I had so much ham left over after Easter dinner and came up with this recipe. It turned out excelent and my husband and son really loved it.

cooked ham slices (enough to cover the bottom of a 13x9 casserole dish)
3 cups packaged dry cornbread stuffing mix
1 can cream of celery soup
1 can cream of mushroom soup
1 (4 1/2 ounce) jar sliced mushrooms, undrained
1 cup cooked corn, drained
1 medium onion, chopped fine
1/2 cup celery, chopped fine
8 ounces shredded cheese (I used a mixture of Colby and Monterey Jack)

Steps:

  • Spray skillet with cooking spray and add about 2 tbsp.
  • butter and saute onion and celery till almost tender.
  • In large bowl add the corn bread stuffing mix, the two cans of soup (undiluted), mushrooms with liquid, corn and the onion and celery mixture; mix thorougly.
  • Spray a 13x9 casserole dish with cooking spray and put enough ham to cover the bottom.
  • Sprinkle the cheese evenly over the ham.
  • Spoon the stuffing mixture over the ham and cheese spreading the mixture evenly.
  • Bake at 400 for approximately 30 minutes.

Y'all will love my Aunt Betty's signature holiday dish of Ham Dressing.

2 c All Purpose Cornmeal, preferably stone ground (I was happy to be able to use stone ground cornmeal that I bought from a local grist mill not far from my home.)
1/2 c All Purpose Flour
2 tsp Baking Powder
Pinch of Salt
Cracked Black Pepper
1.25 c Buttermilk
2 Eggs, slightly beaten
2 tsp Bacon Fat, for bottom of the skillet
1 Sleeve of Saltine Crackers, crushed
1 Onion, finely diced
3 Stalks of Celery, finely diced
1/2 tsp Dried Thyme
1.5 tsp Rubbed Sage (or ground)
Cracked Black Pepper, to taste
3 c Cooked Ham, chopped (recipe follows)
3/4 c Pan Cooking Juices (optional)
4 c Chicken or Pork Stock (if not using pan juices, use 5 c of stock instead)
3 Eggs, slightly beaten
1 5-7 lb Naturally Smoked Ham
1/4 c Water

Steps:

  • Preheat oven to 400℉. Add bacon fat to a cast iron skillet and place into the oven while it preheats.
  • In a mixing bowl combine cornmeal, flour, baking powder, salt, pepper, buttermilk and eggs and stir to combine.
  • Remove skillet from oven when it reaches temperature and add the cornbread batter. Bake for 25 minutes until golden brown.
  • Combine cornbread, crackers, onion, celery, and seasonings together in a large mixing bowl. Cover and refrigerate overnight. (This can also be done early in the day before baking ham)
  • The next day after ham bakes - add the chopped ham, pan juices (if using) ,stock and eggs to the dry mixture stored in the refrigerator. Mix well to combine until everything is moistened. Use additional stock if needed.
  • Preheat oven to 375℉.
  • Place ham dressing mixture into a casserole dish and place into the oven.
  • Bake 30 to 45 minutes until set as desired and slightly browned on top.

1 stick unsalted butter, plus more for the baking dish
2 sweet onions, chopped
4 stalks celery, chopped
1 small bunch mustard greens, stemmed and chopped (about 8 cups)
1 pound tasso ham or ham steak, cut into ½-inch cubes
1 tablespoon chopped fresh thyme
1 tablespoon chopped fresh sage
3 cups low-sodium turkey or chicken broth
Kosher salt and freshly ground pepper
2 large eggs
8 cups 1/2-inch stale cornbread cubes (preferably not sweet; 12 ounces)
8 cups 1/2-inch stale country white bread cubes (12 ounces)

Steps:

  • Preheat the oven to 375 degrees F; butter a shallow 3-quart baking dish. Melt 6 tablespoons butter in a large pot or Dutch oven over medium-high heat. Add the onions and celery and cook, stirring occasionally, until softened, about 5 minutes. Add the mustard greens and cook, stirring, until wilted, about 3 minutes. Stir in the ham, thyme and sage. Add the broth, 1 teaspoon salt and a few grinds of pepper; bring to a simmer, then remove from the heat.
  • Whisk the eggs in a large bowl. Add the bread cubes and ham-broth mixture and stir until combined. Transfer the stuffing to the prepared baking dish. Cut the remaining 2 tablespoons butter into small cubes and scatter evenly over the stuffing. Cover with foil and bake 30 minutes, then uncover and bake until golden, 20 to 30 more minutes.

