Ham, Asparagus and Cheese Strata image

Sure to please a crowd, this ham dish made with natural ingredients will become a staple to serve every holiday.

1 lb asparagus (cut into 2 inch pieces)
12 slices egg bread
2 cups smoked ham, cut into 1/2 inch cubes (Schneiders Country Naturals smoked ham)
1/4 cup chopped fresh chives
1 tablespoon chopped fresh rosemary
2 cups grated cheddar cheese
1 cup freshly grated parmesan cheese
6 eggs
2 1/2 cups milk
1 tablespoon Dijon mustard
1/4 teaspoon black pepper

Steps:

  • Cook asparagus in a small amount of boiling salted water until tender crisp, about 2 to 3 minutes; drain and set aside.
  • Place 6 slices of bread on the bottom of a greased 9x13-inch (3.5 L) baking dish, cutting the bread if necessary to fit the dish.
  • Sprinkle half of ham, asparagus, chives, rosemary and cheeses over bread. Repeat with second layer ending with cheese.
  • Beat eggs, milk, mustard and pepper in a large bowl. Pour egg mixture evenly over the bread. Cover and refrigerate for at least 2 hours or overnight.
  • Preheat oven to 350ËšF (180ËšC).
  • Bake uncovered in preheated oven for approximately 60 minutes or until egg mixture is set in centre. Let stand for 5 minutes before serving.

Ham, Asparagus, and Cheese Strata image

To cut down on brunch stress, prepare this easy strata recipe the night before, then bake in the morning. Serve with fresh fruit--and a batch of mimosas, if you like.

Number Of Ingredients 8

8 ounce asparagus spears, trimmed and cut into 2-inch pieces
5 cup French bread cubes
2 cup shredded Gruyére or white cheddar cheese, (8 oz.)
0.5 cup chopped onion
0.25 cup chopped chives or green onions
8 ounce cooked ham, diced
10 eggs
1.5 cup milk

Steps:

  • Bring a large pot of salted water to boiling. Add asparagus; cook 5 minutes or until bright green.
  • In a greased 3-quart baking dish spread half the bread cubes. Top with cheese, onion, chives and half the ham and asparagus. Top with remaining bread.
  • In a bowl whisk together four of the eggs and the milk. Evenly pour over layers in dish. Press down bread pieces into the egg milk mixture with the back of a spoon. Top with remaining ham and asparagus. Cover with plastic wrap, then chill for two hours.
  • Bake, uncovered, in a 325 degrees F oven 30 minutes. With the back of a wooden spoon, press 6 indentations in top of strata. Pour a whole egg into each indentation. Bake 20 to 25 minutes more or until an instant-read thermometer inserted in center of strata registers 170 degrees F and eggs are set. Let stand 15 minutes.
  • Cut into squares to serve. If desired, drizzle lightly with olive oil and sprinkle with salt and cracked black pepper. Makes 6 to 8 servings.

12 slices day-old bread, crusts removed, cubed
1-1/2 cups cubed fully cooked ham
1 cup chopped green pepper
3/4 cup shredded cheddar cheese
3/4 cup shredded Monterey Jack cheese
1/3 cup chopped onion
7 large eggs
3 cups whole milk
3 teaspoons ground mustard
1 teaspoon salt

Steps:

  • In a 13x9-in. baking dish coated with cooking spray, layer bread cubes, ham, green pepper, cheeses and onion. In a large bowl, combine eggs, milk, mustard and salt. Pour over top. Cover and refrigerate overnight., Remove from the refrigerator 30 minutes before baking. Preheat oven to 325°. Bake, uncovered, 45-50 minutes or until a knife inserted in the center comes out clean. Let stand 5 minutes before cutting.

4 English muffins, torn or cut into bite-size pieces (4 Cups)
2 cups cubed cooked ham or 2 cups chicken (10-ounces)
2 cups fresh cooked asparagus or 2 cups broccoli
4 ounces process swiss cheese, torn or 4 ounces gruyere cheese, cut up
4 beaten eggs
1/4 cup sour cream
1 1/4 cups milk
2 tablespoons finely chopped onions
1 tablespoon dijon-style mustard
pepper (Salt if using chicken)

Steps:

  • In a greased 2-quart square baking dish spread half of the English muffin pieces.
  • Top with ham, asparagus, and cheese.
  • Top with the remaining English muffins pieces.
  • In a bowl whisk together eggs and sour cream, Stir in milk onion, mustard, and 1/8 teaspoon black pepper.
  • (If using chicken add salt.) Pour evenly over layers in dish.
  • Cover and chill 2 to 24 hours.
  • Bake, uncovered, in a 325 degree oven for 60 to 65 minutes or until internal temperature registers 170 degrees on an instant thermometer.

1 pound fresh asparagus, trimmed and cut into 1-inch pieces
4 English muffins, split and toasted
2 cups shredded Colby-Monterey Jack cheese, divided
1 cup cubed fully cooked ham
1/2 cup chopped sweet red pepper
8 large eggs
2 cups 2% milk
1 teaspoon salt
1 teaspoon ground mustard
1/4 teaspoon pepper

Steps:

  • In a large saucepan, bring 8 cups water to a boil. Add asparagus; cook, uncovered, 2-3 minutes or just until crisp-tender. Drain and immediately drop into ice water. Drain and pat dry., Arrange six English muffin halves in a greased 13x9-in. baking dish, cut side up. Trim remaining muffin halves to fill spaces. Layer with 1 cup cheese, asparagus, ham and red pepper. , In a large bowl, whisk eggs, milk, salt, mustard and pepper. Pour over top. Refrigerate, covered, overnight., Preheat oven to 375°. Remove strata from refrigerator while oven heats. Sprinkle with remaining cheese. Bake, uncovered, 40-45 minutes or until a knife inserted in the center comes out clean. This is yummy comfort food and a great way to use up leftover ham. I don't know where this recipe came from, it's one that my mother made a lot when I was a child.

18 slices of thin sandwich bread
12 slices American cheese
6 green onions, thinly sliced
1/2 lb finely chopped cooked ham (2 C. loosely packed)
6 eggs, slightly beaten
2 1/2 cups milk
1 teaspoon salt
1 teaspoon dry mustard
1 teaspoon paprika
1/2 teaspoon Worcestershire sauce
1/4 teaspoon pepper
6 slices tomatoes
2 tablespoons minced parsley

Steps:

  • Place 6 slices of the bread in a 13"x9" inch baking pan or dish.
  • Top with 6 cheese slices, half of the onions, and half of the ham.
  • Top with 6 slices of bread, 6 slices of cheese and remaining onions and ham.
  • Top with 6 slices of bread.
  • Combine eggs, milk and seasonings.
  • Pour over the strata, cover with plastic wrap and refrigerate for 6 hours or overnight.
  • Bake at 300° for 1 1/2 hours.
  • Top each cheese stack with a tomato slice during the last 20 minutes in the oven.

2 cups cooked ham, cubed
2 cups asparagus, fresh cooked & cut up (can substitute with broccoli)
4 ounces swiss cheese or 4 ounces jarlsberg cheese, shredded and lowfat
1 cup egg substitute or 4 eggs
1/4 cup fat free sour cream
1 1/4 cups skim milk
2 tablespoons onions, finely chopped
1 tablespoon Dijon mustard
1/8 teaspoon black pepper

Steps:

  • In a greased 2-quart baking dish spread half the muffin pieces.
  • Top with ham, asparagus, and cheese.
  • top with remaining muffin pieces.
