2 cans (20 ounces each) unsweetened crushed pineapple, undrained
1 medium onion, finely chopped
3/4 cup packed light brown sugar
1/4 cup Dijon mustard
2-1/2 pounds thinly sliced deli ham
2 tablespoons cornstarch
2 tablespoons water
10 slices Swiss cheese or cheddar cheese, optional
10 kaiser rolls, split

Steps:

  • Mix first 4 ingredients. Place half the mixture in a 5-qt. slow cooker; top with half the ham. Repeat layers. Cook, covered, on low until heated through, 3-4 hours., Using tongs, remove ham from slow cooker, leaving pineapple mixture behind; keep warm. In a large saucepan, mix cornstarch and water until smooth. Stir in pineapple mixture; bring to a boil. Reduce heat; simmer, uncovered, until mixture is slightly thickened, stirring occasionally. Serve ham, pineapple mixture and, if desired, cheese on rolls.

I found a recipe for Pineapple Sandwiches on white bread that was far too sweet. I put some ham on it, and put it on whole grain bread for a slightly healthier alternative that is not nearly so sweet!

1 (15 ounce) can crushed pineapple, drained
1 cup white sugar
1 cup chopped walnuts
1 (8 ounce) package cream cheese, softened
2 tablespoons milk
24 slices whole-grain bread
60 thin slices deli ham

Steps:

  • In a saucepan, combine the pineapple and sugar. Bring to a boil, then cook over medium heat, stirring constantly, until thickened, 5 to 10 minutes. Remove from the heat and cool. When cool, stir in the walnuts.
  • In a medium bowl, stir cream cheese to soften, then stir in enough milk to make it easy to spread. Blend in the pineapple mixture. This part can be made the day before if you like.
  • Spread about 2 tablespoons of the pineapple mixture onto one side of 12 slices of bread. Top each one of these with 5 thin slices of ham. Top with remaining bread slices.

1 package 12 pack dinner rolls (, ex. Kings Hawaiian)
14-18 slices black forest ham lunchmeat (, about 200 grams (1/2 pound))
1 can pineapple tidbits (, drained)
2 cups grated mozzarella cheese
1/4 cup butter (, melted)
1 tbsp mustard (, or dijon)
1 tbsp brown sugar
1/2 tsp garlic powder

Steps:

  • Preheat oven to 325F.
  • Keeping the 12 dinner rolls together, cut them lengthwise. Place bottom half in a greased 13x9 inch baking pan.
  • Lay summer ham slices evenly across the bottom half of the dinner rolls. Continue evenly spread the pineapple tidbits and grated cheese on top of the ham. Place the top half of the dinner rolls on top.
  • Whisk together the melted butter, mustard, brown sugar and garlic powder. Brush this butter mixture on the top of the dinner rolls.
  • Cover the baking pan with foil and bake for 15 minutes.
  • Remove foil and bake of another 10-15 minutes. The buns should be starting to brown and the cheese melted and bubbling on the sides.
  • Cut into sliders and serve warm.

1 lb chip bone ham
4 slices provolone cheese or 4 slices swiss cheese
4 hamburger buns or 4 hoagie rolls

  • Heat a skillet over medium heat.
  • Add the ham to the skillet and chop up into fine pieces while cooking.
  • Add the pineapple to the skillet and heat through.

You'll bake a ham just for the leftovers that you can use in this amazing pineapple jalapeno ham casserole! OMG! It's one skillet. Super EZ!

Number Of Ingredients 9

Preheat oven to 400
2 to 2 ½ cups diced ham, leftover, about 1.5" cubes
2 packages (10 oz.) Baby Broccoli Mix, previously frozen, at almost room temperature
1 can (20 oz.) Dole Sunshine Pineapple Tidbits, drained, reserve liquid
1 can (10.5 oz.) Cream of Celery Soup
1 container (7.5 oz.) Soft Cream Cheese Spicy Jalapeno, almost room temperature (Philadelphia Cream Cheese)
2 eggs
1 box (6 oz.) Stove Top Stuffing Mix
2 cups grated cheddar

Steps:

  • Grease well a 10-12" cast iron skillet (bottom and perimeter).
  • In a medium mixing bowl, whisk together well one-half cup of pineapple juice, celery soup, cream cheese and eggs. Set aside.
  • Put the ham cubes in and sprinkle on top one cup of grated cheese and one-half of the stuffing mix. Add one-third of the liquid juice/soup/cream cheese/egg mixture.
  • Add the previously frozen baby broccoli mixture, drained pineapple tidbits hen one-third of the juice/soup/cream cheese/egg mixture.
  • Top with the remaining stuffing mixture and the remaining juice/soup/cream cheese/egg mixture.
  • Cover the skillet with heavy foil. Bake in a preheated 400 oven for 45 minutes.
  • Remove foil and bake another 20 minutes. Sprinkle on top the remaining grated cheese. Return to oven (uncovered) for about 5 minutes or until cheese is melted and turning slightly golden brown.
  • Remove and let the casserole rest before serving.
