  • Preheat oven to 325°. Place ham on a rack in a shallow roasting pan. Using a sharp knife, score surface of ham with 1/2-in.-deep cuts in a diamond pattern. Cover and bake 1-1/2 hours., In a small bowl, mix remaining ingredients. Spread over ham, pressing mixture into cuts. Bake ham, uncovered, 30-60 minutes longer or until a thermometer reads 140°.

  • Place ham in roasting pan. Score the surface with shallow diagonal cuts, making diamond shapes; insert cloves into diamonds. Cover and bake at 325° for 1-1/2 hours. Drain pineapple, reserving 1/4 cup of the juice. Combine brown sugar and reserved pineapple juice; pour over ham. Arrange pineapple slices and cherries on ham. 300 g spirali, amori or fusilli pasta
1 tbsp. olive oil
1 red onion, finely chopped
1 garlic clove, crushed
1 1/2 tbsp. fresh oregano leaves, chopped, or use 11/2tsp dried
1/4 -1/2tsp dried chilli flakes
200 ml passata
400 g tin chopped tomatoes
150 g shredded ham hock
125 g prepared pineapple, finely chopped
50 g pitted black olives
125 g ball mozzarella, chopped
75 g mature Cheddar, coarsely grated

Steps:

  • Bring a large pan of salted water to the boil and cook pasta according to pack instructions, until al dente. Drain. Preheat oven to 220ºC (200ºC fan) mark 7.
  • Meanwhile heat oil in a large, deep frying pan over medium heat and fry onion for 5min, until softened. Stir in garlic, oregano and chilli flakes; fry for 1min. Turn up heat and add passata, chopped tomatoes and some seasoning. Bring to the boil and bubble for 5min.
  • Add drained pasta, ham hock, pineapple, olives and half the mozzarella; mix. Empty into an ovenproof serving dish and scatter over the remaining mozzarella and Cheddar. Cook in oven for 15min until piping hot. Serve.

Nothing is easier or more delicious than a beautiful, caramelized Baked Ham, especially with this pineapple brown sugar glaze on top.

8-10 pounds bone-in fully-cooked, spiral-cut ham
20 ounce can pineapple tidbits (, or crushed pineapple)
3/4 cup light brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves

Steps:

  • Take ham out of the refrigerator 1-2 hours before baking to allow it to come to room temperature.
  • Meanwhile, make the glaze. In a saucepan combine pineapple tidbits, brown sugar, cinnamon, and cloves.
  • Bring to a boil, reduce heat to medium low and simmer for 20-30 minutes or until mixture has thickened.
  • Preheat oven to 300 degrees F. Remove ham from packaging and throw away the glaze packet and the plastic disk that covers the bone.
  • Place the ham flat/cut side down, in a deep baking dish or roasting pan. I like to line my pan with aluminum foil to make for easier clean-up.
  • Brush just a few spoonfuls of the glaze onto the ham, all over the outside. Reserve the remaining glaze for later.
  • Cover the ham tightly with a tent of aluminum foil. This will help keep the ham from drying out.
  • Bake at 300 degrees F for 1 1/2 to 2 hours, or until internal temperature reaches 110 degrees. Note, the ham is already cooked, so we're just just trying to reheat it.
  • Remove the ham from the oven and remove foil tent (set it aside for later).
  • Increase the oven temperature to 400 degrees. Brush the remaining glaze all over the ham.
  • Return to the oven and continue to bake for another 15 minutes.
  • Remove from oven, tent with foil and allow to rest for 15 minutes before serving.

2 to 2 ½ cups diced ham, leftover, about 1.5" cubes
2 packages (10 oz.) Baby Broccoli Mix, previously frozen, at almost room temperature
1 can (20 oz.) Dole Sunshine Pineapple Tidbits, drained, reserve liquid
1 can (10.5 oz.) Cream of Celery Soup
1 container (7.5 oz.) Soft Cream Cheese Spicy Jalapeno, almost room temperature (Philadelphia Cream Cheese)
2 eggs
1 box (6 oz.) Stove Top Stuffing Mix
2 cups grated cheddar

Steps:

  • Grease well a 10-12" cast iron skillet (bottom and perimeter).
  • In a medium mixing bowl, whisk together well one-half cup of pineapple juice, celery soup, cream cheese and eggs. Set aside.
  • Put the ham cubes in and sprinkle on top one cup of grated cheese and one-half of the stuffing mix. Add one-third of the liquid juice/soup/cream cheese/egg mixture.
  • Add the previously frozen baby broccoli mixture, drained pineapple tidbits hen one-third of the juice/soup/cream cheese/egg mixture.
  • Top with the remaining stuffing mixture and the remaining juice/soup/cream cheese/egg mixture.
  • Cover the skillet with heavy foil. Bake in a preheated 400 oven for 45 minutes.
  • Remove foil and bake another 20 minutes. Sprinkle on top the remaining grated cheese. Return to oven (uncovered) for about 5 minutes or until cheese is melted and turning slightly golden brown.
  • Remove and let the casserole rest before serving.

1 fresh pineapple
2 (6 ounce) cans pineapple juice
1 cup brown sugar

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Place the ham, cut side down, into a roasting pan.
  • Cut the skin off the pineapple with a sharp knife and cut out any brown spots of skin left behind. Slice the pineapple into 1/2-inch slices and cut the cores out of the slices. Pin the slices onto the ham with toothpicks.
  • Bake ham in the preheated oven until a meat thermometer inserted into the thickest part of the ham reads 140 degrees F (60 degrees C), 1 1/2 to 2 hours.

½ cup packed brown sugar

Steps:

  • Preheat the oven to 325 degrees F (160 degrees C).
  • Place ham in a roasting pan. Score the rind of the ham with a diamond pattern. Press a clove into the center of each diamond.
