- In a large saucepan, bring the broth, water, carrots, onion and celery to a boil. Reduce heat; cover and simmer for 4-6 minutes or until vegetables are crisp-tender. Add the noodles. Simmer, uncovered, for 20 minutes or until noodles are tender., Stir in turkey and peas. Combine gravy mixes and cold water until smooth; stir into soup. Bring to a boil; cook and stir for 2 minutes or until thickened.

HAM AND NOODLE CASSEROLE
Need a simple casserole sure to please the kids? I served this to friends who later left for Kenya...their girls were pining for it overseas, and you can bet I served it to them again when they returned to the States for a visit! (Talk about easy to please!) Nothing gourmet here, just yummy and great with salad and crispy garlic bread. (Recipe via my sister, who says she got it from Southern Living way back when...)

Steps:
- Cook noodles according to package directions. Drain.
- Place half of noodles in buttered 2 quart casserole dish.
- Combine ham and cheese; sprinkle half of ham mixture over noodles.
- In small bowl, combine soup and milk.
- Spoon half of soup mixture over ham layer.
- Then again: noodles, ham/cheese, soup.
- Dot with butter.
- Cover loosely with foil.
- Bake at 375 for 30 minutes.

- Preheat an oven to 350 degrees F (175 degrees C). Grease a 2-quart casserole.
- Bring water to a full rolling boil in a pot.. Cook the egg noodles in the boiling water, stirring occasionally, for 3 minutes; remove from heat, cover, and let stand until the noodles are tender, about 10 minutes. Drain.
- Stir the noodles, onion, sour cream, chicken soup, ham, and Swiss cheese together in a large bowl. Season with salt and pepper. Spoon into the prepared casserole. Sprinkle the top with bread crumbs.
- Bake in the preheated oven until the casserole is bubbling and the bread crumbs have browned, about 40 minutes.

HAM NOODLE SOUP
This creamy Ham Noodle Soup is a true comfort meal that the whole family will love. Serve with a side salad and dinner roll for a meal that comes together in just about 30 minutes!

- Take a 3 quart sauce pan, place it over medium heat. Add the butter and water and allow it to get hot.
- Peel and chop up 2-3 red-skinned potatoes, enough to fill 2 cups. Dice the potatoes small, about 1/2 inch cubes, so they cook quickly. Place the potatoes in the pan with the butter and water.
- Chop up the onion and add it to the potatoes. Cover the pan and let the potatoes simmer for about 10 minutes, until the potatoes are just soft.
- In another saucepan, put 3 cups of water on to boil for the No Yolks® noodles. Once the water is boiling, add the noodles and cook according to package directions.
- Dice 1 1/2 cups of cooked ham. Set this aside.
- In a medium-size bowl, pour 3 cups of whole milk. Add the flour, marjoram, pepper and salt. Whisk until it is all combined.
- When the potatoes are soft, uncover the potatoes and slowly add the milk mixture to the potatoes. Stir this mixture constantly, but gently, so that the milk does not scorch. Cook this over medium heat for 5-10 minutes until the mixture begins to gently boil and starts to thicken.
- Once the soup is thickened a bit, add the ham and 1 1/4 cups of frozen peas. Once the No Yolks® noodles are cooked, drain them and add them to the soup.
- Allow the soup to heat through for about 5 minutes, then serve, topped with shredded cheese if desired.

HAM AND TURKEY NOODLE SOUP
I came up with this recipe while staying at my Aunt and Uncle's house in Dublin, Ireland over the Holidays. This is great, warming, flavorful usage for all those Christmas leftovers. You just take whatever Christmas meats you have left over and warm them up in some broth with noodles. In this recipe, I am using ham and turkey, but you could easily substitute with sirloin, duck, goose, whatever. The measurements for this are just a guess, so bung in whatever amounts you feel are reasonable.

Steps:
- In a large saucepan, bring the water to a boil. Once at a boil, add the salt, soy sauce, herbes de Provence, pepper and olive oil. Add the soy first, take a taste and put in the salt if you think it needs it.
- After 30 seconds or so, add the penne. Give it a stir and let the pasta cook for 5-8 minutes or whatever it says on the packet.
- After about 5 minutes, put the meat into the pot and stir. Continue cooking until the pasta is aldente, another 3-4 minutes.
- Serve in a bowl with a sprinkle of Parmesan cheese.

- Cook egg noodles according to package directions (use salted water) minus one minute and drain.
- Meanwhile, make the cheese sauce by adding butter and flour to a medium sauce pan on med/low heat. Stir to make a roux. As soon as the butter has melted and is mixed with flour, add half of the heavy cream until well mixed. Continue stirring. Add remaining cream and continue stirring until well incorporated. Add the chicken stock and continue stirring. Sauce will thicken in about 5 min or so. Always stir it so it get creamy. Add the cheese and stir until cheese melts. Remove from heat.
- Add the cooked and drained pasta back into the pot in which it was cooked along with the cheese sauce. Add the ham, turkey, garlic powder, salt and pepper. Stir together until well combined.
