HAM AND CHEESE OMELETTE
So easy and so good. I usually saute the ham before adding it to the omelette so it gets crispy and more flavorful.

Steps:
- Heat oil in a skillet over medium heat. Add ham and cook until browned and crispy, stirring frequently, about 7 minutes.
- Beat eggs with 1 teaspoon chives, salt, and pepper in a small bowl and add to skillet, tilting skillet to distribute egg evenly on bottom of skillet. Cook until omelette has set at the edges. Sprinkle Cheddar cheese on top and fold omelette in half. Flip and cook until egg is entirely set and cheese inside has melted, 30 seconds to 1 minute. Slide onto a plate and sprinkle with remaining 1 teaspoon chives.

NEIL PERRY'S HAM AND CHEESE OMELETTE
Fillings can be whatever happens to be knocking about in the fridge* - as long as they're cooked: nothing will have time to cook through. Two tips: always add a little water to the eggs while beating them, and never add any salt until they start to set in the pan. For a good crust and a melting interior, make sure the butter in the pan is nut-brown before introducing the eggs, and have your filling and garnishes ready to go.

- 1. Gently beat together the eggs and 2 tablespoons of water with a fork. Heat a non-stick 22cm frying pan on the stove. When hot, add a dash of olive oil and the butter. 2. When the butter is bubbling and just turning a nut-brown colour, add the egg and stir from the outside inwards with a rubber spatula. Keeping the heat high, cook until the inside of the omelette is still a little undercooked, then add the ham. Sprinkle the gruyere, sea salt, ground pepper and parsley over the middle third of the omelette. 3. Scatter about two-thirds of the parmesan over the whole omelette. Fold one-third of the omelette into the centre, then the second, encasing the ham and cheese. Allow the omelette to cook for a further minute before removing from the heat. 4. Transfer the omelette to a chopping board, cut in half and place each half on a plate - brown side up. Sprinkle over the remaining parmesan, add more pepper and drizzle with olive oil. Serve immediately. *Use smoked salmon instead of ham, any greens like zucchini or asparagus, mushrooms (of course!) and cheese (absolutely!) - the list is endless. Steps:
- Get a 10-12" non-stick frying pan warm by placing on burner on medium-low. (The size of the pan is the most important thing. The eggs should make a very thin layer in the pan).
- Crack eggs. Avoid egg shell shrapnel by cracking the eggs on a flat surface.
- Whisk together eggs and milk.
- Season with salt and pepper if desired.
- Spray frying pan with non-stick cooking spray.
- Pour eggs into pan.
- As the edges of the omelet thicken, use a wooden spoon and move the thickened egg to the center of the pan.
- Do this until half of the omelet is cooked.Then leave alone and allow to cook on medium-low until there is no more liquid.
- Add cheese to the half of the omelet closest to you.
- Add ham and pineapples on top of cheese.
- Fold the omelet in half. Do this by folding the half with the ingredients onto the half without. Use the spoon to loosen up the edges first.
- Move to plate.
- Enjoy!

- In a bowl, combine the apple, cheese, and ham; set aside.
- In another bowl, whisk the eggs, water, salt, and pepper together.
- In an 8-inch omelet pan or nonstick skillet over medium heat, melt the butter; swirl to coat the bottom of the skillet.
- When butter foams, pour in egg mixture all at once.
- Let set until edges start to cook, about 20 seconds.
- Using a spatula, gently lift edges of mixture and tip the skillet to allow the uncooked egg mixture to flow underneath.
- Continue doing this until the top is almost dry (3-4 minutes).
- Spoon cheese mixture over ½ of the omelet; fold over the other half to cover.
- Let stand a few seconds; turn out onto a warmed plate; serve immediately.
