Bacon and smoked haddock (haddies) go very well together in this tasty pie. The quantities are sufficient for four people.

12 ounces smoked haddock
4 ounces bacon, chopped
8 ounces tomatoes, sliced
2 ounces sharp cheddar cheese, shredded
butter (for frying)
1 small onion, chopped
1/2 cup breadcrumbs
2 -3 tablespoons water

Steps:

  • Heat the oven to 375°F Grease a medium size ovenproof dish.
  • Melt the butter in a pan and fry the onion until it is soft. Add the chopped bacon and cook for another 2/3 minutes.
  • Arrange half of the tomato slices in the dish and cover with the onion and bacon mixture. Put the haddock on top of this and top with the remaining tomato slices.
  • Pour on the water and sprinkle with the breadcrumbs and cheese. Cover with a lid or kitchen foil and cook for 20 minutes at 375°F.
  • Remove the lid or foil and cook for another ten minutes until the topping has turned brown.

2 eggs, beaten
2 cups cubed fully cooked ham
2 cups shredded Cheddar cheese
1 tablespoon grated Parmesan cheese

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Press one package crescent roll dough into a 9-inch baking dish; cut remaining package crescent roll dough into 1-inch strips.
  • Stir eggs, ham, Cheddar cheese, and Parmesan cheese together in a bowl; pour mixture into prepared baking dish. Arrange crescent roll strips over ham mixture creating a crisscross pattern.
  • Bake in preheated oven until golden brown and set, 50 to 60 minutes.

2 eggs
1 tomato, sliced
1 green bell pepper, cut into rings

Steps:

  • Heat oven to 400°F. Grease 9-inch pie plate. Sprinkle ham, cheese and onions in pie plate.
  • Stir Bisquick mix, milk, salt, pepper and eggs until blended. Pour into pie plate.

1/2 teaspoon salt
1/4 teaspoon ground mustard
1/8 teaspoon pepper

1 cup frozen peas, thawed
2 hard-boiled large eggs, chopped
Pastry for single-crust pie (8 inches)

Steps:
