1/2 cup dry breadcrumbs
1/4 cup finely chopped green onion
1/2 teaspoon garlic powder (optional)
3 teaspoons dried dill weed, divided (or 3 tablespoons fresh dill, finely chopped)
1/4 cup milk or 1/4 cup half-and-half
1 egg, lightly beaten
1 teaspoon Dijon mustard
fresh ground black pepper (to taste)
1 lb fully-cooked ground ham
1 -2 tablespoon butter
1 -2 tablespoon oil
2 tablespoons flour
1 cup water
1 cup sour cream

Steps:

  • In a bowl, combine the breadcrumbs, onions, garlic powder, 1 tbsp fresh dill (or 1 tsp dried dill) milk, egg, mustard and black pepper to taste.
  • Add chopped ham; mix well.
  • Shape into 1-inch balls.
  • In a large skillet, heat 1 tbsp oil with 1 tbsp butter.
  • Brown the ham balls, adding remaining butter and oil as needed.
  • Remove to a serving dish; cover and keep warm.
  • Drain the drippings into a saucepan; blend in the flour until smooth.
  • Gradually add water.
  • Cook over low heat; stirring constantly, until mixture thickens.
  • Add sour cream and remaining dill and pepper; heat through (do not boil).
  • Pour over the ham balls.
  • Serve over noodles.

Ham Balls are a classic midwestern meatball recipe. Ground ham and ground beef are mixed together with graham crackers and topped with a tomato brown sugar sauce.

Number Of Ingredients 9

1 lb ground ham (see note about finding and/or making ground ham**)
1 lb ground beef
1 cup graham cracker crumbs (finely ground)
1 egg
3/4 cup milk
1 10 3/4 oz. can condensed tomato soup
1 cup brown sugar
1/2 cup white vinegar
1 tsp dry mustard

Steps:

  • Preheat the oven to 350°
  • Combine the meatball ingredients. In a large bowl lightly combine the 1 lb ground ham, 1 lb ground beef, 1 cup graham cracker crumbs, 3/4 cup milk, and 1 egg. Make large meatballs. Form the mixture into large meatballs, about 1/3 cup in size each. Place into a 9x13 baking dish. You will have about 12-15 meatballs.
  • Whisk together the sauce ingredients & pour over meatballs. In another bowl whisk together the can of condensed tomato soup, 1 cup brown sugar, 1/2 cup white vinegar, and 1 tsp dry mustard. Pour the sauce over the meatballs.
  • Bake 1 hour. Bake in the oven, uncovered, for 1 hour, basting the tops of the ham balls with the sauce once or twice during cooking.
  • Cool & eat! Let the meatballs cool for about 5-10 minutes and then serve with mashed or baked potatoes and veggies.

(I was given this recipe a few years ago). It is one everyone will ask for. I took it once to a Birthday Party and was asked for the recipe by at least 5 people including the host. These can be served for dinner on rice or taken to parties and kept warm in a crockpot until serving. They can also be made ahead of time and frozen.

Number Of Ingredients 12

1 lb ground ham (if needed you can get a ham steak or chunk at the deli counter to grind)
1 lb ground pork
2/3 cup crushed cracker crumb
1/2-3/4 cup milk
1 green pepper, very finely chopped
2 eggs
1 medium onion, very finely chopped
1 1/2 cups brown sugar
3/4 cup catsup
1 teaspoon dry mustard
1/2 cup molasses
1 teaspoon Worcestershire sauce

Steps:

  • (3 batches of sauce is best when filling a crockpot with a double batch of balls) Ham Balls: Mix all together, gradually adding milk at the end to moisten enough to form balls.
  • Bake balls on a cookie sheet for 20 minutes at 350 degrees, drain fat and cool.
  • Sauce: Mix togther, heat and simmer 10 minutes until well blended.

This is my newest, favorite meatball recipe. If you like a sweet twist, you'll like this one. The meatballs will be slightly pink inside when done because of the pork, so do not overbake them!

1 ¼ pounds ground smoked ham
1 pound ground pork
1 pound lean ground beef
1 cup milk
2 eggs
1 ½ cups graham cracker crumbs
1 (10.75 ounce) can tomato soup
¼ cup cider vinegar
1 cup packed brown sugar
1 teaspoon mustard powder

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine the ham, pork OR sausage, and the ground beef. Stir in the milk, eggs and graham cracker crumbs and mix well. Form into large balls about 2 inches in diameter and place them in a 9x13 inch baking dish.
  • In a separate medium bowl, combine the soup, vinegar, brown sugar and mustard powder. Mix well and pour over the meatballs.
  • Bake at 350 degrees for 1 hour or until internal meat temperature reaches 160 degrees F (73 degrees C).

This is a special recipe my whole family likes. Every time they visit and I make Ham Balls, they're all smiles. When I take this to potluck meals, I'm always asked to share the recipe. It's very appropriate for my region, too, since Iowa farmers raise prize-winning pigs and cattle.

1-1/2 pounds ground beef
3 large eggs, beaten
2 cups whole milk
3 cups graham cracker crumbs
2 cans (10-3/4 ounces each) tomato soup, undiluted
3/4 cup vinegar
2-1/2 cups packed brown sugar
1 teaspoon prepared mustard

Steps:

  • In a large bowl, combine first five ingredients. Using a 1/3 cup measure, shape mixture into 2-in. balls. Place in two large shallow roasting pans. Combine all remaining ingredients; pour over balls. Bake at 325° for 1 hour, basting frequently with sauce.

1 large egg beaten
1 cup graham cracker crumbs
1/2 cup milk
Salt and pepper to taste

1 1/2 cup ketchup
1 cup brown sugar
1 teaspoon mustard
1/2 cup apple cider vinegar

Steps:

  • Preheat the oven to 350 degrees. Grind your ham up in the food processor. In a large bowl add the ham, pork, beaten egg, graham cracker crumbs, milk, salt, pepper, and parsley. Combine all the ingredients together.
  • Take about two tablespoons out and roll into a ball with your hands. Place into a greased 9x13 baking sheet. Bake for 50-60 minutes or until golden and cooked through.
  • While the ham balls are baking, in a medium-sized pot over medium heat whisk together the ketchup, sugar, mustard, and vinegar. After 2 minutes reduce to a simmer. The last 5 mins of the balls baking, for the sauce over the entire thing. Serve warm.

1 pound fully cooked ham, cubed
1 pound ground pork
1 cup 2% milk
1 cup crushed cornflakes
1 large egg, lightly beaten
1/4 cup packed brown sugar
1 tablespoon ground mustard
1/2 teaspoon salt
GLAZE:
1 cup packed brown sugar
1/4 cup vinegar
1 tablespoon ground mustard

Steps:

  • Preheat oven to 350°. Pulse ham in batches in a food processor until finely ground. Combine with the next 7 ingredients just until mixed. Shape into 1-in. balls; place in a single layer on greased 15x10x1-in. baking pans., For glaze, cook and stir all ingredients in a small saucepan over medium heat until sugar is dissolved. Spoon over ham balls. Bake until ham balls are just beginning to brown, 30-35 minutes, rotating pans and carefully stirring halfway through. Gently toss in glaze. Serve warm.
