2 pounds thinly sliced deli ham
1 cup water
1 cup ketchup
1/4 cup packed brown sugar
1/4 cup Worcestershire sauce
2 tablespoons white vinegar
2 teaspoons prepared mustard
12 hamburger buns, split and toasted

Steps:

  • Place ham in a greased 3-qt. slow cooker. In a large bowl, combine water, ketchup, brown sugar, Worcestershire sauce, vinegar and mustard; pour over ham and stir well. Cover and cook on low until heated through, 4-5 hours. Serve on buns.

1 cup ketchup
1 cup water
1 tablespoon brown sugar
1 tablespoon cider vinegar
¼ cup sweet pickle relish
1 tablespoon Worcestershire sauce
¼ teaspoon ground cinnamon
1 pinch ground black pepper
1 pinch garlic salt
½ teaspoon liquid smoke flavoring
1 pound chipped ham
6 hamburger buns

Steps:

  • In a large saucepan, combine the ketchup, water, brown sugar, cider vinegar, sweet pickle relish and Worcestershire sauce. Season with cinnamon, black pepper, garlic salt and liquid smoke. Bring to a simmer over low heat and simmer for 20 minutes.
  • Shred the ham and stir into the mixture. Simmer longer if desired, then serve hot on hamburger buns. The mixture can also be frozen.

1 pound of Chipped Chopped Ham
1/4 cup Brown Sugar
1.5 cup Ketchup (Heinz is best)
1/4 cup Apple Cider Vinegar
1 tablespoon Worchestershire sauce
1 tablespoon yellow mustard
salt and pepper to taste
1 tablespoon onion powder

Steps:

  • Make a bbq sauce by combining the brown sugar, ketchup, vinegar, Worchestershire sauce, salt, pepper, mustard, and onion powder together in a large bowl.
  • Stir the chipped chopped ham in with the sauce.
  • Heat the ham and barbecue sauce on the stove in a large skillet or pan at medium heat until warmed through about 15-20 minutes.
  • Keep warm in a slow cooker until ready to serve.
  • Serve on Kaiser rolls.

Perfectly sweet and sour ham sandwiches, ready in 10 minutes! How can you go wrong?

3/4 cup water
1 cup ketchup
1/4 cup brown sugar
1/4 cup worcestershire sauce
2 tablespoons white vinegar
1 teaspoon prepared mustard
1-2 tablespoons corn starch prepared with equal parts water (as needed)
1 1/2 lbs shaved deli ham

Steps:

  • Combine water through mustard in a large pan over high heat. Bring to a boil and then reduce to a simmer over medium heat. Simmer 3-4 minutes to bring flavours together.
  • Stir in corn starch and water mixture until you reach desired thickness.
  • Add ham and heat through, 3-4 minutes.
  • Serve on your favourite bun or roll.

These make a great, easy meal. They're also great to make/take for large gatherings; you can put the ham barbecue in a crock pot to keep warm. I sometimes put a slice of cheese on them before serving.

3 lbs chipped deli ham
3 cups ketchup
1/4 cup cider vinegar
2 tablespoons mustard
2 tablespoons Worcestershire sauce
3 tablespoons packed brown sugar
2 garlic cloves, minced
2 tablespoons minced onions
16 kaiser rolls or 16 hamburger buns, split

Steps:

  • In a large saucepan over medium heat, combine ketchup, vinegar, mustard, Worcestershire sauce, brown sugar, garlic and onion. Stir until smooth. Cook over medium heat until mixture comes to a boil.
  • Reduce heat to low and add ham. Stir and cook until heated through.
  • Serve warm on split kaiser/hamburger buns.

I grew up on these delicious, sweet, and tangy barbecue sandwiches made from chipped deli ham. This dish is a staple in Western Pennsylvania, although each family seems to have its own way of making them! It's a terrific last-minute meal. Chipped chopped ham is a pressed ham loaf sold at deli counters in the Pittsburgh area which is always chipped. If you can get Islay's Chipped Ham, that is the original and still the best for these sandwiches. Otherwise, just get any deli ham and have it chipped or shaved paper thin. Enjoy!

