APPLE PUFF PANCAKE
Apples are baked into a breakfast cake. This is so delicious that you don't need to add any syrup. A great alternative to regular pancakes.

Steps:
- Preheat the oven to 425 degrees F (220 degrees C).
- In a large bowl, use an electric mixer to blend eggs, milk and vanilla. Add flour, sugar, salt and cinnamon; mix just until blended. Set aside.
- Melt butter in a 9x9 inch square pan. Arrange apple slices in the bottom of the pan, and pour the batter over them. Sprinkle brown sugar over the top.
- Bake for 20 minutes in the preheated oven, or until puffed and lightly browned.

PUFFED APPLE PANCAKE
This breakfast treat rises like Yorkshire pudding and has the texture of a classic baked pancake. Sprinkle powdered sugar over the pancake after it's baked, if you like.

- Preheat oven to 425°F. Whisk milk, eggs, sugar, vanilla, salt, and cinnamon in large bowl until well blended. Add flour and whisk until batter is smooth. Place butter in 13x9-inch glass baking dish. Place dish in oven until butter melts, about 5 minutes. Remove dish from oven. Place apple slices in overlapping rows atop melted butter in baking dish. Return to oven and bake until apples begin to soften slightly and butter is bubbling and beginning to brown around edges of dish, about 10 minutes.
- Pour batter over apples in dish and sprinkle with brown sugar. Bake pancake until puffed and brown, about 20 minutes. Sprinkle with powdered sugar, if desired. Serve warm.
HAM AND APPLE PANCAKES
These hearty pancakes already have ham in them, so there is no need to cook up anything additional on the side.

- Heat pie filling until hot; keep warm.
- Heat griddle or skillet over medium heat or to 375°. Grease griddle with margarine if necessary. Beat baking mix, milk and eggs with wire whisk or hand beater in large bowl until smooth. Fold in ham, cheese and onion.
- Pour batter by scant 1/4 cupfuls onto hot griddle. Cook until edges are dry. Turn; cook until golden brown. Serve with warm pie filling; sprinkle with cinnamon.

DUTCH OVEN-PUFFED APPLE PANCAKE
I use my cast-iron skillet when I make this recipe, but an ovenproof, non-stick skillet would work just as well. This is a brunch favorite.

- Preheat oven to 450 degrees Fahrenheit.
- In a medium bowl, beat the 3 eggs and milk until well blended. Add the flour and salt; stir until batter is barely blended (the batter should be slightly lumpy).
- In another bowl, toss apple slices with sugar, 2 tablespoons of lemon juice, and cinnamon.
- Melt unsalted butter in a heavy, ovenproof 12-inch cast-iron or non-stick skillet over medium-high heat. Add apple mixture and saute 4 minutes, or until slightly softened. Spread out apples into an even layer; pour batter over apples.
- Bake in preheated oven for 20 minutes, or until pancake is golden brown and puffed.
- Sprinkle with the juice of half a lemon and dust with confectioner's sugar. Serve immediately.

- Slice two tablespoons of the butter and lay them in the bottom of a 9x13 baking dish. When the oven comes to temperature, place in the oven for 3-5 minutes until the butter is melted*. Move the dish around a bit so that the melted butter coats the bottom.
- *While the butter is melting, whisk the eggs in a large mixing bowl until lightly beaten, Add the flour, milk and salt and whisk until smooth. When the buttered dish comes out of the oven and is coated, pour the batter into the hot dish and place it back into the oven to bake for 20-25 minutes until the pancake is puffed and golden.
- When there’s about 10-15 minutes left on the pancake, melt the remaining two tablespoons of butter in a saute pan over medium heat. Add the sliced apples and stir to coat with the butter. Cook uncovered, stirring occasionally for 4-5 minutes to soften the apples. In a small bowl, stir together the cornstarch and water until combined. Add this mixture to the apples along with the brown sugar and cinnamon. Stir until well combined. Cover the pan and reduce the heat to low. Simmer for 3-4 minutes until the apples are tender and the sauce is thickened.

- In a large bowl, whisk the eggs with the mustard, salt, and pepper. Whisk in the flour. Gradually add the milk, whisking until the batter is smooth. Stir in the cheese and chives.
- Melt the butter in a 10-inch cast iron or nonstick ovenproof pan over medium heat. Remove from the heat and swirl the butter around. Sprinkle the ham evenly around the pan. Pour the batter over the ham, then use a fork to be sure the ham is evenly distributed. Carefully transfer the pan to the preheated oven and bake for about 25 minutes. It will appear puffed straight out of the oven, but will quickly collapse. Cut the pancake into thin wedges and serve. (Remember that the pan is hot; I usually place a dishtowel or oven mitt over the handle as a reminder.)
- The pancake is best served fresh out of the oven. However, leftover slices can be reheated in the microwave.
