HAM AND BROCCOLI PIZZA WITH WHITE SAUCE
Turn your favorite Hot Pocket flavor into a glorious pizza complete with a white sauce base, sharp cheddar, broccoli and ham. Yay for family pizza night!

Steps:
- In a small saucepan, melt together the butter, cream cheese and milk. Once melted and beginning to steam, whisk in the parmesan, garlic powder, and pepper to combine. Allow to cool completely.
- Place your pizza stone on the bottom rack of the oven. Preheat the oven to 550ºF (or as hot as your oven will go).
- Dust your peel with corn meal, and dust the work surface with flour.
- Roll or press your pizza dough out into a 16-inch round. Transfer to the pizza peel.
- Distribute the white sauce all over the pizza crust.
- Cover the sauce with cheese, and then dress with broccoli and cheddar.
- Transfer the pizza from the peel to the preheated stone. Bake for 5 to 10 minutes, until the cheese is lightly browned and the crust is cooked through.
- Remove from the stone back onto the peel, and cut into 8 slices.
- Sprinkle on lemon zest and/or crushed red pepper as desired.
HAM FETTUCCINE ALFREDO
Leftover ham, diced and blended into homemade Alfredo sauce. This is a combination of a couple of recipes. I toss frozen broccoli into the hot water with the pasta when it's almost al dente. The kids loved it asked for seconds.

- Cook pasta according to directions, adding frozen broccoli at the end to heat through.
- Melt butter in a small skillet or sauce pan over low heat. Stir and blend in flour, to avoid lumps. When completely blended and a thick yellow paste add parsley and garlic seasoning and stir to blend. Cook over low heat 3-5 minutes. Stir in cream cheese until melted. Mixture may appear grain-y. Stir until smooth. Add 1/2 c milk and blend. Add remaining milk and Parmesan cheese and ham and keep warm over low heat until ready to serve. (You may need to add additional milk to obtain desired consistency.).
- Drain and pour pasta/broccoli mixture into a large bowl. Toss with pasta/ham mixture and top with pepper and additional Parmesan if desired.

Steps:
- Cook penne pasta in boiling water according to package directions. During the last 5 minutes of boiling, add the raw broccoli flowerets; drain.
- Place cubed ham into empty hot pot; pour cooked penne/broccoli mixture over top and gently toss together.
- While penne is cooking -- melt butter in a medium saucepan over med-low heat; add minced onion and saute until onions are translucent. Do not burn or brown.
- Keep heat on med-low and add half and half, milk, parmesan, salt, white pepper and garlic powder. Stir frequently until heated through, cheese is melted and smooth.
- Pour sauce over cooked penne mixture and gently toss to coat.
- Serve.

- Bring large of lightly salted water to boiling.
- Add pasta; cook 12 minutes or until firm but tender.
- Add peas for last 3 minutes of cooking.
- Reserve 1/2 cup of pasta cooking water; drain water.
- Meanwhile, shake together flour and milk in jar with tight-fitting lid until blended.
- Heat butter in saucepan over medium heat.
- Add garlic, saute 1 minute.
- Whisk in milk mixture.
- Simmer 3 minutes.
- Whisk in cream cheese, 2 tablespoons parmesan, salt and pepper.
- Simmer, whisking, 2 minutes.
- Remove from heat.
- Toss together pasta, peas or broccoli, sauce and ham in large bowl.
- Add 1/4 to 1/2 cup of reserved pasta water, tossing to make creamy sauce.
- Top with remaining parmesan.
- Serve hot.
