PEACH GLAZED HAM



Peach Glazed Ham image

3 cups peach nectar
1 (1-inch) piece ginger, smashed
1/2 lemon, juiced
4 cloves garlic, smashed
1/4 cup Dijon mustard
1 cup brown sugar
1 (14-pound) precooked ham
3 whole peaches

Steps:

  • Preheat oven to 350 degrees F.
  • In a medium saucepan, simmer together peach nectar, ginger, lemon juice, and garlic cloves. Simmer for 20 minutes.
  • Strain out ginger and garlic.
  • Prepare ham for glaze. Rub Dijon mustard and then brown sugar on the ham.
  • Pour glaze on bottom of pan and throw in sliced peaches for additional peach flavor.
  • Place ham in oven for 1 1/2 hours. Every 10 to 20 minutes glaze ham with the glaze from bottom of pan to keep moist.

1 8-oz - ham steak (1/2-inch thick) cut into 1 1/2-inch chunks

Steps:

  • Prepare barbecue (medium-high heat).
  • Whisk marmalade, oil, mustard and lemon juice in small bowl to blend. Alternate ham pieces and peach chunks on 4 metal skewers. Brush with marmalade glaze. Sprinkle with pepper.
  • Grill until ham is slightly charred and fruit is softened, turning and brushing often with glaze, about 6 minutes.

1 fully cooked bone-in ham (7 to 9 pounds)
2 cups peach preserves or orange marmalade
1/2 cup maple syrup
1/3 cup orange juice
2 tablespoons ground ancho chili pepper, optional

Steps:

  • Preheat oven to 325°. Place ham on a rack in a shallow roasting pan. Cover and bake 1-3/4 to 2-1/4 hours or until a thermometer reads 130°., Meanwhile, in a small saucepan, mix preserves, syrup, orange juice and, if desired, chili pepper until blended. Remove 3/4 cup mixture for glaze., Remove ham from oven; brush with some of the glaze. Bake, uncovered, 15-20 minutes longer or until a thermometer reads 140°, brushing occasionally with remaining glaze., In a saucepan over medium heat, bring preserves mixture to a boil, stirring occasionally. Cook and stir until slightly thickened, 1-2 minutes. Serve as a sauce with ham.

2 tablespoons spicy brown mustard
1/3 cup peach nectar or 1/3 cup apricot nectar
1 lb cooked ham steak, cut 3/4 to 1 inch thick
4 medium peaches, peeled and halved lengthwise
2 small green peppers, cut crosswise into four rings each
sweet red pepper, cut crosswise into four rings each

Steps:

  • For glaze, in a bowl combine brown sugar and mustard. Gradually whisk in nectar until smooth.
  • To prevent ham from curling, make shallow cuts around the edge at 1-inch intervals. Brush one side of ham with glaze.
  • Grill ham, glazed-side down, on a greased rack of an uncovered grill directly over medium-hot heat for 6 minutes. Turn ham. Add peaches and peppers.
  • Brush ham, peaches, and peppers with glaze. Grill for 6 to 10 minutes more or until heated through, brushing occasionally with glaze.

One 8- to 10-pound bone-in smoked fully cooked ham (shank portion)
1/2 cup orange marmalade
1/2 cup whole-grain mustard
1/2 cup loosely packed light brown sugar
2 tablespoons sherry vinegar
1 teaspoon ground coriander
1 teaspoon ground ginger
1/2 teaspoon ground allspice
Freshly ground black pepper
Fresh rosemary sprigs, for serving
Oranges, cut into quarters, for serving

Steps:

  • Let the ham sit at room temperature for 30 minutes to 1 hour. Preheat the oven to 325 degrees F. Trim off any skin from the ham. Score the ham in a diagonal crosshatch pattern (about 1-inch apart) without cutting through into the meat. Place the ham, flat-side down, fattier side up, on a rack in a roasting pan. Pour a 1/2-inch of water in the bottom of the pan. Cover with aluminum foil and roast, about 1 hour. Remove the foil, add more water if the water has dried up and recover loosely with the foil. Continue to bake until the ham reaches 130 degrees F, adding more water if needed to keep the roasting pan from burning, 1 hour to 1 1/2 hours more (about 15 minutes per pound).
  • Increase the oven temperature to 400 degrees F. Whisk the marmalade, mustard, brown sugar, vinegar, coriander, ginger, allspice and a generous amount of black pepper in a liquid measuring cup. Spoon off about 1/4 cup of the pan juices from the ham and whisk into the glaze mixture. Brush about half of the glaze all over the ham. Continue to bake, brushing the ham with the glaze twice more until the surface of the ham is caramelized and the internal temperature in the center of the ham reads 140 degrees F on an instant read thermometer, adding more water if the bottom of the pan dries out and begins to burn, 40 to 45 minutes. Transfer the ham to a cutting board or platter and let rest for 20 minutes before slicing. Serve with the rosemary, oranges and any additional glaze on the side.

When I lived in Milwaukee we used to be able to buy hot ham and rolls on Sunday morn and had our choice of "baked" or boiled. I hated the boiled ham, but the baked was absolutely delicious. I suspect it was cooked in a Nesco roaster in water with certain spices.

1 (28 ounce) can peach halves in syrup, reserving 1/4 cup syrup from peaches
1 cup brown sugar
2 tablespoons vinegar
1/2 teaspoon ground cloves

Steps:

  • Bake ham, fat side up, in a roasting pan, according to the timetable below.
  • Forty-Five minutes before the cooking time is up, remove ham from oven and pour off fat drippings.
