I can't remember where this came from, but even my kids like it. Sometimes I omit the mushrooms for one of them, although I love them.

8 ounces asparagus, fresh
8 manicotti
2 ounces swiss cheese or 2 ounces provolone cheese, in 8 1/4-oz slices
4 ounces turkey or 4 ounces ham, in 8 1/2-oz slices
1 tablespoon olive oil
3/4 cup onion, chopped
1 cup chicken broth
2 tablespoons white wine
8 ounces mushrooms, sliced
2 tablespoons flour
2 tablespoons parsley, minced

Steps:

  • Preheat oven to 350. Coat a 7x10" casserole with cooking spray.
  • Cook manicotti as directed on package. Rinse with cold water, drain and arrange in a single layer on a plate.
  • Steam asparagus lightly.
  • Stack one slice of ham on top on each cheese slice. Arrange 2-3 spears of asparagus at the end of each stack. Roll up tightly. Insert into manicotti. Arrange in casserole dish.
  • Heat olive oil in skillet over medium high heat. Add onion and mushrooms and cook till golden. Add flour to skillet and stir till blended. Add chicken broth and wine. Continue stirring till mixture comes to a boil. Reduce heat and simmer til thickened. Stir in parsley.
  • Pour sauce over manicotti. Cover and bake for 20 minutes Remove cover and bake 10 mins more.

Herbed cream cheese makes this sauce not only taste great but it's almost effortless too! You can substitute Broccoli if your not a big fan of Asparagus and serve with bread sticks or a salad if you'd like.

4 cups bow tie pasta, uncooked (or small pasta of your choice)
1 (10 ounce) package of frozen cut asparagus or 1 (10 ounce) package baby broccoli florets
1 (6 ounce) package cooked ham, cut into thin strips
1 (8 ounce) container soft style cream cheese with chives and onions
1/3 cup milk (skim is ok)

Steps:

  • In a large dutch oven, add pasta to boiling water and cook 6 minutes less than recommended on package; add frozen asparagus or broccoli the last 5 minutes of pasta cooking time.
  • Add ham for the last 1 minute before draining just to heat through.
  • Remove from heat and drain pasta-ham mixture thoroughly.
  • In a small bowl mix together cream cheese and milk until smooth.
  • Add cheese mixture to asparagus-ham mixture and stir over medium heat just until heated through and mixture is well coated.
  • Serve immediately.

5 large eggs
2 cups whole milk
1/2 cup half-and-half cream
1/2 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon ground nutmeg
4 cups cubed Italian or French bread (about 6 ounces)
1-1/4 cups shredded Monterey Jack cheese, divided
1 cup cubed deli ham (1/2 inch)
1 cup cut fresh asparagus (1-inch pieces)

Steps:

  • In a large bowl, whisk the first six ingredients until blended. Stir in bread, 1 cup cheese, ham and asparagus. Transfer to a greased 8-in. square baking dish. Refrigerate, covered, several hours or overnight. , Preheat oven to 325°. Remove strata from refrigerator while oven heats. Bake, uncovered, 20 minutes. Sprinkle with remaining cheese; bake 40-50 minutes longer or until puffed, golden and a knife inserted in the center comes out clean. Let stand 5-10 minutes before serving.Freeze option: After assembling, cover and freeze strata. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 325°. Bake strata as directed, increasing time as necessary for a knife inserted in the center to come out clean.

1 1/4 pounds fresh asparagus
Salt and freshly ground pepper to taste
3/4 pound dry fettuccine
2 tablespoons olive oil
1 cup diced, boiled ham (about 1/3 pound)
4 ripe plum tomatoes, peeled, seeded and diced
2 teaspoons finely chopped garlic
1/4 pound soft goat cheese, crumbled
1/4 cup heavy cream
4 tablespoons coarsely chopped fresh basil leaves or Italian parsley
Grated Asiago or Parmesan cheese to taste

Steps:

  • Scrape and trim the asparagus; discard the tough ends. Slice the spears on the bias into 1-inch lengths.
  • In a kettle or large saucepan, bring 2 quarts of water to a boil. Add salt and the fettuccine. Boil gently for 9 minutes, or until al dente. Reserve 1/4 cup of the cooking water and drain the pasta.
  • Heat the olive oil in a large saucepan and add the asparagus, ham, tomatoes and garlic. Cook, stirring, over medium heat for 3 minutes. Do not overcook. Add the drained fettuccine, goat cheese, cream, basil leaves, the reserved water and salt and pepper to taste. Toss well over medium heat until blended well. Serve immediately with grated Asiago or Parmesan cheese on the side.

