ITALIAN SPAGHETTI WITH HAM
A great spaghetti recipe made with ham and black olives. Easy enough for every day, but elegant enough for a special meal.

Steps:
- Cook spaghetti according to package directions.
- While spaghetti is cooking, heat the 1 tablespoon butter or margarine in a large skillet. Saute ham and garlic.
- Drain spaghetti well, and combine with sauteed ham and garlic in the skillet. Over very low heat, slowly stir in the cheese, eggs, olives, and half of the parsley. Remove from heat. Add salt and butter to taste, and sprinkle with remaining parsley. Serve.

ONE POT HAM AND CHEESE PASTA
Steps:
- Melt butter over medium heat in a large stockpot.
- Once melted, add in onion, salt and pepper and cook for 5-7 minutes, or until tender.
- Add in ham, pasta, garlic, mustard, wine (if using), water, and additional salt.
- Bring to a simmer and simmer for 9-13 minutes, stirring regularly, until pasta is al dente.
- Remove from heat and stir in swiss and parmesan.
- Taste and re-season, if necessary, and enjoy!

- Cook pasta Al dente according to packaged directions. Add peas the last minute of cooking.
- In a small saucepan heat oil over medium. Add shallots and garlic and cook until fragrant (careful not to burn!). Add wine and cook until alcohol burn off. Add cream until heated. Strain liquid in another heat proof bowl (optional) and discard shallots.
- Return liquid to saucepan and add cheese and pepper. Stir until melted. Add ham to warm.
- Combine pasta with peas and Alfredo sauce. Serve immediately.

- Cook pasta according to directions, adding frozen broccoli at the end to heat through.
- Melt butter in a small skillet or sauce pan over low heat. Stir and blend in flour, to avoid lumps. When completely blended and a thick yellow paste add parsley and garlic seasoning and stir to blend. Cook over low heat 3-5 minutes. Stir in cream cheese until melted. Mixture may appear grain-y. Stir until smooth. Add 1/2 c milk and blend. Add remaining milk and Parmesan cheese and ham and keep warm over low heat until ready to serve. - Place a large pot of water on the stovetop to boil. Add a hefty pinch of salt. Boil the pasta according to the directions on the package. Open the bag of frozen peas and place them in the bottom of a mesh strainer. Drain the pasta over the peas. The heat from the water and pasta will thaw them perfectly. Meanwhile, dice the cooked ham. - Cook penne pasta in boiling water according to package directions. During the last 5 minutes of boiling, add the raw broccoli flowerets; drain.
- Place cubed ham into empty hot pot; pour cooked penne/broccoli mixture over top and gently toss together.
