- Cook pasta according to package directions; drain. Meanwhile, in a large skillet, heat oil and butter over medium-high heat. Add ham, red pepper and onion; cook and stir 4-6 minutes or until ham is browned and vegetables are tender. Add garlic and herbs; cook 1-2 minutes longer., Stir in broth and lemon juice. Bring to a boil. Reduce heat; simmer, uncovered, 10-15 minutes or until liquid is reduced by half. Add pasta; toss to combine. Sprinkle with cheese.

- In a big pot of boiling salted water, cook pasta according to package directions until al dente; drain and transfer to a large mixing bowl.
- Preheat oven to 350°; grease a 3-quart casserole dish; set aside.
- In a large saucepan, heat the oil over medium heat; add in onion and tomato; stir for 2 minutes.
- Sprinkle flour over the top and continue to stir for about 1 minute.
- Gradually add the milk, whisking rapidly until the sauce is smooth.
- Season with salt and pepper; add 1 cup cheese, and stir until it melts and the sauce is smooth.
- Add the cheese sauce, peas, and ham to the pasta; toss until well blended.
- Transfer mixture to the prepared casserole; sprinkle remaining cheese over the top; bake until bubbly and golden brown, about 30 minutes.

- Preheat oven to 375°. Cook pasta according to package directions for al dente; drain., Meanwhile, in a large saucepan, melt butter over medium heat. - Cook penne pasta in boiling water according to package directions. During the last 5 minutes of boiling, add the raw broccoli flowerets; drain.
- Place cubed ham into empty hot pot; pour cooked penne/broccoli mixture over top and gently toss together.
- While penne is cooking -- melt butter in a medium saucepan over med-low heat; add minced onion and saute until onions are translucent. Do not burn or brown.
- Keep heat on med-low and add half and half, milk, parmesan, salt, white pepper and garlic powder. Stir frequently until heated through, cheese is melted and smooth.
- Pour sauce over cooked penne mixture and gently toss to coat.
- Serve.
PRETTY PENNE HAM SKILLET
I make this dish with leftover ham from Christmas and Easter. Everyone always looks forward to it. I've tweaked it from the original recipe but found that my tweaks made it taste out of this world!

Rotini pasta may be used in place of penne, prep time does not include cooking the pasta --- if desired sprinkle 1-2 cups grated cheddar cheese on the last 3 minutes of baking time --- this is *very* good!

- Set oven to 350 degrees F.
- Grease a 13 x 9-inch baking dish.
- Place the cooked penne and the ham into a large bowl; set aside.
- In a medium saucepan melt butter over medium heat.
- Add in mustard powder, black pepper, seasoned salt and cayenne pepper and onion, stir and cook for about 4 minutes.
- Add in garlic; cook stirring for 2 minutes.
- Add in flour and mix continously for 2 minutes.
- Slowly add in the cream and 1/3 cup Parmesan cheese; cook stirring over medium-low heat until bubbly.
- Reduce heat to low and stir in the cheddar cheese until completely melted.

- Sprinkle the top with about 1/3 cup or more Parmesan cheese.
- Cover and bake in a 350 degree F oven for about 45 minutes or until hot and bubbly.