2 cups uncooked corkscrew or spiral pasta
3/4 pound fresh asparagus, cut into 1-inch pieces
1 medium sweet yellow pepper, julienned
1 tablespoon olive oil
6 medium tomatoes, diced
6 ounces boneless fully cooked ham, cubed
1/4 cup minced fresh parsley
1/2 teaspoon salt
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/8 to 1/4 teaspoon cayenne pepper
1/4 cup shredded Parmesan cheese

Steps:

  • Cook pasta according to package directions. Meanwhile, in a large cast-iron or other heavy skillet, saute asparagus and yellow pepper in oil until crisp-tender. Add tomatoes and ham; heat through. Drain pasta; add to mixture. Stir in parsley and seasonings. Sprinkle with cheese.

Whipped this up yesterday and it turned out so good I thought I'd share! A great way to use up that leftover Christmas or Easter ham lurking in the freezer! Easy to make, and sinfully delicious if I do say so myself! Enjoy! :)

1.5 (10 3/4 ounce) cans cream of mushroom soup
1 1/4 cups sour cream
1/3 cup milk
2 cups shredded kraft Italian cheese blend (8 oz. package)
3 cups cooked ham, cubed bite-sized
1 (4 1/2 ounce) jar Green Giant sliced mushrooms, drained
1 teaspoon instant minced onion
fresh coarse ground black pepper, to taste
1 1/2 cups raw asparagus, cut into 1-inch pieces
3 cups uncooked wide or dumpling egg noodles
1 1/2-2 cups finely crushed ruffles potato chips

Steps:

  • In large bowl, mix together well the first 4 ingredients.
  • Gently fold in rest of ingredients except noodles and potato chips.
  • Cook noodles 1 minute less than shortest time on directions. *I cooked mine for 6 minutes.
  • Fold in noodles.
  • Pour/spoon into lightly greased 13x9 baking dish.
  • Top with crushed potato chips.
  • Bake in 350 oven for 35 minutes til bubbly!
  • *Do not precook asparagus.
  • **Can sub a 10 oz. box frozen chopped broccoli, thawed and drained, for the asparagus if preferred.

Steps:

1-1/2 cups cut fresh asparagus (1-inch pieces)
1 medium carrot, julienned
2 tablespoons butter
3 small onions, quartered
2 tablespoons all-purpose flour
1 cup milk
1 cup chicken broth
1 cup cubed fully cooked ham
1 jar (2-1/2 ounces) sliced mushrooms, drained
1 cup half-and-half cream
Salt and pepper to taste
Grated Parmesan cheese, optional
Chopped fresh parsley, optional

Steps:

  • Place asparagus in a large saucepan with enough water to cover; cook until crisp-tender. Drain and set aside. , In a large heavy saucepan, saute carrot in butter for 3-5 minutes; add onions and saute 2 minutes longer or until tender. Stir in flour; gradually add milk. Bring to a boil; boil and stir for 2 minutes. Add broth, ham, mushrooms and reserved asparagus. Reduce heat; add cream. Heat through but do not boil. Add salt and pepper. This has been part of my OAMC rotation for a long time. This recipe easily doubles or triples. Make one now and one for later.

14 manicotti pasta shells
1 onion, chopped
2 garlic cloves, minced
1 green bell pepper, seeded and chopped
1/4 cup olive oil
3 cups cooked cubed ham
1/3 cup grated parmesan cheese
6 tablespoons butter or 6 tablespoons olive oil
6 tablespoons flour
3 cups milk
1/2 teaspoon pepper
2 cups shredded swiss cheese
1/2 cup grated parmesan cheese

Steps:

  • Cook manicotti as directed.
  • Drain, rinse in cool water and set aside.
  • Cook onion, garlic, and green bell pepper in olive oil until tender.
  • Add ham and set aside to cool for 10 minutes.
  • Stir in 1/3 cup Parmesan cheese.
  • Now melt 6 tablespoons of butter.
  • Stir in flour and cook, stirring constantly, until mixture bubbles.
  • Add milk and pepper.
  • Cook, whisking constantly, until thickened.
  • Stir in swiss and remaining parmesan cheese.
  • Mix 1/4 of cheese sauce with ham mixture.
  • Fill manicotti shells with ham mixture.
  • Spread about 1/2 cup cheese sauce in greased 13x9" glass baking dish and arrange filled shells over sauce.
  • If there is any leftover stuffing, just sprinkle it over the filled shells.
  • Pour remaining cheese sauce over filled manicotti.
  • At this point the casserole can be cooled in the refrigerator, then wrapped and frozen up to 3 months.
  • To thaw and reheat:.
  • Thaw casserole overnight in refrigerator, then uncover, sprinkle with 1/2 cup Parmesan cheese, and bake at 350 for 40-50 minutes.
  • If not freezing casserole, sprinkle with 1/2 cup Parmesan cheese and bake at 350 for 30-35 minutes or until bubbly.
