- Preheat oven to 400°. In a large skillet, heat oil over medium heat. Add onions; cook and stir until softened, 8-10 minutes. Reduce heat to medium-low; cook until deep golden brown, 30-40 minutes, stirring occasionally. Stir in 1/2 teaspoon salt and the pepper., Meanwhile, in a large bowl, combine flour, baking powder and remaining 1/2 teaspoon salt. Cut in shortening until mixture resembles coarse crumbs. Stir in milk just until moistened. Press into a greased 9-in. square baking pan; top with onions., Combine egg and sour cream; spread over onion layer. Bake until golden brown, 35-40 minutes. Cut into squares. Serve warm.

- Preheat the oven to 400-degrees.
- Mix the first 8 ingredients together in a medium-sized bowl.
- Spread approximately 1 tablespoon of the Parmesan mixture evenly onto the cocktail bread and place on a baking sheet.

CHEESY HAM AND POTATO SOUP
Cheesy Ham and Potato Soup is the ultimate comfort soup made with loads of ham, chunks of potatoes, carrots, celery, garlic, chicken broth, milk and cheddar cheese.

Steps:
- Rinse the celery, carrots and potatoes. Peel the carrots and potatoes.
- Dice the celery, carrots, potatoes and onion. Mince the garlic cloves.
- Dice the ham. If using leftover ham, rinse off any glaze beforehand.
- Melt the butter in a soup pot on the stovetop on a medium-high heat.
- Add carrots, celery and onion to the pot. Stir and cook until onion is translucent.
- Add garlic and stir until fragrant (about 1 minute).
- Immediately add the flour followed by broth and milk. Stir well.
- Add ham and potatoes. Stir and bring to a boil.
- Salt and pepper to taste. I find salt isn't necessary in this recipe but you may like it.
- Reduce to a simmer and add a bay leaf. Simmer for about 15 minutes or until the potatoes are tender when poked with a fork. Time can vary depending on the size the potatoes were diced.
- Remove bay leaf. Add a cup and a half of the cheese. Stir. Turn off heat and serve.
- Sprinkle cheddar cheese on top with chives and freshly ground pepper.
HAM AND ONION PIE
Delicious cheesy ham and onion pie. Great if you have leftovers.

- In a large bowl, combine flour and salt. Cut in shortening until mixture resembles coarse meal. Gradually add water. Blend with fork until mixture forms a ball and leaves the sides of the bowl. Roll out half of the pastry on a lightly floured board to fit a deep dish 9 inch pie plate. Cover and refrigerate. Wrap remaining pastry in plastic wrap. Refrigerate.
- Saute the ham, onion, garlic, salt, and pepper in 2 tablespoons butter or margarine until tender. Cool to room temperature.
- Saute potatoes in remaining 2 tablespoons butter or margarine until crisp and tender. Season to taste with salt and pepper.
- Layer half of the cheese, ham mixture, and potatoes into the prepared crust. Repeat. Blend eggs and cream, and pour two-thirds over potatoes. Roll out remaining pastry on a lightly floured board to cover pie. Brush rim of crust with the egg and cream mixture. Top with second half of pastry. Trim and pinch edges to seal. Flute. Brush the top with remaining egg mixture, and trim with the pastry trimmings.
- Bake at 350 degrees F ( 175 degrees C) for 45 minutes, or until pie is golden.

- Preheat oven to 350 degrees.
- In medium bowl, blend cream cheese, ham, pepper and onion together.
- Separate the two cans of dough into 8 rectangles; firmly press together perforations to seal.
- Roll out to make more square. Spoon mixture into the center of each square. Fold up the corners and twist at the top, seal any open edges.
- Bake 20-25 minutes until golden brown. Allow 2 per serving.

- In a small bowl, dissolve yeast in water; set aside. In a large bowl, combine the flour, sugar and salt; cut in shortening until mixture resembles coarse crumbs. Add yeast mixture. Combine sour cream and eggs; stir into flour mixture until a smooth dough forms (do not knead). Cover and chill overnight. , Roll dough to fit a greased 15x10x1-in baking pan. Form a rim around edges; set aside. In a skillet, saute onion in butter until tender. Remove from the heat; stir in remaining topping ingredients. Spread over dough.
