QUICK AND EASY SICILIAN MEATLOAF
I tried this recipe years ago when I first started cooking. It's been a constant hit since then and is virtually foolproof. Unlike regular meatloaf, this one stays juicy and tender with excellent flavor. Serve with garlic mashed potatoes and steamed carrots for an old fashioned comfort food dinner.

- Preheat oven to 350 degrees F (175 degrees C). Lay a 24-inch long sheet of parchment paper down on a work surface.
- Mix together the ground beef, bread crumbs, onion soup mix, barbecue sauce, garlic, egg, flour, and black pepper in a bowl until well combined. Place the meat mixture down on the piece of parchment paper, and pat it into a rectangle shape about 10x16 inches. Lay deli ham slices down on the meat, keeping a 1-inch margin around all sides of the rectangle. Sprinkle Swiss cheese over the ham. Carefully lift up the short edge of the meat square with the parchment paper, and gently nudge and roll up the meat. Seal the edges and ends well. Place the meat roll into a 9x13-inch baking dish.
- Bake in the preheated oven for 45 minutes.
- While the roll is cooking, mix together ketchup, mustard, brown sugar, and soy sauce, stirring until sugar has dissolved. Remove the roll from the oven, and spread the ketchup mixture over the roll. Return to the oven for 15 more minutes.

HAM AND SWISS BRUNCH BAKE

- In ungreased 13x9-inch (3-quart) glass baking dish, arrange half of the bread slices, overlapping as needed. Brush bread in dish with mustard. Top evenly with ham and Swiss cheese, overlapping as needed. Top with remaining bread slices, arranging them over first layer of bread slices to make sandwiches.
- In medium bowl, beat eggs and milk with wire whisk until well blended. Carefully pour over sandwiches. Cover; refrigerate at least 1 hour but no longer than 12 hours.
- Meanwhile, in small bowl, mix Parmesan cheese, bread crumbs, parsley and butter. Set aside.
- Heat oven to 375°F. Sprinkle crumb topping over casserole. Bake uncovered 30 to 35 minutes or until sandwiches are puffed and golden brown.

This is a recipe that my grandmother handed down to me and now it is a family favorite! My kids love it as well as everyone that has tried it.

- Preheat the oven to 350 degrees F (175 degrees C).
- In a medium bowl, mix together the ground beef, bread crumbs, eggs, and onion. Season with garlic powder, salt and pepper. Pat the meat mixture out onto a piece of waxed paper, and flatten to 1/2 inch thick. Lay slices of ham onto the flattened meat, and top with slices of cheese. Pick up the edge of the waxed paper to roll the flattened meat up into a log. Remove waxed paper, seal the ends and seam, and place the loaf into a 9x5 inch loaf pan.
- Bake for 1 hour and 15 minutes in the preheated oven, or until the loaf is no longer pink inside.

This is a family favorite I've made many times through the years. I'm in the process of making a cookbook for my children and relatives, and this recipe will definitely be in it.

- In a bowl, combine 3 cups flour, sugar, yeast and salt. In a small saucepan, heat water, mustard and butter to 120°-130°. Add to flour mixture. Stir in enough remaining flour to form a soft dough (dough will be stiff). Turn onto a lightly floured surface; knead until smooth and elastic, about 6-8 minutes., Roll dough into a 14x12-in. rectangle on a greased baking sheet. Arrange half of the ham over dough. Top with cheese, pickles and remaining ham. , On each long side, cut 3/4-in.-wide strips about 2-1/2 in. into center. starting at one end, fold alternating strips at an angle across filling. - Heat gas or charcoal grill. Spray 25x18-inch sheet of heavy-duty foil with cooking spray. Without cutting all the way through, cut loaf of bread into 12 (3/4-inch) slices, cutting to within 1/4 inch of bottom.

MA'S HAM AND SWISS CHEESE MEATLOAF
I have never known anyone to make meatloaf like my "ma". Everyone that tries it asks for the recipe and its very easy! I would describe making it like a "jellyroll of ham and cheese" yum!

