PERFECT POTATO PANCAKES
I like to serve these potato pancakes with barbecued sausage. They're also nice with baked ham and applesauce or with breakfast sausages. And, with these and other types of meals, they're a good alternative to french fries. My children are married, and I'm a widow. So I don't do as much cooking as I once did. Guests always ask for the recipe when I serve this dish, though. And when my son and his family visited me from Winnipeg not long ago, one of the first things he asked for were Perfect Potato Pancakes!

- If you're using leftover mashed potatoes that had a lot of milk in them, you will likely need to add more flour until the mixture is thick and workable. You should be able to take a ball of dough in your hand and press it into a patty without it sticking to your hands. Add flour until it reaches this consistency. Alternately, if the dough is too thick and dry, add milk one tablespoon at a time until it reaches the right consistency.

- In a large bowl, mix together mashed potatoes, mozzarella, egg, flour, jalapeno, garlic and ham till combined. The mixture should be thick and should hold its shape. If its too loose, add a tablespoon of a flour at a time (this will depend on the consistency of your mashed potatoes)
- Use an ice cream scoop to scoop out the mixture and form it into patties or cakes which are about ⅓ inches in thickness. Coat each cake evenly in a thin coating of breadcrumbs and set aside.
- Heat oil in a pan and fry the patties in a single layer on each side for 3-4 minutes till golden brown on both sides.
