HAM, LEEK & POTATO PIE
Use up leftover ham in this family dish - add some celery sticks or other veg to the sauce too, if you like

Steps:
- Heat a large frying pan, melt the butter, then add the onion and leeks. Cover, then very gently cook for 15 mins until soft. Add the potatoes after 5 mins cooking.
- Stir in the flour, turn up the heat, then add the stock, stirring until the mix thickens a little. Take off the heat, then stir in the crème fraîche, mustard and ham. Season to taste, then cool, if you have time. Spoon the mix into a large pie dish, adding a couple of bay leaves. Heat oven to 220C/fan 200C/gas 7.
- Roll out the pastry on a floured surface to the thickness of a £1 coin. Cut a pastry strip the same width as the lip of the dish, wet the edge of the dish with egg, then fix the strip around it. Brush the top with egg, then lay over the remaining pastry.
- Trim pastry to the edge of the dish, then ruffle the cut edges with the knife blade to help the layers rise. Cut a few slits to let the steam escape, decorate with bay leaves, if you like, then brush all over the top with egg. Can be done up to a day ahead, keep chilled. Bake for 30 mins until risen.

- Melt butter in a saucepan; stir in flour, salt, mustard and pepper until smooth. Gradually add milk and onion; bring to a boil. Cook and stir for 2 minutes or until thickened. Stir in ham, peas and eggs. Pour into an ungreased 8-in. square or 11x7-in. baking dish. On a floured surface, roll pastry to fit top of dish; place over filling. Seal and flute edges; cut slits in the top. Bake at 425° for 25 minutes or until crust is golden brown and filling is bubbly.

Steps:
- Boil the potatoes in salted water for 8-10 mins, until tender but still firm. Leave to cool, then slice.
- Heat the oven to 200C/180C fan/ gas 6. Unroll the pastry with its baking parchment on a baking tray. Reserve 1 tbsp of the crème fraîche, then spread the rest over the pastry, leaving a 2cm border around the edge. Season. Layer the potatoes, ham and cheese over half of the pastry, seasoning the potatoes as you go.
- Fold over the other half of the pastry and use a fork to seal the edges. Trim with a knife for a neat finish - the pie should look like a big sausage roll. Mix a little water into the reserved crème fraîche, then brush all over the pastry. Make a few cuts along the length, then bake for 35-40 mins until golden. Leave to cool for 10 mins, then serve with a salad, if you like.

BONNIE'S TATER AND ONION PIE WITH HAM
This is a new recipe I created tonight by taking my Potato Onion Pie recipe, changing it up and making it into a delicious main dish meal. All you need is a tossed green salad, some crunchy bread and butter, and dinner is served. It is truly company worthy. Enjoy!

- 1. GET READY: Pre-heat oven to 375 degrees. Spray a 10 inch glass pie dish with Pam.
- 2. LAYER THE PIE: Scatter 2 teaspoons of garlic evenly on the bottom of a Pam sprayed pie dish. Put half of the sliced potatoes on top of the garlic, overlapping the slices. Add half of the onion slices. Add salt and pepper (go easy on the pepper) Add 1/2 of the ham. Sprinkle 1/2 cup of the cheddar cheese and the pepper jack cheese over the onions evenly. Repeat the layer of garlic, potatoes, onions, salt, and pepper, and ham. Add the cream evenly over the top, and then add the remaining 1/2 cup of cheese of choice, plus, the 1/4 cup of parmesan cheese. Cover the pie plate with foil. Bake 35 minutes, then remove foil and bake 35 minutes more until golden brown and the pie is set.
- 3. TO SERVE: Lightly tent the pie for a few minutes and then cut into wedges to serve. Enjoy!

HAM, ONION AND POTATO CASSEROLE
A thick,comfort food casserole with a savoury flavor. This is an adaptation of a ham and potato casserole recipe I liked but wanted to play around with.

- Pan fry ham and chopped onion in olive oil until onions are lightly browned.
- While onions and ham are cooking, peel potatoes and slice paper thin.
- Butter a medium casserole dish and place sauteed ham and onion inside.
- Salt and pepper the ham and onions.
- preheat oven at 325 degrees.
- Melt butter in a sauce pan, remove from heat and blend in flour. Return to heat and add milk or rice dream rice milk. Stir over direct heat until sauce boils and thickens.
- Arrange potatoes over ham and pour milk and flour mixture over them over them.
- Sprinkle potatoes with chives and basil flakes.
- Bake at 325 degrees until potatoes are tender, about 1 hour. Cover for first 1/2 hour then remove cover.

- Put the onions into a bowl, pour over a kettle of boiling water and soak for 5 minutes. Drain, halve and peel. Melt 50g of the butter in a large pan over a very low heat, then add the onions and cook, covered, for 15-20 minutes, stirring occasionally, until tender. Increase the heat to medium, add the thyme and sugar and cook, uncovered, for 5-6 minutes, until caramelised. Cool.
- Meanwhile, put the rest of the vegetables into a steamer or colander over a pan of boiling water, cover, and steam for 10-12 minutes, until tender. Drain well and toss together with the ham and onions.
- Preheat the oven to 200°C/fan180°C/gas 6. Make the sauce. Melt the remaining butter in a pan over a medium heat. Add the flour and cook, stirring, for 1 minute. Gradually stir in the milk and cook, stirring, until smooth and thickened. Simmer for 2 minutes, stirring continuously. Remove from the heat and stir in the cheese and parsley. Season.
- Pour the sauce over the vegetables and ham, and stir well. Spoon into a 2-litre pie dish. Unroll the pastry on a lightly floured surface and cut out a shape about 2cm bigger than the dish. Cover the dish with the pastry, trim the edges and use the trimmings to decorate the top of the pie.
