife inserted in the center comes out clean.
- NOTE: You will have to tent the quiche with aluminum foil to prevent over-browning.
- Start checking it halfway through the cooking time.
- Let stand 10 minutes and cut into wedges to serve.
CHEESY CRUSTLESS QUICHE WITH BROCCOLI AND HAM

- Prepare the oven and baking dish: Place a rack in the center of the oven. Preheat the oven to 375°F. Spray a 9-inch round ceramic baking dish or pie pan with vegetable oil. Have a baking sheet on hand.
