1 lb asparagus, about 15 spears,trimmed
ground black pepper, to taste

Steps:

  • Preheat oven to 350°F.
  • Flatten and dry the ham slices.
  • Stack ham in piles of 2 slices each; spread each stack with 1 tsp of cream cheese.
  • Sprinkle with freshly ground black pepper.
  • Place 1 asparagus spear on one of the long sides of each ham stack; roll up.
  • Place in 13x9-inch baking dish.
  • Bake for 15 to 20 minutes or until heated through.
  • NOTE: You can make this ahead, just assemble as directed, cover tightly with plastic wrap and foil.
  • Refrigerate overnight or until ready to use.
  • Uncover and bake as directed.

1 package (10.6 ounces) refrigerated Italian breadsticks and garlic spread

Steps:

  • In a large skillet, bring 1/2 in. of water to a boil; add asparagus. Reduce heat; cover and simmer for 2 minutes. Drain and immediately place asparagus in ice water; drain and pat dry. , Wrap a slice of ham around each asparagus spear. Unroll breadstick dough; spread with garlic spread. Cut each breadstick in half lengthwise. Wrap one piece of dough, garlic spread side in, around each ham-wrapped asparagus spear. , Place on an ungreased baking sheet. Bake at 375° for 13-15 minutes or until golden brown. Serve immediately.

  • Preheat oven to 425 degrees F (220 degrees C). Lightly grease a 9x13 inch baking dish.
  • Mix the ham, onion, red bell peppers, and asparagus in the prepared baking dish. In a large bowl, beat together the eggs, milk, flour, Parmesan, tarragon, salt, and pepper. Pour over the ham mixture.

Steps:

  • Heat oven to 375°F. Line large cookie sheet with cooking parchment paper, or spray with cooking spray.
  • Remove woody ends from asparagus spears; discard. In 10-inch skillet, heat 1/2 inch water to boiling. Add asparagus; reduce heat to medium-low. Cover; simmer 2 to 3 minutes or until crisp-tender. Drain. Plunge asparagus into bowl of ice water to cool; drain on paper towels.
  • Cut ham slices in half; wrap one half slice around middle of 3 asparagus spears. Repeat for remaining ham and asparagus spears.
  • On large cutting board, unroll dough; separate dough into 8 triangles. Crumble and press a generous tablespoon Boursin™ cheese onto bottom wide end of dough. 1 carton (8 ounces) spreadable chive-and-onion cream cheese

Steps:

  • Place asparagus in a skillet; add 1/2 in. of water. Bring to a boil. Reduced heat; cover and simmer for 3-5 minutes or until crisp-tender. Someone e-mailed me this recipe. I've altered it very slightly. My husband and I both love it and we even got our 10 year old son to eat some, too....It looks like a lot of work, but it's really not. It's fairly simple to make.

16 stalks asparagus
4 chicken breasts (with skin)
1/4 cup of loosely packed fresh tarragon leaf (I substituted with dried taragon)
8 slices ham (It doesn't matter how large in diameter the ham is...I just use what ham I prefer)
1 tablespoon of melted butter
1/4 teaspoon salt
2/3 cup chicken stock or 2/3 cup chicken broth
1/3 cup dry white wine or 1/3 cup cooking wine
3 egg yolks
2 tablespoons lemon juice
1/2 teaspoon cornstarch
1/4 teaspoon white pepper or 1/8 teaspoon black pepper (I used 1/8 tsp black pepper)
1 tablespoon of freshed chopped tarragon (I substituted with dired taragon)

Steps:

