CARAMELIZED HAM & SWISS BUNS
My next-door neighbor shared this recipe with me, and I simply cannot improve it! You can make it ahead and cook it quickly when company arrives. The combo of poppy seeds, ham and cheese, horseradish and brown sugar makes it so delicious. -Iris Weihemuller, Baxter, Minnesota

- Arrange bottom halves of rolls in a greased 9x9-in. baking pan. Spread cut side of roll bottoms with horseradish sauce. Layer with ham and cheese; replace tops., In a small skillet, heat butter over medium-high heat. Add onion; cook and stir 1-2 minutes or until tender. Stir in remaining ingredients. Pour over rolls. Refrigerate, covered, several hours or overnight., Preheat oven to 350°. Bake, covered, 25 minutes. Bake, uncovered, 5-10 minutes longer or until golden brown.

MARINATED HAM & SWISS BUNS APPETIZER
SOURCE PEGGY TROWBRIDGE. Plan on making a double batch for any party or occasion, especially Superbowl. Even guys ask for the recipe. Marinated ham and Swiss buns make a killer appetizer, and better yet, you can make them a couple of days in advance before baking. The cooking time does not include the overnight marination.

Steps:
- Line two 9 x 13-inch baking pans with non-stick foil or butter traditional pans.
- To prepare marinade, saute minced sweet onion in butter over low heat until onion is soft and translucent.
- Add poppy seeds, garlic powder, Worcestershire sauce, mustard, and brown sugar.
- Stir until brown sugar is melted into the sauce.
- Remove from heat and stir in parsley.
- Set marinade aside.
- Slice the buns in half.
- Spread bottoms of buns with a thin layer of horseradish mayonnaise.
- Fold ham slices to fit the bottom of each bun.
- Repeat with Swiss cheese slices, folding to fit buns.
- Replace bun tops.
- Place ham and cheese buns into prepared baking pans.
- Pour marinade evenly over both pans of buns.
- Cover tightly with foil. Refrigerate overnight.
- Preheat oven to 350°F
- Bake marinated buns covered for 25 minutes.
- Remove foil and bake an additional 10 minutes.
- Notes: Use pre-baked dinner rolls.
- If you make your own yeast dinner rolls, all the better.
- If you're on a budget, adjust this method to use large yeast hot dog rolls, cut into thirds (you may need to adjust the baking time).
- Horseradish mayonnaise is easy to make at home, but there are decent commercial varieties to use as a shortcut.
- You can use regular mayonnaise if you need to avoid horseradish.
- For the ham, I used a rosemary sun-dried tomato deli ham, but feel free to use your favorite.
- Just be sure it is sliced very thin and use a high-grade, low-moisture ham for best results.
- Yield: 24 appetizer servings.

- Cut through dinner rolls lengthwise without taking them apart and place the bottom half in a greased 9x13-inch pan. Layer ham and cheese on bottom halves and cover with the top halves. Heat sauce ingredients together. Pour sauce over rolls. Cover with foil and bake at 350°F for 25 to 30 minutes. If you like them crispier, take foil off the last 5 minutes. Note: You can make these with the rolls taken apart as well. Place them close together in the pan.

- 1. Preheat oven to 325°. Stir together first 3 ingredients. 2. Sprinkle brown sugar into a 12-inch square on a clean surface. Arrange biscuits in 4 rows on sugar, covering sugar completely. Pinch biscuits together to form a square. Roll dough to a 12- x 16-inch rectangle (about 1/4 inch thick), pinching dough together as needed. Spread ham-and-cheese mixture over dough. Roll up tightly, starting at 1 long side, pressing brown sugar into dough as you roll. Pinch ends to seal. Cut into 16 slices using a serrated knife. Fit each slice into cups of a lightly greased 24-cup muffin pan. (Dough will extend over tops of cups.) 3. Bake at 325° for 40 minutes or until golden and centers are completely cooked. Cool on a wire rack 10 minutes. Drizzle with syrup. To make ahead: Prepare recipe through Step 2, and chill 8 hours. Let stand 10 minutes. Proceed as directed in Step 3.

- 1. After assembling ham and cheese sandwiches (rolls, ham, cheese). 2. Combine remaining ingredients in a saucepan. 3. Bring mixture to boil for 2 minutes. 4. Pour mixture over assembled sandwiches. 5. Bake at 350 degrees for 20 minutes.
