8 ounces uncooked whole wheat linguine, broken in half
2 cups cubed fully cooked ham
1-3/4 cups shredded Swiss cheese, divided
1 can (10-3/4 ounces) reduced-fat reduced-sodium condensed cream of mushroom soup, undiluted
1 cup reduced-fat sour cream
1 medium onion, chopped
1 small green pepper, finely chopped

Steps:

  • Cook linguine according to package directions. Meanwhile, in a large bowl, combine the ham, 1-1/2 cups cheese, soup, sour cream, onion and green pepper. Drain pasta; add to ham mixture and stir to coat. , Transfer to a 13x9-in. baking dish coated with cooking spray. Cover and bake at 350° for 35 minutes. Uncover; sprinkle with remaining cheese. Bake until cheese is melted, 10-15 minutes longer.

2 Cups Cook's® brand Bone-in Ham, shredded into medium-sized pieces
1 pound linguine
4 tablespoons extra-virgin olive oil, divided
3 garlic cloves, minced
2 tablespoons capers
1 cup peas, fresh or frozen, thawed
Zest and juice of 2 lemons
1 teaspoon sea salt
1 teaspoon freshly ground black pepper
1 cup mint, chopped
1 cup basil, chopped

Steps:

  • 1. While the pasta is cooking, heat 2 tablespoons olive oil in a non-stick skillet over medium-high heat. When the pan begins to smoke, sauté the garlic for one minute. Add the ham and continue to sauté until the ham begins to brown. Finally, add the capers and the peas, sauté for one more minute.
  • 2. While the skillet is still hot, drain the pasta and add to the ham mixture. Add the lemon zest, juice, salt, pepper, and 2 more tablespoons of olive oil. Sauté for 1-2 minutes to let the flavors combine. Remove from heat and toss with herbs. Serve immediately.

I like to cook for my neighbors and about once a week I'll have a few over for supper. Their commute to the big city makes them very tired by the time they get home. When I see them going to the mailbox I yell an invite for dinner from my porch, they usually smile real big and tell me they'll be over in 5 minutes. In the 5 years I've been doing this I've never been turned down once. This casserole is one of their favorites that I prepare. Add some garlic bread and a good salad and it makes a great meal.

Number Of Ingredients 11

8 ounce(s) linguine, broke in 1/2, cooked al dente
2 cup(s) cubed cooked ham
1 can(s) cream of celery soup
8 ounce(s) sour cream
1/2 cup(s) mayo
1 - medium onion, diced
1/2 teaspoon(s) curry
1/2 teaspoon(s) paprika
1/2 stick(s) butter
2 cup(s) shredded swiss cheese
- pepper to taste

Steps:

  • Boil linguine until al dente. Meanwhile in large bowl, combine soup, sour cream, mayo, butter, and spices. Stir. Add ham, onion, and swiss cheese. Stir to blend. Drain linguine and pour in mixture. Stir to blend and all linguine is covered well.
  • Pour all in a greased 9x13 dish. Bake covered in a 350 degree pre-heated oven for 45 minutes.
  • NOTE: THis is an easy recipe to double. I'd switch up to a lasagne pan, though.
