HAM AND CHEESE OMELETTE
So easy and so good. I usually saute the ham before adding it to the omelette so it gets crispy and more flavorful.

- Heat oil in a skillet over medium heat. Add ham and cook until browned and crispy, stirring frequently, about 7 minutes.
- Beat eggs with 1 teaspoon chives, salt, and pepper in a small bowl and add to skillet, tilting skillet to distribute egg evenly on bottom of skillet. Cook until omelette has set at the edges. Sprinkle Cheddar cheese on top and fold omelette in half. Flip and cook until egg is entirely set and cheese inside has melted, 30 seconds to 1 minute. Slide onto a plate and sprinkle with remaining 1 teaspoon chives.

- Place the egg yolks in a bowl with the milk and combine. In a separate bowl, whisk the egg whites to medium soft peaks. Gently fold into the egg yolk mixture. Set aside (do not allow to sit for too long).
- Spray a small non-stick frying pan with oil spray and place over medium heat. Add the baby spinach and cook for 1-2 minutes or until wilted. Remove from pan and wipe pan clean. Spray pan again and return to the heat.
- Pour in the egg mixture and cook for 2-3 minutes or until surface is nearly firm. Place the ham, spinach and cheese over half the omelette, then fold over the other side to enclose the filling. Serve immediately. Repeat ingredients and method for additional omelettes.

- In a small nonstick skillet, melt butter over medium-high heat. Whisk the eggs, water, salt and pepper. Add egg mixture to skillet (mixture should set immediately at edges)., As eggs set, push cooked edges toward the center, letting uncooked portion flow underneath. When the eggs are set, place ham on one side and sprinkle with cheese; fold other side over filling. Slide omelet onto a plate.

- Coat a 6-inch nonstick skillet with cooking spray; place over medium heat. Add ham, green onions, tomato, and pepper; sauté 2 minutes. Remove ham mixture from pan; set aside, and keep warm.
- Beat egg whites with a mixer at high speed until stiff peaks form; set aside. Combine egg substitute, water, basil, hot sauce, and pepper in a medium bowl, and stir well. Gently fold egg whites into egg substitute mixture.
- Recoat pan with cooking spray, and place over medium heat. Pour half of egg white mixture into pan. Cover, reduce heat, and cook 5 minutes or until set (do not stir). - Beat eggs lightly in medium bowl. Add cream, 1 1/2 teaspoons of the mustard and black pepper; whisk until well blended.
- Melt butter in medium oven-safe, nonstick skillet on medium heat, swirling to coat. Add egg mixture, tilting pan to spread evenly in skillet. Run spatula around edge of skillet to separate cooked egg mixture from sides. Lift slightly with spatula and tilt pan to allow uncooked mixture to flow underneath. When egg mixture is just set but top is still slightly moist, turn off heat.
- Layer ham and 1 slice of the cheese on half of the omelet; gently fold omelet in half to enclose. Place remaining cheese slice on top.