  • Snap off about one inch of the blunt ends of the asparagus.
  • Add salt and asparagus to boiling water and blanch until the asparagus is slightly greener but is still crisp- about 2 minutes.
  • Drain Asparagus, cool asparagus with cold water and drain asparagus again.
  • De-bone Chicken breasts and leave the skin on.
  • Place individual chicken breasts (skin side down) between plastic wrap and flatten.
  • I pounded my chicken with a cast iron skillet-- this did the trick.
  • Flatten chicken to about a 1/4 inch.
  • Loosen skin from chicken and put 1/4 of the taragon between the skin and meat.
  • Turn chicken over and place two pieces of ham over the meat.
  • Put 4 asparagus spears on top of the ham on one side of the chicken and roll chicken into a roll (around the asparagus).
  • The skin of the chicken should be on the outside of the roll.
  • Secure the roll with toothpicks.
  • Place in a lasagna pan seam side down.
  • Brush with the melted butter and sprinkle with salt.
  • Pour in the chicken stock and the wine.
  • Do not cover the chicken- place in the oven and cook at 375 degrees for approximately 30 minutes or until chicken is no longer pink in the center.
  • Once cooked, broil for an additional 3 or 4 minutes until the skin is brown and crisp.
  • Move the chicken to another dish and set aside in a warm spot.
  • Pour juices from baking dish into a measuring cup and skim off the fat.
  • If you need to, add more chicken broth to make 3/4 of a cup.
  • Pour into a small saucepan.
  • Bring to a boil.
  • Meanwhile, (in a heatproof bowl) combine lemon juice, corn starch, egg yolks, and pepper- wisk.
  • Slowly wisk in boiling juices.
  • Return mixture to saucepan, cook over medium heat, stirring constantly without boiling.
  • Cook until thick enough to cover a spoon- around 3 or so minutes.
  • Serve sauce with chicken.

36 fresh asparagus spears

1 1/4 cups sour cream
1/3 cup milk
2 cups shredded kraft Italian cheese blend (8 oz. package)

1 (4 1/2 ounce) jar Green Giant sliced mushrooms, drained
1 teaspoon instant minced onion
fresh coarse ground black pepper, to taste
1 1/2 cups raw asparagus, cut into 1-inch pieces
3 cups uncooked wide or dumpling egg noodles
1 1/2-2 cups finely crushed ruffles potato chips

Steps:

  • In large bowl, mix together well the first 4 ingredients.
  • Gently fold in rest of ingredients except noodles and potato chips.
  • Cook noodles 1 minute less than shortest time on directions. *I cooked mine for 6 minutes.
  • Fold in noodles.

1 c onion and chive cream cheese
8 slice boiled ham, sliced
8 asparagus, fresh
2 Tbsp butter
3/4 tsp garlic powder

Steps:

  • 1. Pre-heat oven 375 degrees. Unroll dough and seperate into 4 retangular shapes. Spread onion and chive cream cheese evenly on dough. Top cream cheese with 2 slices of ham so that they cover the rectangle without overhanging.
  • 2. Steam 8 pieces of Asparagus 3-5 min. Place 2 pieces on each rectangle long way. Start at asparagus roll and seal.
  • 3. Cut each log into 7 pieces. Mix 2 tablespoons mealted butter with garlic powder and baste top of each spiral.
  • 4. Cook 10-12 min. at 375 degrees. Cool for 10 min. before eating.

16 thin slices of sweet red pepper
4 tablespoons of Honey Dijon Mustard
16 slices of black forest ham
16 slices of Swiss Cheese
2 eggs, beaten lightly
2 cups of bread crumbs

Steps:

  • In a deep pan add abit of water and cook asparagus until tender (6-8 minutes). Drain well. Spread 1 tsp on dijon mustard on each slife of ham Top ham with one slife of Swiss Cheese Place an asparagus spear and a thin slice of sweet red pepper at one end of ham and cheese slice. Roll up slice tightly and secure with a toothpick. Dip ham, cheese and asparagus roll in beaten egg, then roll in bread crumbs. In a frying pan heat 1 inch of oil and fry the rolls a few at a time until golden brown (about 3-4 minutes). Drain on paper towels. Cut each roll between the toothpicks so you have 3 pieces with each roll.

Steps:

  • Heat the oven to 400°F. Unfold the pastry sheets on a lightly floured surface. Spread 3 tablespoons cheese on each pastry sheet. Top each with 4 slices prosciutto. Cut each into 15 strips crosswise, making 30 in all.
  • Tightly wrap 1 pastry strip around each asparagus spear, prosciutto-side in. Place the pastries seam-side down onto 2 baking sheets.
  • Bake for 15 minutes or until the pastries are golden brown.
  • TIPS
