Provided by Pressure Cooking Today / Barbara Bakes LLC

Categories     Soup

Time 1h40m

Number Of Ingredients 14

1 package (20 ounce) Hurst's HamBeens 15 Bean Soup with seasoning packet
2 tablespoons vegetable oil
1 cup chopped onion
1/2 cup diced celery
2 cloves garlic, minced
2 quarts water
1 ham bone, optional*
1 can (15 ounces) crushed tomatoes in puree
1/2 cup diced carrots
1 teaspoon chili powder
2 cups roughly chopped spinach
1 cup diced ham, optional
1 tablespoon lemon juice
Salt and freshly ground black pepper to taste

Steps:

  • Add the garlic and sauté for 1 minute more.
  • Add the rinsed beans, 2 quarts water, and ham bone.
  • Lock the lid in place. Select High Pressure and 1 minute cook time. When the cook time ends, turn off the pressure cooker. Let the beans soak for 1 hour without releasing the pressure. (Alternatively, if you don't want to use the quick soak method, you can cook the beans on high pressure for 35 minutes with a 10 minute natural release.**)
  • After 1 hour, stir in tomatoes, carrots, chili powder, and seasoning packet. Lock the lid in place. Select High Pressure and 3 minutes cook time.
  • When the cook time ends, turn off the pressure cooker. Let the pressure release naturally for 10 minutes and finish with a quick pressure release.
  • When the valve drops, carefully remove the lid. Remove the ham bone. Stir in the spinach, ham, and lemon juice. Season with salt and pepper to taste.

Time 1h40m

Yield 10

Number Of Ingredients 12

1 tablespoon olive oil
2 carrot, shredded
1 onion, chopped
2 stalks celery, chopped
2 tablespoons minced garlic
6 cups chicken broth
1 (24 ounce) package dried navy beans (such as Hurst's®)
1 teaspoon paprika
1 teaspoon ground thyme

salt and freshly ground pepper to taste

Steps:

Mom's Best Ham and Bean Soup image

It's a long list of ingredients... but sooo good. My mother made the best Ham and Bean Soup, my recipe is AS CLOSE to hers as I can remember; today my own family and friends love this soup. Oh, my hubby insists this soup alone would be worth another proposal!

Provided by Sharon Hill

Categories     Soups, Stews and Chili Recipes     Soup Recipes     Beans and Peas

Time 2h50m

Yield 12

Number Of Ingredients 22

1 cup dry navy beans
3 cups water
3 cups water
1 large meaty smoked ham bone
6 tablespoons chopped fresh parsley
2 whole bay leaves
3 tablespoons dried minced onion flakes
1 tablespoon minced fresh garlic
½ teaspoon dried thyme leaves
½ teaspoon dry mustard powder
½ teaspoon chili powder
½ teaspoon paprika
5 cups water
1 cup sliced celery

  • Place dry beans and 3 cups of water in a saucepan. Bring to a boil, cover, remove from heat, and allow to stand for 1 hour. Drain and rinse beans.
  • Place 3 more cups fresh water into a large pressure cooker. Add the soaked beans and ham bone, and stir in parsley, bay leaves, dried onion flakes, garlic, thyme, dry mustard, chili powder, and paprika. Seal the pressure cooker, and heat to 15 pounds per square inch. Cook under pressure for 7 minutes; add 1 minute for every 1,000 feet above sea level. Remove from heat, and allow pressure to subside naturally.
  • When pressure has reduced, open the lid of the cooker. Stir in 5 more cups of water, celery, olive oil, tomato puree, ketchup, chicken soup base, molasses, brown sugar, and cracked black pepper. Bring to a boil, reduce heat to low, and simmer the soup until the beans are tender, about 45 minutes. Stir in shell pasta, and simmer until the pasta is tender, about 15 more minutes.

HAM BEAN SOUP (PRESSURE COOKER)

Ham Bean Soup (Pressure Cooker) image

This is a quicker version of my Recipe #145910. The only real difference between this and the long simmering version is that you don't have to remember to soak the beans overnight, and the beans retain more texture. My dad loves the original recipe, and he declared this to be just as good.