½ cup white wine
¼ cup water

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C). Lightly grease a 9x13 inch baking dish.
  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the egg noodles, and return to a boil. 2 cups seasoned stuffing cubes
1/2 cup boiling water
2 teaspoons plus 2 tablespoons butter
8 fully cooked ham slices (1/8 inch thick)

Steps:

  • Preheat oven to 350°F. Bake bread cubes on large rimmed baking sheet until dry and beginning to brown, about 12 minutes. Place bread in large bowl and cool.
  • Melt 4 tablespoons butter in heavy large skillet over high heat. Add onions and celery; sauté until tender and beginning to brown, about 10 minutes. Add apples; sauté until tender and beginning to brown, about 10 minutes. Add mixture to bread. Melt 1 tablespoon butter in same skillet. Add ham; sauté 5 minutes. 1 (8-pound) fresh ham, bone in and skin on
2 carrots
1 onion
2 stalks celery
1 handful fresh sage leaves
1 small loaf day-old Tuscan bread, torn into 2-inch pieces
2 cups milk
1/3 cup pine nuts, toasted
1/2 cup golden raisins
1/2 cup pitted mixed olives, chopped
4 cloves garlic, minced
2 cups baby spinach leaves
1/2 cup freshly grated Parmesan
Kosher salt and freshly ground black pepper
3 tablespoons chopped fresh basil leaves
4 sprigs fresh thyme, leaves picked and chopped
3 tablespoons chopped fresh parsley leaves
1/2 lemon, juiced
3/4 cup olive oil

Steps:

  • Place the ham on a large cutting board. Remove the bone, and butterfly the meat; reserve the bone. (Alternatively have your butcher do this.)
  • Make the ham broth. Put the ham bone into a large stockpot. Add the carrots, onion, celery and sage. Cover with water and bring to a simmer over medium heat. Simmer the ham broth, uncovered. Skim frequently and cook until the broth has reduced to 2 quarts, about 2 hours. Strain the broth and measure out 1 quart and set it aside. Freeze or refrigerate the remaining broth for another purpose.
  • Meanwhile, prepare the ham and stuffing. In a medium bowl, soak the bread in the milk until it is soft, about 15 minutes. Squeeze the bread and put it in a large mixing bowl. Add the pine nuts, raisins, olives, garlic, spinach, Parmesan and mix.
  • Lay the ham fat-side up. Using a sharp knife, score the fat in a diamond pattern, making each slash about 2-inches apart and 1/4-inch deep. Season the meat generously with salt and pepper. Combine the basil, thyme and parsley leaves in a bowl. Add the lemon juice and enough of olive oil to form a paste, about 1/2 cup. Rub the herb paste all over the ham.
  • Preheat the oven to 350 degrees F.
  • Lay the ham fat-side down. Place several cups of the bread stuffing in the center of the ham. Roll the ham into a log taking care that the stuffing is evenly distributed. (Remaining stuffing can be cooked in a baking dish for 40 minutes before serving.) Tie the rolled ham with kitchen string at 3-inch intervals.
  • Heat 1/4 cup of olive oil over medium heat in a roasting pan just large enough to accommodate the ham. Add the ham roll and brown it on all sides, about 20 minutes. Remove the ham and place a rack in the pan (or fabricate 1 from aluminum foil).
  • Place the ham on the rack. Pour half of the stock into the pan. Place the roasting pan in the oven and let the ham cook for 4 hours, basting every 30 minutes or so with the pan juices. Add more stock if the pan seems dry. When the ham is tender remove it from the oven and transfer to a cutting board. Tent the ham with aluminum foil and allow it to rest for at least 30 minutes.
  • Remove the string and slice the ham about 2 inches thick. Serve with additional stuffing and polenta.
  • Serving suggestion: polenta.
