This is a great alternative to an omelet when feeding a number of people.

12 eggs
½ cup milk
½ cup sour cream
½ teaspoon salt
1 ¾ cups chopped cooked ham
¾ cup chopped red bell pepper
¾ cup sliced fresh mushrooms
¾ cup sliced green onion
1 cup shredded Cheddar cheese

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Prepare a 13x9-inch baking dish with cooking spray.
  • Beat eggs, milk, sour cream, and salt together in a large bowl with wire whisk until well blended. Mix ham, bell peppers, mushrooms, and green onion into the egg mixture; pour into the prepared baking dish.
  • Bake in the preheated oven until a knife inserted into the center comes out clean, about 50 minutes. Cover top of dish with Cheddar cheese; continue baking until cheese is melted, about 3 minutes.

Use your leftover ham in this indulgent breakfast bake, made with a traditional golden bread, caramelized shallots, mushrooms and a hint of Dijon mustard -- sure to be a hit with your guests.

3 tablespoons vegetable oil
1 cup sliced shallots (about 3 medium)
1 package (8 oz) mushrooms, sliced
6 cups cubed (1-inch) challah bread
2 cups shredded fontina cheese (8 oz)
1 1/2 cups diced cooked ham
10 eggs
2 cups half-and-half
2 teaspoons Dijon mustard
1 tablespoon finely chopped fresh thyme leaves
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Heat oven to 350°F. Spray 13x9-inch (3-quart) baking dish with cooking spray.
  • In 8-inch nonstick skillet, heat 2 tablespoons oil over medium-high heat. Cook shallots in oil 4 to 6 minutes, stirring frequently, until starting to caramelize; remove from skillet. In same skillet, add remaining 1 tablespoon oil and the mushrooms. Cook 4 to 6 minutes, stirring frequently, until tender and browned.
  • In baking dish, layer half of the bread, 1 1/2 cups of the cheese, the shallots, mushrooms, ham and remaining bread. In large bowl, beat eggs and half-and-half with whisk; beat in Dijon mustard, thyme, salt and pepper. Pour over bread mixture, pressing down slightly. Sprinkle with remaining 1/2 cup cheese.
  • Bake 45 to 50 minutes or until golden brown and center is just set. Let stand 15 minutes before serving.

2 1/2 cups shredded cheddar cheese or 2 1/2 cups swiss cheese, divided
1/4 cup butter
1/2 lb fresh sliced mushrooms
1 small chopped yellow onion (or use 6 green onions, chopped)
1 small green bell peppers or 1 small red bell pepper, seeded and chopped
2 cups fully-cooked cubed ham
8 large eggs
1/4 cup all-purpose flour
1 3/4 cups half-and-half cream or 1 3/4 cups milk
1/4 teaspoon seasoning salt or 1/4 teaspoon white salt
fresh ground black pepper (to taste)

Steps:

  • Grease a 13 x 9-inch caserole dish.
  • Sprinkle 2 cups shredded cheddar cheese or Swiss cheese into the bottom of the casserole dish.
  • In a skillet melt butter over medium-high heat.
  • Add in mushrooms, onion and and bell pepper; cook stirring until softened and the mushroom loose their moisture, then stir in chopped ham.
  • Sprinkle the mixture over the cheese.
  • In a medium bowl whisk together the eggs with flour, half and half cream or milk, salt and pepper; pour over the ham mixture.
  • Cover and refrigerate overnight.
  • Remove from fridge 30 minutes before baking.
  • Set oven to 350 degrees F.
  • Bake uncovered for 35-40 minutes or until a knife inserted into the middle comes out clean.
  • Remove from oven and sprinkle about 1/2 cup shredded cheddar cheese on top and allow to melt.
  • Let stand 10 minutes before slicing.

  • preheat oven to 350 degrees.
  • grease a 9x13 baking dish.
  • sprinkle dish with half the hash browns.
  • layer on half ham, cheese, red peppers & mushrooms.
  • repeat layering of remaining ham, cheese, red pepper & mushrooms.
  • top w/ leftover hashbrowns.
  • beat eggs, milk, cottage cheese, salt & pepper to taste w/ whisk.
  • pour over dish.
  • bake uncovered 45-50 minutes (til light brown and the center is set).

4 (130 g) mushrooms (flat well opened)
200 g ham (finely sliced or salami, hot if you like bite)
1/4 cup olive oil
3/4 cup cheddar cheese (tasty coarsely grated)
4 eggs (large)

Steps:

  • Preheat oven to 200C (180C fan forced).
  • Arrange mushrooms and ham in a 27cm x 17cm (base measurement) ovenproof dish.
  • Drizzle the mushrooms with oil.
  • Bake for 10 minutes.
  • Sprinkle mushrooms with cheese and bake for 5 minutes more.
  • Carefully crack eggs onto the ham and bake for 5 minutes more or until cheese is melted and eggs cooked to your liking.
  • Season with salt and pepper and serve at once.