Categories     Ham

Time 1h35m

Yield 10 serving(s)

Number Of Ingredients 7

1 (16 ounce) bag 15 bean soup mix, seasoning packet discarded
1 tablespoon dried onion flakes
1 teaspoon garlic powder
fresh ground black pepper
1 medium ham bone
1 (15 ounce) can diced tomatoes
2 cups cooked ham, cubed

Steps:

  • Put the ham bone in the bottom of the pressure cooker (I normally have to break mine into pieces so it will fit).
  • Pour the dried beans on top of the bone, and cover with cold water (don't fill your cooker more than 2/3 full). Sprinkle on the dried onion, garlic powder, and pepper.
  • Lock on the lid, bring to pressure, then reduce the heat and cook for 25 minutes.
  • Remove from the heat, and let sit for 15 minutes, before carefully removing any remaining pressure.
  • Remove the lid, pour in the can of tomatoes including their juice, and the ham pieces. Simmer for 20 minutes.

PRESSURE COOKER NAVY BEAN SOUP WITH HAM

Pressure cooker navy bean soup with ham image

The taste of this bean soup is unusual... and quite pleasing! The combination of basil, nutmeg and oregano gives it a tasty punch.

Provided by Jan Mullikin

Categories     Bean Soups

Time 3h25m

Number Of Ingredients 9

1 16 oz. bag navy beans, dried
1 cottage ham butt
1 c chopped onions
1 c chopped celery
1/4 tsp pepper
1 tsp nutmeg
1 tsp oregano
1 tsp basil
1 tsp salt

Steps:

  • 1. Rinse and drain navy beans, watching and throwing out any small pebbles. Put in pressure cooker in 3 inches of water, without the lid. Bring to a boil and boil 5 minutes. Remove from burner. Put all in a separate pot for about 2 hours. Then drain beans and add fresh water.
  • 2. While you are waiting for the beans to soften, pressure cook cottage ham butt according to size and directions on the label. Cool. Shred ham, removing the fat. Set aside.
  • 3. Return beans to the pressure cooker with the fresh water, chopped onions, celery and shredded ham. Pressure cook about 20 minutes on full heat. Remove from stove, reduce pressure under cold water and open lid. Add salt, pepper, oregano, basil and bring to a boil. Should be ready to eat. If your beans are still too hard, pressure cook a little longer. You'll get used to your cooker and how long it takes depending on your stove top type. Best served with homemade baked cornbread (not sweet!) or fried cornbread patties.
  • 4. This soup freezes beautifully. Just put desired serving size in freezer quart or gallon bags and freeze. Great to have on hand for a quick lunch or light supper on a cold winter day!

  • Rinse beans; drain. In a 6-qt. electric cooker use the sauté setting to cook pork hocks in oil until browned. For stove-top cooker, cook hocks directly in the pot. Add beans and next nine ingredients (through pepper), increasing water to 5 cups. Lock lid in place. Set electric cooker on high pressure to cook 40 minutes. For stove-top cooker, bring up to pressure over medium-high heat; reduce heat enough to maintain steady (but not excessive) pressure. Cook 40 minutes. Remove from heat. For both models, let stand 15 minutes to release pressure naturally. Release any remaining pressure. Open lid carefully.
  • Remove pork hocks and cool slightly. Remove and discard bay leaf. If desired, mash beans slightly. When hocks are cool enough to handle, cut meat off bones and chop; discard bones. Stir meat and kale into soup. Set electric cooker on sauté setting or place stove-top cooker over medium heat; cook just until wilted. Season to taste. Season to taste with salt and additional pepper.
  • To Freeze: Prepare as directed except do not add the kale. Cool soup and transfer to freezer bags. Freeze for up to 2 months. Thaw overnight in the refrigerator. Stir in kale and reheat.

  • Heat the butter in the pressure cooker pot over medium-high heat until it stops foaming. Add the onion, garlic, and 1/2 teaspoon salt. Saute until the onions are softened and browning around the edges, about 8 minutes.
  • Drain the navy beans, rinse, and add to the pressure cooker. Set the ham hocks on top of the beans, then pour the water over everything. Lock the lid on the pressure cooker, and cook at high pressure for 30 minutes in an electric PC, or 26 minutes in a stovetop PC. Let the pressure release naturally, about 20 minutes. Remove the lid carefully, opening away from you – even when it’s not under pressure, the steam in the cooker is very hot.
  • Remove the ham hock from the pot with a slotted spoon or tongs, and set aside to cool. Ladle 2 cups of beans into a blender and puree the beans, then stir back into the pot. (I use my stick blender for this step.) When the ham is cool enough to handle, shred it, then stir the ham back into the pot. Stir in the fresh ground black pepper. Now, taste the soup, and add salt until the soup tastes sweet and full of body, and you can just feel the taste of salt on the tip of your tongue. (I needed 2 teaspoons of kosher salt to get the taste I wanted.) Serve with a sprinkle of minced parsley on each bowl.