- 1. Preheat oven at 350 degress farhenheit.
- 2. Mix egg, breadcrumbs, beef,sausage, worstershire sauce, parmesan cheese and salt in pepper in large bowl. Just as if making regular meatloaf.
- 3. When everything is mixed well, lay out a long piece of tinfoil and lay out the meat in a rectangle shape onto the foil as close to the right end of the foil as possible.
- 4. Take your ham and layer it onto the meat and repeat with the swiss cheese until it is all used.
- 5. Take end of foil and start rolling the meatloaf as if you were making a jellyroll.
- 6. Take your spiraled meatloaf and put into baking pan.
- 7. Cover with foil and bake for 1 and a half hours.
MUSHROOM SWISS MEATLOAF

- Preheat the oven to 350 1.
- In a fry pan, begin to sauté the mushrooms in the butter, over med high heat. Add salt to help draw out the water from the mushrooms. The goal here is to remove as much liquid from the mushrooms as possible. Half the way through sautéing the mushrooms, add the onions.
- Add the garlic. Careful not to add the garlic at the beginning as it may burn and become bitter.
- When the mushrooms have wilted and reduced, remove from the pan and allow to cool.
- Prepare the gravy mix according to the package directions and set aside.
- In a large bowl, combine the hamburger, eggs, and panko. Mix REALLY well.
- Add the ½ of the cooled mushroom and onion mix.
- Pack the meatloaf mix into an 8x8 cake pan lined with parchment paper. (or choose any other baking dish you prefer. You can use a loaf pan, but keep in mind to adjust the cooking time as it will be considerably thicker and take longer to roast.) Pack the mixture in, and then turn it out onto a parchment lined baking sheet to hold its shape.
- Bake the meatloaf for approximately 1 hour. Be sure to check the temperature with a thermometer, as the cooking time may need to be adjusted according to the thickness of the loaf. Always be safe and cook the loaf to an internal temperature of 160F.
- 15 minutes before the cooking time is complete, take the remaining mushroom and onion mixture and mix it with 2 - 3 tablespoons of the gravy mixture. The consistency should be thick, spreadable, but not runny.
- Spread this mixture over the top of the meatloaf evenly and then top that with the 4 - 5 slices of Swiss cheese. Overlap them to make them fit over the top of the loaf if you need to.
- Continue roasting the meatloaf until the cheese has melted.
- Remove from the oven and let rest 5 minutes. Slice to serve and use the remaining prepared gravy to top the meatloaf.
HAM & CHEESE STUFFED MEATLOAF
An easy to prepare meatloaf that is a little different, even my NON-eating meatloaf daughter WILL eat this one. Very easy to prepare, great leftover for sandwiches.

- Combine all ingredients except cheese and ham.
- Flatten meat mixture on foil-lined jelly roll pan.
- Place ham slices evenly on top of meat mixture, sprinkle with grated cheese.
- Holding one end of the foil, roll up meat like a jelly roll.
- Remove foil, slide meat roll to center of pan, pat seams closed.
- Bake at 350 for 1 hour.
- Remove from oven, and allow to sit in a warm spot for five minutes before slicing.

I found this recipe in a magazine years ago and lost it! I just found it again on the Fleischmann's website! It's delicious! The bread part could probably be adapted to a bread machine, although I have not tried to yet. Please let me know if you do!

- In a large bowl, combine 1+1/2 cups flour, undissolved yeast, sugar and salt.
- Stir warm water, mustard and butter into dry ingredients.
- Stir in enough remaining flour to make a soft dough.
- Knead on lightly floured surface until smooth and elastic, about 4-6 minutes.
- Cover, let rest on floured surface 10 minutes.
- On lightly floured surface, roll dough to 15 x 10 inch rectangle.
- Transfer to greased baking sheet.
- Sprinkle ham, cheese, pimientos, and pickles lengthwise over the center third of dough.
- with a sharp knife, make cuts from filling to dough edges at 1 inch intervals along sides of filling.
- Alternating sides, fold strips at an angle across filling.
- Cover loaf; let rise in warm, draft-free place until almost double in size, about 20 to 40 minutes.
- Brush loaf with egg.
- Bake at 375^ F for 35 minutes or until done.
- Remove from sheet to wire rack.
- Serve warm.
- Refrigerate leftovers: reheat to serve.