½ cup butter
1 small onion, finely chopped
2 cups ketchup
⅓ cup distilled white vinegar
½ cup water
3 tablespoons brown sugar
2 teaspoons prepared yellow mustard

8 kaiser rolls, split
1 cup pickle relish

Steps:

  • Preheat an oven to 275 degrees F (135 degrees C).
  • Melt the butter in a large skillet over medium-high heat; cook and stir the onions in the butter until translucent, about 5 minutes. Stir the ketchup, vinegar, water, brown sugar, mustard, and Worcestershire sauce into the skillet with the onions; simmer about 10 minutes. Stir in the ham; cook until heated through and the sauce is bubbling, 5 to 7 minutes more.
  • While the ham simmers, heat the kaiser rolls in the preheated oven until toasted, 5 to 7 minutes.
  • Assemble the sandwiches by dividing the ham mixture among the toasted kaiser rolls, topping the ham with pickle relish. Serve hot.

There are various versions of this recipe on zaar, but this one is my favorite. The key ingredient is the chili sauce, preferably Heinz. In Pittsburgh, Isaly's "chipped chopped" ham is the brand of choice but it is hard to find outside of western Pennsylvania. The best alternative is to have the butcher slice the ham very thin (almost like shaving it), and then chop all those slices coarsely. These sandwiches are a hot and sweet treat with a little spice and a Pittsburgh favorite. I got it from a local Pittsburgh cookbook.

1/2 cup onion, diced
1 tablespoon light brown sugar
1 teaspoon Dijon mustard
1/2 teaspoon chili powder
1 tablespoon sweet relish
1 (12 ounce) jar chili sauce
1/2 cup water
hamburger bun

Steps:

  • Run the ham under hot water in a colander for about 30 seconds to get some of the salt out of the ham, but not too long.
  • In saucepan, mix all ingredients, making sure the ham is well coated.
  • Cook for about 20 minutes.
  • Serve on hamburger buns that have been buttered and toasted.

  • In a large saucepan, combine the first 8 ingredients; if desired, stir in liquid smoke. Bring to a boil over medium-high heat. Reduce heat; simmer, uncovered, 5 minutes, stirring occasionally., Place ham in a 5- or 6-qt. slow cooker. Add sauce; stir gently to combine. Cook, covered, on low 2-3 hours or until heated through. Serve on rolls. Top with pepperoncini if desired.

Chipped Ham (aka Chip Chop Ham, Chipped Chopped Ham, Chip Chopped Ham) is deli chopped ham thinly shaved ("chipped") and combined with a tangy BBQ sauce and heated through in the slow cooker or on the stove top, then piled high onto fresh buns for a warm and satisfying sandwich like no other.

2 pounds chopped ham (thinly shaved)
BBQ sauce (Isaly's or recipe below)
10 - 12 buns
1 TBSP unsalted butter
1 TBSP all purpose flour
1/2 cup water
1/4 cup white vinegar (can use apple cider vinegar)
1 cup ketchup
3 TBSP brown sugar
1 TBSP Worcestershire sauce

Steps:

  • If making your own BBQ sauce, prepare that first. In medium to large sauce pan on medium heat, melt 1 TBSP unsalted butter. Sprinkle on 1 TBSP all purpose flour and cook, stirring constantly, for one minute. Add 1/2 cup water, 1/4 cup white vinegar, 1 cup ketchup, 3 TBSP brown sugar, and 1 TBSP Worcestershire sauce to flour mixture and stir constantly on medium heat until mixture thickens. It should still be somewhat thin, but thicker than water. At this point, you can take off heat and store in refrigerator until ready to use it, add in the ham (if making this dish in a pan vs a slow cooker), or add it to the slow cooker.
  • If preparing chipped ham in a pan, add the ham to the BBQ sauce and stir to combine. Continue to heat until heated through.
  • If preparing chipped ham in a slow cooker, combine the homemade BBQ sauce or the jarred BBQ sauce with the ham. Heat on LOW for about 1 1/2 hours, or HIGH for about an hour, stirring occasionally until heated through. (May heat quicker depending on whether the BBQ sauce is hot or not when combining).
  • Serve on warm, on buns.
